Beans will do it. Even green beans will do it if you eat enough of them (as I found out on my "yay fresh green beans from the market" binge this summer. "why am I so bloaty... oh right. beans are still beans" Sometimes bloating just happens. Again, I find that digestive enzymes help. And I'm doing much better without dairy or soy, thanks. -

It's always possible. I don't know when my problems with dairy first developed (was likely in denial for a while), but I didn't go dairy free until 2 years after going gluten-free. You could go dairy free (completely) for a few weeks to see if it helps, then try some again and see if you react. It could be something else though. Also, it's not a bad idea... -

Yup, Iron deficiency can definitely be a symptom/sign of malabsorption. Was your 11 year old diagnosed, or is he the one who might have NCGS? Get him to take the iron first thing in the morning (on an empty stomach) with vitamin c or a glass of orange juice. It will absorb better. Not sure about probiotics. I also agree it was likely the alcohol and not the zucchini. Alcohol of any sort can be hard on the stomach if you have more than a couple drinks. I also hope you were eating more than just zucchini. I'll usually start feeling odd within a few hours, but I can't tell if it was actually a glutening (as opposed to accidental soy/dairy, or just something that didn't agree with me) until the next day, but sometime you think you're in the clear and then it hits you 2 or 3 days later. 	Hmm, best way to find out is to have butter in a controlled home environment and see how you do (any excuse to eat a spoonful of butter is not a bad thing). If you're ok, and you've never had problems other than that potato, then you were probably CCd. Which sucks, but better than giving up butter.

I still get the sleepies after lunch sometimes. Since your gut is still healing, all your energy is being diverted to digestion. Digestive enzymes might also be helpful, to break down and absorb things better, since you're still healing. Also, more veggies than carbs is usually better, with some protein. These pancakes sound tasty though. -

I'm always afraid of something like this happening. My man is a big beer connoisseur (read: snob), so I do lots of beer smelling (there's this amazing raspberry beer that's sheer torture), but am extremely careful not to touch the stuff (and no post-beer kisses either). I'm a one cup a day person. I can't survive without that, but if I have too much i get jittery and my stomach isn't happy with me. It's more the acidity level, which is actually reduced by putting milk in it (if you have problems with dairy, try almond. very tasty). You could definitely have an intolerance to dairy, either casein or lactose or both. I had terrible trouble with my inner ear and sinuses before cutting out dairy, which has helped tremendously. You can't test for intolerances other than just cutting it out and seeing if you feel better. So, drop all dairy for a few weeks and see if your sinuses start clearing... - 
	I seem to be able to have very small amounts of butter without much trouble, but more than a teaspoon and I'm done for. Same with cheese. Milk, yogurt, soft cheese, etc = no way. Problems with dairy can sneak up on you out of the blue. Could be that you're developing an intolerance now. A dairy challenge to see what's ok and what's not might be a good idea...

Yeah, I usually ask if the tortilla (corn) chips are just corn, cause sometimes they're not. Also, if the restaurant makes their own, they might be fried in the same oil as gluten. I've had an "it's not on the gluten-free menu but we're pretty sure it's gluten-free" situation before. One of the only times I've had to send something back to the kitchen... -

If the restaurant you've been going to has a gluten-free menu, you should really talk to the manager/owner and suggest they label the chips and other deep-fried items that they are not cooked in a dedicated fryer. If you see an item listed on a gluten-free menu, you assume it's actually gluten-free! You don't want other people making the same mistake. ... -

I worked at a pizza/italian restaurant when I started getting real Celiac symptoms (constant bloating despite loosing a ton of weight, feeling like crud after eating anything, etc). Have you contacted the company directly since you stared having this rash? It sounds like an allergic reaction, probably to some ingredient in the probiotics, if not necessarily the bacteria cultures themselves. Tell them that you've had an allergic reaction and need to know exactly what's in them so you can figure out what you're reacting to and avoid it...
