    I was looking for vegetables with the least starch. The entries on the right can help you with nutritional information on many foods. If you have low Ferritin for instance, you can click on the "Iron" and look at the different foods and their iron content. Diabetics can look at carbs and sugars. You can look at fructose content, starch content, fat, protein and a bizillion other things.

  2. I had the "coma" crap for years. It would get so bad sometimes when I was driving home from work, I would have to pull over and sleep. I always had a snack in the afternoon. For me it was "starch" that caused it. Too many carbs=coma for Shay.

    But as you say, yours sounds different. I hope you figure it out soon.

  3. Im skeptical, but fair. I will report exactly what the tests show. Yeah, the buggers are expensive. I wont be buying them regularly even if they ARE accurate. Im just sticking to whole foods that I wash/clean/peel myself. No grains at all. Eating like this I have had no CC issues in over 4 months. :)

    I've decided to use whole wheat pasta for one test. I have some leftover that I put in the fridge out in the garage. I will pour boiling water over a handful and let them sit and soften overnight. These should test high in gluten. They will be easy to puree with a whisk as they will be so very soft.

    Soy sauce for the other. I still have some wheat soy sauce out in the garage fridge.

    For the non gluten test will be my homemade coconut milk and some pureed pumpkin.

    Im gonna order them tomorrow. Will keep ya'll posted.

  4. Im gonna buy some just because I am a scientist. I cannot make any claims on a product I have not used. They ARE very expensive (25.00 for 2 test strips!! 60.00 for 5), but I will order some tomorrow. I just printed off the order form.

    Im going to test 2 things that have KNOWN gluten (out in the garage where my daughter and hubby are allowed to eat gluten products. They arent allowed to bring them in he house at all. I will don gloves and test 3 of their gluten foods.) and 3 things I know do not. Like my homemade coconut milk for example. I have a gluten-free household. Only whole foods are allowed in my brand new kitchen. It has never had gluten of any kind in it. And I am an anal clean freak and clean after every meal. So my homemade coconut milk (brand new Vita-Mix that I got with the new kitchen), some pumpkin puree made by me (skin washed and then peeled off) and some orange juice that I made from our own tree (it is frozen right now). I dont think some evil troll is injecting gluten into the hard coconuts and resealing the hole. Nor into pumpkins. And I know my tree doesnt have gluten. So this should be a pretty clean test.

    Will be curious to see if there are false POS and false NEGs. I will report back. I am REALLY curious about this. I would buy more strips but they are EXTREMELY EXPENSIVE!!!

    They are in Gainesville FL which is less than 2 hours away from me, so I will get them fast, but will have to pay sales tax on top of their expensive pricing. I will also note if the test fails, I will demand my money back from them.

    Oh and BTW, I WOULD name names. I have always believed that keeping someone else from getting sick is WAY more important than protecting a manufacturer. I almost got kicked off of this forum for calling out a product on the Gluten Free Mall. In the end they amended their wording for the product on the site and made it right by me. A good company. But I was willing to risk myself to protect others. Just so ya'll know.

  5. It is possible that there isnt a single connection between the different foods. But that is just how your body reacts sometimes to an intolerance.

    I used to get the "coma" feeling after eating a high carb meal. I dont get it anymore because I limit my carbs.

    Are you eating these foods ALL BY THEMSELVES? Or do you eat the milk with cereal? The lunchmeat with bread? The sardines with crackers? The almond butter with rice cakes?

    Or do you just have a glass of milk and nothing else before that "coma" comes on? Just a scoop of almond butter and NOTHING else?

  6. You would have to read the book or research more. Carbs have sugar molecules. The diet avoids the multiple linked sugars, so the carbs you do eat are easy for your body to digest (mono - one sugar molecule). When complex carbs are eaten and not digested properly they feed the bad bugs.

    If you dig further, you will learn, that she does allow a few beans, but they have to be cooked a very specific way which breaks down the starch into simple forms.

    I cannot eat legumes period. So it is a mute point with me.

  7. Many things can affect a woman's hormones including diet. Fat produces estrogen. So as you are losing weight, you are changing your estrogen levels. The body needs time to adjust. Also, many of us had changes in the length of our cycles when going gluten-free. But it does level out at some point and you get back into a natural rhythm.

    You should go see your Gyno just to make sure there isnt anything else going on. Likely not, but better safe than sorry.

    If Doc. says you are fine, then just give your body a little more time to figure out where it needs to be hormonally. And if you keep losing weight, it might not stabilize until you stay at a set weight for 3 - 6 months.

  8. First of all you had been gluten-free for 6 weeks prior to biopsy which is PLENTY of time for some healing to take place. Even complete healing. You did still have scalloping and inflammation though.

    With those bloods and the biopsy (given the 6 week gluten-free diet) IMO you have CELIAC disease. And if it were me, I wouldnt let them tell me otherwise. I would stay on the gluten-free diet for life.

    You have had a POS response to the diet as well which further supports the dx.

  9. He makes his coconut exactly like I make mine....RAW. But I take the dark skin part off. I am going to try leaving it on next time. That would save me A LOT of time. I dont strain mine for making coconut yogurt. That way I have a nice thick yogurt and I get all of the enzymes and fatty acids of the whole fruit.

    But I am going to try to make the milk by straining it. I did a LONG time ago....10 years or more. I have always used a good old fashioned jelly strainer to make smooth nut milks and it will work for the coconut milk too. I dont need a juicer. :)

  10. Welcome to the board!

    First, I would encourage you to go to a doctor for proper testing. If you DO have Celiac, you will want to know because if you DO have it, you cannot eat gluten for the rest of your life. If you just go on the gluten-free diet without knowing, you might get better and then go off it because you have no CONCRETE evidence that you have it. And untreated Celiac can have some pretty grave consequences.

    If you decide you absolutely do not want to get any tests for Celiac, then given your family history and if you have symptoms, going gluten-free should be for life.

    For "Leaky Gut" many in here have had WONDERFUL results from the SCD (Specific Carbohydrate Diet). It is grain free.

  11. Cant help you with the tomato (no nightshades here) or coconut flour (makes me curl up into the fetal position in pain), but I make my own coconut yogurt using my own recipe. I use young coconut. I use the whole thing. I poke a hole and drain the milk into the blender, then I use the white meat. It is hard to peal that dark part off the white meat. But I find t worth it. I add enough distilled water to equal 6 cups or so. A couple tsp of honey and I whirl it till it gets to about 110 degrees (Vita-mix heats foods if you whirl it long enough). I then add my acidophilus stirring by hand. I dont use the blender to mix in the probiotic as it could kill them. I then pour into my cups for my yogurt maker and ferment for 14 hours or more depending on how tart you want it.

    It is so weird. I can eat ANY form of coconut without issue (oil, shredded, canned milk, fresh milk, coconut water, macaroons, etc.). But I CANNOT tolerate the coconut flour.

    My theory is that they DO include that hard dark part that I cut off the meat in the flour and it irritates my stomach. The pain lasts about an hour. Once it leaves my stomach I am o.k. But I wont eat the coconut flour because of that. I tried twice. That was enough.

  12. I made the pumpkin smoothie today with leftover butternut squash. A little different, but very good. I put a lil vanilla extract in it with the cinnamon and nutmeg. :)

    I have been enjoying my homemade coconut yogurt. Eating it with a bit of fruit for breakfast sits pretty well with me.

    I just bought pears this morning at the store and plan on trying the brownies out this weekend.

    I made a chicken/butternut squash curry in the crockpot yesterday to take to some friends (Halloween) and it was superb!! They made spaghetti and meatballs, but everyone was fighting over my delicious dish!! I served myself first of course. ;)

  13. Some people do not tolerate fermented foods (i.e. yogurt, cheese, miso, soy sauce, etc.) That could lend to that result. But usually people are intolerant to either casein or lactose (or both). In general people will react much stronger to milk than yogurt/cheese because the casein and lactose are reduced in those products.

    That result alone might make me question the accuracy of the Vega test.

  14. True allergies (the type where you get swelling, hives, anaphylaxis, etc.) True allergies provoke an immediate response to an allergen (sneezing, hives, throat swelling, eye swelling, etc.) You cannot miss it!

    Intolerance/sensitivity (GI symptoms, pimples, neurological symptoms, and many more.) Can be delayed for up to 4 days after eating the offending food. This is why they are so hard to track down. The response is not always immediate.

    I feel Enterolab is accurate. And many others do to. But it only tests: gluten, dairy, egg, yeast and soy. There could be all type of intolerances, just look at my signature.

  15. I didnt read the whole thread....but have you had your Thyroid checked?

    And for me....dairy makes me gain weight like crazy. But it is edema (water weight), so as soon as I stop the dairy it melts away. Usually very quickly too. I need a few pounds as I am a thin gluten intolerant, but I dont want puffy water. :(

  16. No test is 100% accurate ELISA or skin scratch. But the skin scratch is very reliable for true allergies (the type where you get swelling, hives, anaphylaxis, etc.)

    An elimination diet IS accurate. There are books and websites to help you, but as MOJ says, seek some professional assistance first.
