  1. Gluten free breadcrumbs can be a bit bland. Hubs had cooked some chicken tenders in gluten-free bread crumbs the other night, and there were a couple still waiting to be cooked the next day. I added a bunch more seasoning to them and cooked them in coconut oil, and the difference was amazing.
  2. Hello, Shan, and welcome. Lelt's hope that together we on the board can help resolve your confusion How does celiac happen? Often suddenly, surprisingly enough. It is a genetic hereditary disorder, but the genes are predisposing only - they do not guarantee that you WILL develop celiac disease. That takes a trigger to set it off, some kind of physical...
  3. There is a whole thread on lyme disease here on the forum at for those interested.
  4. Now, I do swear, pricklypear, that is the very first time I have ever heard of someone frying avocado (well, I know they are "baked fries" but still.....) Can't imagine how that would turn out
  5. Do you have a microwave? My microwave has a "Jacket Potato" setting and I just push that button, it asks me to turn the potato over halfway through, and then when done wrap it in foil and let it steam for about 10 minutes. It is so easy. Or you can bake in the oven. Or you can cut in wedges and slices and spray with oil and oven bake. Or cut them in...
  6. I don't know.... it takes 'guts' to deal with celiac!
  7. Hi Shannon. Yes, I would say that your daughter does have celiac symptoms. Everything you mention can be / has been associated with celiac disease. Constipation (or diarrhea) is common. Weight loss is very common (as is unexplained weight gain ). Celiac plays havoc with our immune systems and makes many of us prone to infection. Sorry, but your ENT...
  8. Hi, and welcome, LuLuBee. I am afraid you are not going to like my answer to your question A gluten challenge for testing requires you to eat the equivalent of 3-4 slices of bread every day for a minimum of six weeks for the testing to be valid. Medical professions give varying false information about what it takes, but the above figure is the generally...
  9. I agree with you Skylark. I think the time period posited was way too short. Healing continues to take place long after the two-year mark. I am still healing over four years into it. Depending on the level of damage and the degree of deficiencies, and the other intolerances we develop due to leaky gut, and healing what they do to our body, it takes a...
  10. No, the CRP and sed rate have to be specifically checked, they are not part of any total panel. For a long while I did not know if my inflammation came from my arthritis or my gut - turned out, once I started taking the Humira, that it was coming from my arthritis because it went down quite quickly.
  11. Is your CRP and sed rate normal? These are pretty good measures of general inflammation. My CRP used to be through the roof, but is down to > 5 now.
  12. Sweet potatoes are very good for you if you tolerate them. They are one of my mainstays I alternate sweet potato,, rice/brown rice, pasta as my starches.
  13. I would think that might be a good idea. This one doesn't seem to know much about celiac.
  14. Here's an easy lamb shanks recipe without tomato that you can do in the crockpot: Ingredients 4 frenched lamb shanks

  16. No, I don't have a problem with acids, but I do have a rather extreme problem with lectins.
  17. Potatoes and lemons/limes triggered my hives.
  18. Many of my ailments are skin related. As the largest organ in the body, I suppose that makes sense I have had pilaris keratosis since I was a child. I remember my mother telling me it was because I did not eat my vegetables. But I used to eat the raw vegetables from the vegetable garden, not the overcooked mush she used to serve IN my 4...
  19. As a 14-year old he would be find for an endoscopy. It is only in very young children (i.e., under fives) that they are less reliable.
  20. Yes, it's even more important to be on a full gluten diet for the blood testing, because the antibodies start to fade quickly when they are no longer needed. These tests are considered to be the full celiac panel: Anti-Gliadin (AGA) IgA Anti-Gliadin (AGA) IgG Anti-Endomysial (EMA) IgA Anti-Tissue Transglutaminase (tTG) IgA Deamidated Gliadin Peptide...
  21. If youor son has not already had them, I would expect the GI to order the IgG versions of the blood tests. As the pp says, he may also schedule an endoscopy, depending on the age of your son. When you get the blood test results back you willl know more.
  22. It's possible to improvise a yogurt maker. I have a one liter plastic jar with a screw on lid whichI I use. Put the yogurt makings in that and I wrap it in an electric heating pad set on the lowest or second lowest setting for 24 hours. Makes delicious yogurt. And easy to store in the fridge too.
  23. Is your doctor an older doctor? Those are not used that much today, or certainly not relied upon. As I'm sure you know if you have done so much reading, these testss can often be negative while the newer, better tests are positive. And you only have to pass one test --even if the rest are negative, a positive is a positive, and to rely on only one older...
  24. I agree with Bubba's Mom. "reaction" is a pretty meaningless term without any context to place it in. Even our glutened reactions are all different, let alone our reactions to other foods, chemicals, perfumes, whatever it is we are reacting to. Reactions can be through the whole range Bubba's Mom stated, and also include hives, depression, fainting, atrial...
