My last glutening was a couple of months ago from a restaurant... which is usually where it happens. Our house isn't totally gluten-free, but anything that has gluten is prepackaged. Nothing that has gluten in it gets cooked here. That significantly cuts down the risk off CC. -

It unfortunately appears that he did not run the full celiac panel. IgG is not as specific to celiac as the IgA, but your elevated level does indicate something is going on. It doesn't look like he ran the tTG tests (tissue-transglutaminase), which are pretty specific to celiac, or a total serum IgA which would indicate whether or not you have an IgA... -

I see you've already learned what the rest of NC calls Fayetteville Don't hold your breath for Harris Teeter to carry it. Not saying they won't, but don't hold your breath. I would try Kroger first, if you have one close by. They also have some Pamela's mixes, and some Bob's Red Mill mixes. -

I'm a Mary's Gone Crackers fan myself, too. (Love it with Hummus, too!) But then again, I was never a Ritz fan... I did look at the Glutino's when I was at Whole Foods the other day, and I believe they had soy in them, or egg, or one of those things that I can't eat. So they're off my list anyway... -

I would think cheese and/or red wine. Most newly diagnosed folks can't handle dairy for awhile, and there are quite a few of us who can't handle it for the long term. I also can't do some red wines because of the sulfites. One of the last bottles I had made me want to crawl out of my skin after about 2 sips... it's hard because I love red wine. I do... -

Hello and welcome to our forum! PLEASE get another opinion if possible. There are tests that are pretty specific to celiac disease; I'm totally shocked that he would tell you something like that. I got dragged into Arby's a couple of weeks ago and about the only thing I could eat was a salad. Probably the same one as you... but it was prepackaged so it really didn't freak me out too bad. I get the feeling that pretty much everything has gluten in it, whether directly or indirectly, so it's really not on the list of places to choose. Thank goodness...

Did they offer you a reason as to why your villi was atrophied? While the biopsy is considered the gold standard, it can miss damage, or can be read incorrectly. Having the blood tests may help you, but they cannot rule out celiac, as they can be unreliable, too. -

I'm in Raleigh, too. I went in there not too long after they started doing the gluten-free crusts, and the guy that took my order yelled back as loud as he could "GLUTEN FREE ALERT! GLUTEN FREE ALERT!' It was great I've eaten there a couple of times, never gotten sick... aside from the dairy that I shouldn't really eat...

In general, Harris Teeter sucks for gluten free specialty foods. They have a few things here and there, but I have much better success at Food Lion when in the OBX or other places. Here in Raleigh, Food Lion is pretty gross, but in southeastern VA and in eastern NC, they seem to be much better and have more gluten-free foods available. Enjoy your trip... -

Risotto from scratch is the way to go. It's a commitment, though! But worth it if you're willing to stick out the 30-45 minutes of stirring. Every time I make it, I ask myself WHY DID I START THIS??? then when I eat it, I remember and it's all worth it. I usually do mushrooms in mine and like Patti, put some GOOD cheese in at the end. I use a mixture that sounds pretty much like yours (minus the rice flour). I haven't used rice flour in awhile, (unless it was to dust something) I find it to be pretty crumbly. Sorghum is about as close as wheat flour (texturally, I think) that you can get. I prefer it to rice flour, and have made a lot of things with that mixture that have turned out great... -

She could be temporarily lactose intolerant. It's pretty common for newly diagnosed celiacs to be lactose intolerant because the tips of the villi produce lactase, and they are damaged with celiac. In some, dairy can be reintroduced within a couple of months after being gluten-free. Maybe she is eating too much too quickly after she gets up. I can't eat... -

As Momma Goose said, please get another opinion. Many people can test negative with the blood testing, but the biopsy is considered the gold standard for diagnosis, especially when the blood tests are negative. -

My reactions usually last for somewhere between 8-10 days. The nausea and burning gradually wears down day by day. I hope he feels better soon!!!
