These people are a pleasure to work with, but the one time where they catered a lunch at a conference that I was attending, it was disastrous. I had called them personally about my diet, and they were very friendly and assured me that they would be extremely careful in preparing my box lunch. Well, lo and behold, the meal was prepared as we had discussed...

ARCHIVED Gluten-Free Shortbread?
rosetapper23 replied to LaurieNYC's topic in Gluten-Free Recipes & Cooking Tips
Yes, this is tricky. I've been trying to perfect a gluten-free version of the recipe handed down to me by a Scottish friend. I found out that using guar gum, rather than xanthan gum, worked best. I also use very fine sugar. -
ARCHIVED I Need To Share! Best Pizza Ever!
rosetapper23 replied to ScarlettsMommy's topic in Gluten-Free Recipes & Cooking Tips
Yes, I agree! Against the Grain Gourmet has the best gluten-free products on the market! I also love their baguettes. So far, though, I can't find their dinner rolls or crescent sandwich bread. I live in California, and we were pretty much the last ones to get this brand into a few of our stores. -
ARCHIVED Teeth Issues

BearRJ, What you need for a diagnosis of celiac is an endoscopy, NOT a colonoscopy! Hopefully, that's what you meant... -
ARCHIVED Severe Symptoms All The Sudden & Not Sure Why
rosetapper23 replied to Macbre's topic in Coping with Celiac Disease
It sounds as though you might be low in Vitamin B-12, which is very common in people with celiac. The feeling that you can't pull enough air in is an obvious sign. It's described in medical literature as "gulping air." It can also cause heart palpitations. You might try taking a sublingual Vitamin B-12 supplement to see if your symptoms abate. Also,... -
ARCHIVED Has This Ever Happened To You?
rosetapper23 replied to gfpirate's topic in Coping with Celiac Disease
Yeah, I can relate. At our office holiday luncheon today, Outback Steakhouse catered it....but their idea of providing gluten-free "options" was to exclude serving me anything with gluten, not making any substitutions. That meant salad without dressing, no vegetables, and no dessert. I know that this particular restaurant has a gluten-free flourless chocolate... -
ARCHIVED Negative Biopsy?...so Frustrated!
rosetapper23 replied to BellaBella's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I would like to add that pathologists are oftentimes wrong when reading endoscopic biopsies because they can be either inexperienced or incompetent. Also, the damage to your gut may be located somewhere beyond the reach of the scope. If your symptoms resolve on a gluten-free diet, some doctors would diagnose you on that alone. By the way, in the beginning... -
ARCHIVED Help Please - Is This Dh? Nasty Rash On My Lips
rosetapper23 replied to cap6's topic in Dermatitis Herpetiformis
Are you careful to avoid iodine? If what you have on your lips is actually DH, you need to eliminate BOTH gluten and iodine. Iodine can be found in iodized salt, salty products (such as crackers, chips, and fries), seafood, asparagus, and sometimes dairy products (depending on where you live). -
ARCHIVED Do You Always Feel Bad When Glutened
rosetapper23 replied to Chad Sines's topic in Coping with Celiac Disease
If you keep dancing with the devil, you may discover that--out of the blue--you suddenly won't be able to absorb iron. You'll end up having to get weekly intravenous iron, since you'll be unable to absorb pills or even the liquid form. Or you'll be walking down the street when all of a sudden you fracture a bone in your foot. You stumble...and, by golly... -
ARCHIVED Someone Said Udi's Is The Best Bread And I Dont Like It!
rosetapper23 replied to ScarlettsMommy's topic in Gluten-Free Foods, Products, Shopping & Medications
Regarding Udi's bread, if you place several slices in a plastic sandwich bag and seal it....and then place it in a warm place (like in a car on a warm day), the bread steams and "almost" seems like regular bread. Also, if you make a grilled cheese sandwich, it usually comes out nice. Personally, I prefer Rudi's bread now, which seems a lot more like how... -
ARCHIVED Cookie Contest Winner - Gluten Free
rosetapper23 replied to ravenwoodglass's topic in Coping with Celiac Disease
Yippie!! Thanks...and it's even easy! I've never bought almond paste, though. Is there a gluten-free brand? Or are we expected to make an almond paste of some kind? Yes, I'm not much of a cook.... -
ARCHIVED Possibly Celiac, Gi Disagrees
rosetapper23 replied to Kristinade's topic in Coping with Celiac Disease
Wow, you really do sound like a walking poster child for celiac! I think perhaps your doctor didn't run the full panel...or the test was a false-negative. I'm from the school of thought that you should just go on the diet and say to heck with the doctors, but that's just me. Others on this site will definitely encourage you to have full testing. It's... -

ARCHIVED Dh After Going Gluten Free? Dr. Says Not Possible
rosetapper23 replied to Jortyle's topic in Dermatitis Herpetiformis
NewsyNanette, Welcome back to the Forum! It sure sounds as though you've been through wringer during the past year....and I'm especially sorry to hear about your mother. You are correct about anemia playing a part in cancer development. In Brian Peskin's book, "The Hidden Story of Cancer," he explains why people with anemia tend to develop cancer--it... -
ARCHIVED Does Anyone Else Stink?
rosetapper23 replied to domesticactivist's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I used to experience the same problems when I ate gluten, and I used a product called Breath Asure. It's a natural product that "works with the digestive system -- often the source of offensive breath." Yes, I still have some of the product around, but I no longer need to use it. You need to swallow 2-3 capsules with liquid and wait 30 minutes for it to... -
ARCHIVED Explaining Celiac To People Without Talking About Poop?
rosetapper23 replied to colfax's topic in Coping with Celiac Disease
All great advice to choose from....but I liked Bartfull's explanation the best, and it's closest to what I tell servers and acquaintances. I say that I have an autoimmune disease where gluten destroys the lining of the small intestine, which can result in nutritional deficiencies, neurological problems, and cancer if I don't follow a strict, gluten-free... -
ARCHIVED Otc Vs. Script - Digestive Enzymes
rosetapper23 replied to JSegura226's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
My doctor prescribed Metagenic UltraClear Sustain Medical Food, and it was the ONLY product that helped my digestive system to return to normal. It contains vitamins, minerals, and amino acids. Okay, so this isn't a "probiotic," but it did the job. -
ARCHIVED Teeth Issues
rosetapper23 replied to Nen's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I should add that my dentist told me that my mother, son, and I all had teeth where the tooth buds hadn't formed properly in utero (all three of us have celiac). He explained that that was why our teeth basically fell apart from the inside out. -
ARCHIVED Teeth Issues
rosetapper23 replied to Nen's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My teeth started self-destructing when I was 11 years old. They started to break, and I lost my first tooth at age 13. My son suffered the same fate--I had his teeth bonded from the time he was two years old. Every time a new tooth cleared his gums, I had it bonded....but he ended up with cavities when he was only three years old. The dentist told me... -
ARCHIVED Testing - Gluten Free Diet
rosetapper23 replied to dkkurtzman's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Okay, regarding the B-12....I also had injections, but my symptoms pretty much stayed the same. It wasn't until I started the sublingual B-12 that I started to see an improvement in my symptoms. My doctor prescribed 2000 mcg twice a day, and I feel fine, now. Also, you should probably request a test of your thyroid function. -
ARCHIVED Testing - Gluten Free Diet
rosetapper23 replied to dkkurtzman's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
With your symptoms, I hope that your doctor (or any one of them) has tested you for Vitamin B-12 deficiency. Those are ALL the symptoms I suffer from from my B-12 is low. If you have celiac, you could be suffering from this...but, also, it's common among many people--even those without celiac. If you don't have an appointment approaching soon, you might... -
ARCHIVED Dh After Going Gluten Free? Dr. Says Not Possible

Actually, under Blue Shield, I would normally pay $15 for a prescription, but I have to pay $22 for Armour Thyroid because it's considered non-formulative. So confusing.... -
ARCHIVED Dh After Going Gluten Free? Dr. Says Not Possible
rosetapper23 replied to Jortyle's topic in Dermatitis Herpetiformis
When I was first diagnosed with Hashimoto's, I was terrified to learn that I'd have to take meds with iodine. I called literally every drug company that manufactures thyroid medications in the U.S. I was informed that EVERY thyroid medication contains iodine. The first medication I was prescribed was Synthroid....and the rash developed immediately.... -

Pricklypear and Squirmingitch, You're both so sweet! I hope that you're also both very aware that, once a woman who has celiac goes gluten free, you need to be extra cautious to check for breast lumps. I read an article in a Gluten Intolerance Group newsletter telling me that when we go on a gluten-free diet, we can finally absorb hormones like estrogen... -
Looks like you have bonafide celiac. With regard to the future biopsy, personally I would take a pass on that. No reason...unless you're not feeling any better or are feeling worse. If you're feeling pretty good, then I see no reason for repeating the biopsy. Case closed.
