  11. So....I've been through a bit. Here is what I have learned. My body does best with three meals that are quite similar. Start with meat -- much more than I used to eat.   13. Ok...here is my best advice: Ditch the gluten-free recipes -- use your favorite recipes or google "reg" recipes and adapt. I spent close to a year trying to perfect "gluten-free" baking and other cooking. I knew how to cook before diagnosis -- just needed some fine tuning. Crazy part is most recipes -- just replace "flour" with gluten-free all purpose...

  22. I can drink red, not white -- and have to limit the red due to histamine intolerance. White wine started bothering me shortly after I went gluten free -- I always thought it was because it had more sulphites than red -- I don't do well with anything that ends with -ite, -ate or -ose.

  24. Welcome Modarem! It is not the time to digest that is at issue. When you consume any amount of gluten it starts an immune reaction. It can take several days - even longer for the system to settle down. You are not imagining that you are becoming more sensitive - it happens to many of us -- before I was finally diagnosed at 43 I ate gluten regularly...
