  2. Yes, this is tricky. I've been trying to perfect a gluten-free version of the recipe handed down to me by a Scottish friend. I found out that using guar gum, rather than xanthan gum, worked best. I also use very fine sugar.
  3. Yes, I agree! Against the Grain Gourmet has the best gluten-free products on the market! I also love their baguettes. So far, though, I can't find their dinner rolls or crescent sandwich bread. I live in California, and we were pretty much the last ones to get this brand into a few of our stores.

  5. It sounds as though you might be low in Vitamin B-12, which is very common in people with celiac. The feeling that you can't pull enough air in is an obvious sign.   7. I would like to add that pathologists are oftentimes wrong when reading endoscopic biopsies because they can be either inexperienced or incompetent. Also, the damage to your gut may be located somewhere beyond the reach of the scope. If your symptoms resolve on a gluten-free diet, some doctors would diagnose you on that alone.   8. Are you careful to avoid iodine? If what you have on your lips is actually DH, you need to eliminate BOTH gluten and iodine. Iodine can be found in iodized salt, salty products (such as crackers, chips, and fries), seafood, asparagus, and sometimes dairy products (depending on where you live).

  20. Okay, regarding the B-12....I also had injections, but my symptoms pretty much stayed the same. It wasn't until I started the sublingual B-12 that I started to see an improvement in my symptoms. My doctor prescribed 2000 mcg twice a day, and I feel fine, now.   22. Actually, under Blue Shield, I would normally pay $15 for a prescription, but I have to pay $22 for Armour Thyroid because it's considered non-formulative. So confusing....

I called literally every drug company that manufactures thyroid medications in the U.S. I was informed that EVERY thyroid medication contains iodine. I hope that you're also both very aware that, once a woman who has celiac goes gluten free, you need to be extra cautious to check for breast lumps. I read an article in a Gluten Intolerance Group newsletter telling me that when we go on a gluten-free diet, we can finally absorb hormones like estrogen...
  25. Looks like you have bonafide celiac. With regard to the future biopsy, personally I would take a pass on that. No reason...unless you're not feeling any better or are feeling worse. If you're feeling pretty good, then I see no reason for repeating the biopsy. Case closed.
