  1. Your body can react to certain foods in the same way it reacts to nicotine, or other drugs - you get addicted. This is certainly the case with gluten foods. But once you break the habit, you realize that whatever you were craving was not actually that good in the first place. I found after diagnosis, it took me about six weeks before I stopped craving...

    ARCHIVED Chronic Fatigue And Coeliacs

Yep, Apparently the onset of celiac disease can be triggered by a virus, pregnancy or a period of high stress. Just to be clear, the virus or whatever doesn't cause the celiac disease, its always been there, kind of like a dormant volcano just waiting for the right moment to turn your life upside down

    ARCHIVED Chronic Fatigue And Coeliacs

Hi, I also had glandular fever and was diagnosed with chronic fatigue. Because of the chronic fatigue diagnosis I just came to accept that I would never have the kind of energy that most people have... Until I was finally diagnosed with celiac disease. Your symptoms sound similar to mine before I was diagnoses, I think it would be wise to get tested. Good...
  4. Hi, I just wanted to tell you guys about a product I've just tried and loved. 'Peppercorn' brand now available in some safeways/woolworths sell sausages and patties that are low fat , low cholesterol etc but most importantly they are gluten free and really really tasty. There are a few different flavors, I tried the spicy italian sausage and they were...
  5. Most people think that all distilled alcohols are safe unless a flavor, color or additive has been added - However others disagree and it is a personal choice. Stay away from beer, whiskey, bourbon and anything colored or flavored. Wine, sherry, port, rum and tequila are all pretty safe. Some but not all vodkas are made with wheat - apparently...
  6. Hi, I just wanted to add to this and say that some people do not have a caesin problem but a lactose problem. This often happens to celiac patient because the villi produces the enzyme that helps you digest lactose (in dairy) and when it is damaged from gluten exposure you no longer produce that enzyme properly. If it is a lactose problem not a caesin...
  7. I'm getting married in january and have had a really hard time finding a gluten free bakery big enough to do wedding cakes.... I think I'm just going to ask the wedding cake people to do a gluten free cake and pray for no cross contamination (I don't want to be sick on my honeymoon!!!!) I think we've all been through the denial. Its so tempting (especially...
  8. A light bulb just went off in my head! How are you at baking? You could make gluten free savory muffins! You would need to get to a larger store to stock up on the flours etc needed, but once you have those you can put just about anything into the muffin mix. My favorite savory muffins are spinach and feta, or tomato and cheese... oh and grated zucchini...
  9. I found that anything in an ingredients list that I can't pronounce probably has gluten in it. Any kind of preservatives, thickening agents, flavors, starches... or really anything that you don't recognize or that you don't know what it is derived from... all of these things should be checked before eating.
  10. I probably would not bother getting a medic alert bracelet for celiac disease because although it is very uncomfortable, in my case at least it is not life threatening (in the short term). However, if I had children with celiac disease I would definitely get medic alert bracelets for them. I am an adult who is fully informed and able to judge for myself...
  11. Yeah, as others have said it could be something other than celiac disease. It could be parasites, lyme disease or a whole host of other things. If the gluten free diet works then you have your answer, if it doesn't you should see a doctor. Good Luck
  12. Yeah, a lot of people discover other intolerances after going gluten free. You could keep a food/symptoms diary for a while to try and pin point what is bothering your system. You mentioned that you have checked all your food, what about any medication or supplements you are taking? Also, do you live alone? If not you may want to check out any cross contamination...
  13. Wow, maybe this is an Australian thing. I have a really hard time finding burgers and sausages that are gluten free. Where I am, all the butchers and supermarkets mix flour and egg with the meat to hold it together as a burger. Whenever I want burger I have to buy plain mince beef and make the patties myself. The same goes for the sausages. Grrr big incentive...
  14. I know how you feel. burgers usually have flour mixed through the meat, as do sausages. then there is the cross contamination issue. I usually try to bring my own gluten free pasta salad or macaroni plus pre cooked gluten free chicken skewers and I tape a serving spoon to the bowl to avoid cross contamination with glutened utensils. Dealing with celiac...
  15. Hi, How long have you been gluten free for? I have heard that the neurological symptoms take a lot longer to go away that the physical symptoms. I also have scary dreams when I get glutened but they are more along the lines of giant donut and bread stick shaped monsters chasing me and trying to 'get' me (hence the display picture). *sigh*
  16. Hi, I'm not sure if this is helpful or not but I also have a metallic taste in my mouth but have never had mercury fillings. I think that mine is caused by weak and eroded enamel. So in case the tests come back negative, be aware that there are other things that can cause metallic or bitter tastes. Good Luck
  17. Oh dear, I know how you feel, I had a really hard time trying to find gluten free supplements. I take ferro-grad C which is iron plus vitamin C (to help you absorb the iron) this is gluten free but I'm in Australia so you might not get the same product wherever you are. I had tried other iron tablets before and not felt much of a difference, however the...
  18. Make Indian, Asian and Mexican foods your best friends Rice is cheap and as long as you can find fresh vegetables and meats you will be fine. I am also studying so I can relate to your financial situation. A lot of people say that the amount of money that they spend of food has increase since going gluten free. I have found the opposite to be true, I...
  19. Hi, I would say between one and three months to see a difference. I went gluten free without seeing a doctor and then had to go back onto the gluten for a month to get a diagnosis and I became really really ill from it. So if the diet does help and you do decide to get a biopsy done be prepared for it and take some time off work/school. The toiletries...
  20. Ok, My (future) mother in-law has been staying with us for a week or so while she is visiting Australia (from england). I have been doing all the cooking but despite this I have definetly been getting that 'glutened' feeling. I have noticed her doing little things like cutting open a bread roll and then using the same knife to cut some cheese and think...
  21. The only thing I would watch out for is minced beef as this is sometimes mixed with flour (no idea why but if you buy it from a supermarket it should state if it is 100% meat product or not). Oh and as always watch out for flavored/seasoned meat of any kind.
  22. 4 teaspoons curry powder 1 teaspoon cumin 1 teaspoon corriander 2 minced garlic cloves 1 large onion diced 1 chicken breast diced 1 pack rice noodles wheat free soy sauce 1 red pepper (capsicum) de seeded and diced brown chicken and onion add all spices with some hot water and cook the mix for about 10 mins adding water if necessary...
  23. The skinny thing really bothers me, before I went gluten free I used to get lots of 'concerned' question about how much I weighed, people would accuse me of having an eating disorder and assume I needed an intervention and to be force fed. In their defense I did look pretty awful as I was under 100 pounds, but I really didn't need to hear that I looked so...
  24. I did the gluten challenge and it was the worst time of my life. I was practically comatose for the 4 weeks I was on the gluten and it took me about another month to start feeling better again once gluten free. There has to be an easier way to diagnose celiac disease! Having done the gluten challenge I think that it is far too much to ask a person to go...
