  3. Supposedly, the biopsy is the "gold standard" for celiac diagnosis, whereas the bloodwork can result in false negatives. I'd definitely place him on a gluten-free diet immediately, especially since he's already had the blood drawn. With a positive biopsy, he really needs to concentrate on healing his gut.

  5. I SO agree with Mushroom! Grains contain exorphins, which have addictive qualities. Food manufacturers in the U.S. know this, and it is one of the main reasons that so many processed foods contain gluten-containing grains.   17. I agree about taking her off dairy initially, and you should also know that many celiacs are unable to digest soy products (except fermented types like gluten-free Tamari sauce, which is a substitute for soy sauce). Some of us are also sensitive to oats (even the gluten-free type) and iodine.

  20. The simple, short answer is, yes, I've been glutened by Trader Joe products. It's been hit-and-miss with them, and my last run-in convinced me that I can't eat their so-called "gluten-free" products without the possibility of cross-contamination.   21. I agree that you need to be tested for common nutritional deficiencies. Since you're having neuropathy issues, be sure that he tests for B-12 and ferritin. Also, Vitamin D and Folic Acid can be low in celiacs.

  23. Perhaps the iodine was used as an antiseptic? If so, they can use alcohol. I only allow surgeons and doctors to use alcohol on me. Maybe someone else knows if iodine is also used internally for such a procedure.
  24. I believe that current law DOES require that they inform you about whether or not the product is processed on equipment or in a factory where wheat is also processed. Anyone out there know otherwise?
  25. I can only say that I have been glutened by some Trader Joe's products that contain this statement. I assume it's from cross-contamination.
