  7. I have never had an issue with pepper, black or red. I would be surprised to learn preground pepper had gluten. I buy the cheapest kind and I eat some every day. Can you supply a source for the wheat in pepper?
  8. The way I understand it is your body is making antibodies to combat that foreign invader, gluten. At that point you have antibodies in your system probably every day, I know I ate gluten every day. When you stop and the antibodies are finally out of your system, then suddenly you introduce gluten again ( doesn't matter how much, even a crumb) those antibodies...

  13. The two things that jumped out for me from your posting were dairy and Lays. I have had reactions to Lays and have been LI for many years. If you are having trouble I would leave the dairy out for awhile and maybe revisit it later to see if you can tolerate it. Lay's are off my safe list. I wouldn't eat them in the beginning of a gluten-free diet...

  22. It could be celiac disease. It can be triggered by a surgery or trama and you had certainly had your share. The symptoms sound like they could be celiac disease but it mimics other conditions so the testing is a good thing. Don't panic yet. Your dr's are on top of it and won't let you bleed to death.
