It sounds as though you might actually have celiac--going back and forth between diarrhea and constipation is common when eating gluten. And, yes, the blood tests tend to be unreliable, but IMO the biopsies are even more unreliable. Um...it's probably most definitely the soy and Silk products. Many celiacs cannot tolerate soy, and your symptoms match mine when I eat it. Otherwise, your diet sounds fine. -

My guess is that she's possibly sensitive to casein, soy, and/or oats. You might consider eliminating all of these items and then adding them back in one by one. Also, some celiacs are sensitive to nightshades. Personally, I'm fine with them, but I thought I would mention it in case your daughter might be someone who is also sensitive to them. I, as well... -

I'm wondering if you've done some research about what a high IgG actually means in terms of celiac. The testing can be really confusing. I suppose it varies with the individual, but after I've been glutened, the joint pain lasts 4-5 days. -
I would advise you to reschedule the biopsy...or just cancel it altogether. Although an endoscopy was once considered the gold standard, the leading expert in the field of celiac now believes that that is no longer the case. (BTW, your gastro probably hasn't yet received that memo.) If you truly feel that gluten is an issue for you, simply eliminate it...

I believe it's possible that you have celiac, but you should also get your thyroid tested because thyroid problems can cause memory problems, joint pain, and fatigue. -

I had those symptoms for years, especially after I developed Rheumatic Fever. It's called paresthesia. The two diseases share a common gene. However, I'm wondering if you might simply be sensitive to another food, such as dairy or soy. Many celiacs can't eat one or the other (or both). For me, soy makes me feel bloated and gassy, and then I end up having diarrhea. Have you tried eliminating other foods yet? -

You may be ingesting more iodine than you're aware of, especially if you eat processed foods. Manufacturers don't identify whether or not the salt they use is iodized, so you can get it from chips, fries, processed foods, foods prepared by restaurants, etc. It's also in vegetables, especially asparagus.
