A few good things have come from me not being able to eat gluten and subsequently having a sensitive gut. I eat way more things than I used to, and I view the grocery store as an adventure now. I get to go and pick out new things... it's kind of exciting. I didn't eat a lot of junk before, now I eat even less. So my overall diet is much healthier. I...

ARCHIVED Need Help Diagnosing Celiac
lizard00 replied to Konaa's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
That's a bit ambitious, but in most cases, improvement is seen pretty quickly in some symptoms. Full recovery can take months or even years, depending on the severity. -

ARCHIVED The Problem With Strawberries
lizard00 replied to dilettantesteph's topic in Gluten-Free Foods, Products, Shopping & Medications
At the risk of seeming argumentative, this article's origin is French. A quick google search titled wheat based shelf extenders pulled up only this article. Is this something being practiced in the US? -
ARCHIVED Am I Destined For Even More Problems?
lizard00 replied to jasonD2's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Since I've been "formally" diagnosed, I have not even thought about cheating. Part of it is psychological, I understand your dilemma. Something about eliminating that last shred of doubt makes it easier to deal with. Have you ever gone 100% gluten-free? Maybe you could do it for like 3 months or something. The way it seems to me is that you are going to... -
ARCHIVED Looking For Motivational Improvement Stories
lizard00 replied to Live2BWell's topic in Coping with Celiac Disease
Going gluten-free has given me my happiness for life back. Sounds corny, I know. But before I went gluten-free, I felt bad ALL the time. Everything I ate made me sick, and if by chance I didn't get sick from eating, I was too exhausted to care. I have a 3yr old, so a year ago, my little guy had a mommy who was always too tired to play with him. If I... -
ARCHIVED Am I Destined For Even More Problems?
lizard00 replied to jasonD2's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I have been in your shoes. My bloodwork was all negative too. And having just one copy of the gene doesn't mean that you can't possibly have Celiac, so it's not completely accurate to say you don't have it either. My doctor truly believes I have celiac, as do I. A few weeks ago, I got a salad from a restaurant next door. I've eaten this salad many times... -
Sorry to hear that. I've never had a problem there, either. But it is often the luck of the draw with your server. My husband and I went to a very nice restaurant for our anniversary. He called ahead, there was a note in the computer with our reservation. The maitre'd told our server when we arrived, and she was great. Had her stuff together. She...

ARCHIVED Am I Destined For Even More Problems?
lizard00 replied to jasonD2's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I believe that if you were to give your diet due dilligence, meaning, being careful when eating out, etc. you may find that some of your allergies or intolerances clear up. That is in reference to the other posts you've made about eating out and not being as careful as you know you should be. If you have celiac, which you probably do since you have the... -
ARCHIVED Testing Results

IF we did, we would not be fulfilling our responsibility. I don't think the question is unreasonable. What proof do you have, other than your testing strips, to prove such a claim? -

ARCHIVED Grrr! I Hate Doctors!
lizard00 replied to vthuskies's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I'm so glad to hear you're feeling better. It took me a few months before I felt like I got my energy back. I forced myself to exercise, too, hoping it would work. When I saw my GP a few months into it, and told her I still was feeling tired, we went through the whole exercising thing, and she told me that even though I couldn't tell a difference, if I... -
ARCHIVED Healing Now..but Why Do Non-gluten Foods Make Me React?!
lizard00 replied to utahlaura's topic in Coping with Celiac Disease
I would first suggest doing away with dairy. When I eat gluten or dairy, I react to any and everything. Obviously I don't eat gluten, but for a while I was still feeling pretty gross. I'm either allergic to dairy or intolerant to casein, not sure which... anyway, if I eat dairy products, it's enough to cause a mild "burn" (that's what I call it- "the burn... -
ARCHIVED Family That Wont Say No..
lizard00 replied to gfgang's topic in Parents, Friends and Loved Ones of Celiacs
Either they learn or they'll find their time with their dear grandson has become limited. He's 4!! Of course he's not going to turn down a cookie, especially when it's probably been offered to him a few times. The suggestion of giving them treats to have on hand is really good, I'd definitely try that first. But they have to understand that celiac doesn... -
I also suggest smashed cauliflower. I had it a few years ago when some restaurant was capitalizing on the no carb diet. But I've made them at home before, really quite delicious!

ARCHIVED What's Wrong With Me? Please Help...
lizard00 replied to foodiepeep's topic in Coping with Celiac Disease
Welcome newbie and fellow foodie! Have any doctors tested you for Celiac? It sounds like you may very well have it, and it could explain WHY your thyroid isn't working properly. First, ditch the gluten free bread along with any other processed foods your eating. It does sound like your body is trying to adjust, which is probably why you are having... -
ARCHIVED Need Help Diagnosing Celiac
lizard00 replied to Konaa's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Welcome! There are many folks on here, and many doctors out there, who feel that IBS is just a catch-all term. It's easy to say you have irritable bowel. WHAT is causing the irritation??? Under normal circumstances, your bowels should not stay chronically irritated. I agree with Shay, stay away from the processed stuff. I'm a year into this and... -
Have you tried Ghee? It's clarified butter; lactose free and casein free. I just recently tried it, and it tastes like butter (because it is). I've baked with the earth balance twice, and both times I've felt kind of blah after eating food with it. I don't eat soy regularly, I'm pretty sure there's a reason why... and the list grows again. *sigh*

ARCHIVED Do You Contact Restaraunt If You Get Glutened?
lizard00 replied to SGWhiskers's topic in Coping with Celiac Disease
Typically I wouldn't contact the restaurant. I assume the responsibility that eating out brings. But in this case, I probably would. Because he talked with you personally, and I would think, this is just me, that since he was willing to take the time to learn about your needs to accomodate you, he would like to know what he did wrong. If he doesn't seem... -

ARCHIVED Just Diagnosed Today...need Advice.....? Please Help!
lizard00 replied to Krystle56's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
It was more than likely the tTg test- that stands for tissue transglutaminase. It's a blood test. The test is pretty specific to Celiac. If that specific test comes back elevated, it's usually pretty indicative of Celiac Disease. Did they say anything about doing an endoscopy? -
First, welcome to the new folks on the forum! Glad you have found us. Were you diagnosed with Celiac? Sometimes, gluten intolerance is caused by an underlying condition. In fact, we've got a few folks around who were gluten intolerant as a secondary reaction to an unknown illness. Once the illness was addressed, they were able to tolerate gluten again...

ARCHIVED Reintroducing Wheat
lizard00 replied to Billygean's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Yeah, I would agree. If your diet was overall low in fiber, an increase would be uncomfortable. People have varying levels of sensitivity within the world of celiac/gluten intolerance. It greatly depends on your body and your level of sensitivity as to how fast you can determine for sure if gluten is a problem for you or not. But if you're used to fiber... -
ARCHIVED Reintroducing Wheat
lizard00 replied to Billygean's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
If you are going to challenge yourself, then you need to eat the equivalent of 1-3 slices of bread, per day, for at least a week. The closer you can get to eating wheat, barley or rye in it's most natural form, the better. If you eat something overly processed, it could be something else you are reacting to. We don't always have immediate reactions, or... -
Not the missing link... the genetic link that predisposes someone to Celiac Disease. And just for the record, I had to actually do some research before writing this. Eeek! But that's ok, I've learned my one new thing for today. So here's what I know so far: I have double copies of the HLA DQA1*05-DQB1*0201 gene. To those of you who know what that...
