  1. Hi, I guess it depends on how sensitive you are and how much gluten you had. I had to go back onto gluten based meals to get an endoscopy done and became sick about half an hour after ingesting some normal bread. However, if I get CC'd or there is gluten hidden in a sauce or something, I usually go on blissfully unaware until the following morning.

  15. Well, I live in Australia, so the labeling laws etc might be different here. However, in Australia maltodextrin is most definitely derived from wheat and therefore has gluten in it. If you are not sure, call the company and ask.

  20. Yep, most gluten free breads taste like a kitchen sponge. I found that the gluten free breads that you get from the supermarkets are the worst. The best ones that I have found have been at little bakeries, so you could try calling a few of the bakeries in your area and seeing if they offer any. Good luck

  25. I agree with what has already been said. If you stick to foods that are naturally gluten free such as rice, potatoes, meats, etc you will actually save money, especially if you shop at a fresh food market rather than a grocery store. The only gluten free processed foods that I buy are snack things such as gluten free muesli bars. Good luck
