  1. My pharmisist gave me the 800 numbers for each of my meds upon my request - I just told him sometime during the next few days and he got back with me later that day with the info. I wish it was easier than that but it isn't...Kate
  2. I make most things from scratch - except for pasta, spaghetti sauce (although that will probably change next summer), and my brown rice bread because I have not been happy with my non-yeast breads at home yet... -Kate
  3. I tell people that I have food intolerances (which a lot of people assume are allergies and I no longer correct them) and cannot eat those foods. However, most people don't seem to understand that even crumbs (or steam in the microwave as I found out recently) is enough to make me sick. They just think I am a little psycho about it... Only my husband and...
  4. I have not gone through York testing but through elemination diet, have realized that I cannot have: lactose/casein, gluten, yeast, MSG, vinegar, soy, garbonzo, almonds, peanuts, corn, & wine. My celiac disease biopsy was negative... For a while, I lamented the lack of ever having a real bread substitute since I discovered the yeast thing, however...
  5. I agree-if it is a true allergy, an allergist could help with your decision. As to baking, I make do with replacing melted butter with canola oil and solid butter with a solid palm oil (in place of Crisco since it has corn and I can't eat corn). I use gluten-free plain rice milk in place of all milk. I think you can use almond meal in place of dried milk...
  6. I created my own restauraunt cards that specify what I cannot eat and what that means in plain language since I don't think most of the "wait staff" understands what gluten or lactose (etc.) are... I even had one cook come out to talk to me to see what was safe and he then said, well, what about butter - we "soak" our pans in butter. I said NO - that was...
  7. The first few months I added salt to EVERYTHING and I rarely used salt before limiting my diet. I have also been going crazy with the potatoes and I haven't really eaten potatoes or chips in years. I have finally been able to cut back on my salt to almost my former level and well, the potatoes are still there (I can eat them!!!) but not as much as before...
  8. I found this on the Enterolab Web site yesterday: What about yeast sensitivity? Although we know less about yeast sensitivity than gluten sensitivity (because the former has been identified and studied for a shorter period of time), we now know that it too can be associated with an immune reaction that damages the intestine and perhaps other tissues in...
  9. Arrowroot flour should work for giblet gravy. -Kate
  10. I have recently discovered that I am yeast intolerant and have been considering going suger/carb free (are greatly reduced) to see if that will help. However, from what I have read, even once you "cure the yeast intolerance" you still have to watch what you eat for the rest of your life due to possible "flare ups." So, my question is: is it worth it if...
  11. My GI doc told me that I had IBS years ago but symptoms continued to get worse instead of better, even when staying away from "trigger foods." My biopsy just came back a few months ago as normal. My son's blood test was negative for celiac disease, even though we both have a LOT of celiac disease symptoms. His are not as severe as mine are now but are...
  12. I knew I had a problem with food but refused to see it for what it was for years. However, looking back, my symptoms actually showed up about 5-7 years before I had serious, unavoidable symptoms. Now, I realize that all the pain and symptoms have been going on MUCH longer than I originally thought--more than 13 years, it just got to the point where I couldn...
  13. What worked wonders for me was an elimination diet and a 4 week food diary with notes on symptoms and what you thought it was tied to...(gas, dh, bloating, fever, joint pain, lethargy, etc.) EVERYTHING! I started with plain meat, salt, pepper, & garlic...only. Plain fruits and veggies. celiac disease was rulled out - I had already been gluten-free for...
  14. I have a dedicated teflon pan and I haven't had problems yet...I am pretty dilligent about it, some, meaning my husband, might even go so far as to call me parianoid! However, I have had reactions to one of my old cast iron skillets...so I have stopped using those. That is one of the things I will be requesting for Xmas - a new cast iron skillet I can use...

    ARCHIVED Coffee

I can only drink a small amount of coffee - I am down to 1 1/2 cups of half-caf in the morning only. Otherwise, I get a "sour" stomach, bathroom problems, etc. I always assumed it was the acid. It got worse after GERD. I also must eat with my coffee or it is just as bad as if I had drank a full pot, which I used to do a LOT. -Kate

    ARCHIVED Fevers?

I have NOT been formerly diagnosed with celiac disease, however, I have been running a low-grade fever on-and-off for years. It actually got worse after I went gluten-free, my doc(s) has never figured out what it was. I think I have discovered that when I drink wine, I run a fever - I cannot have vinegar and wine is so close. I have just given up the wine...
  17. There is a gluten-free, yeast free rice bread I buy at the health food store - don't remember brand name but it isn't bad. Look in the refrigerator section - sorry I don't have a receipe for you. Right now I would be happy with a gluten-free biscuit receipe that does not come out looking & feeling like a white hockey puck so if anyone has any hints...
  18. I LOVE grilled food but we have decided to stop cooking any of my food on the grill due to contamination issues. I will be buying myself a grill that will be kept gluten-free. I think you got lucky and wouldn't press your luck again... -Kate
  19. I forgot to add, Mary Kay has ingredient lists for all their make-up you can request along with your catalog. -Kate
  20. Have you looked at Burt's Bee's stuff?? They list all their ingredients and I have yet to find any problems with their stuff. -Kate
  21. I plan on eating ahead for my husband's holiday gatherings - it is just going to be easier than trying to find something I can eat at a "buffet" type of resturaunt (yuck!!!) and I am going to visit, I never did like the food at places like that anyway. -Kate
  22. Oops - I forgot to add symptoms. They vary: fever, joint pain, swollen glands, lethargy, gas, bloating, cramping, dh, etc. starting within 30 minutes. Sometimes it takes days for my stomach to get better and in the meantime everything I eat makes me sick to some degree. -Kate
  23. Using the elimiation diet has really helped me...so sick for so long, now when I make a mistake I realize how truely horrible I used to feel all the time. Either that or my reactions are getting worse. What I have discovered using the elimination diet (I already knew about lactose, casien, and MSG): - Lactose - Casien - MSG - Soy beans - Peanuts ...
  24. My new mother-in-law was the same way about Thanksgiving, it was HER holiday. However, she only fixed meatloaf, poor mashed potatoes, and some canned cranberry. Luckily, I found out about this from the other daughter-in-laws (about the food I mean)! Sometimes, you just have to give in to keep peace, but I didn't have any problems bringing my own food so that...
  25. Since restricting my diet (gluten, lactose, casien, yeast, corn, soy, peanuts, etc....) most of my joint pain is gone, I now run a fever less than 50% of the time, and all those other problems/issues have really diminshed. Work on sticking to the diet - it makes such a huge difference, however, it took MONTHS to see some of the results! -Kate
