We use 'Pacific Natural Foods' Cream of Mushroom and Cream of Celery in several recipes and have used 'Gluten Free Cafe' cream soups too. -

Eggs scrambled in pan with leftover roast beef cubes and aspargus. Lined bowl with fresh spinach - add eggs - let sit for a minute to steam the spinach - mix add salt and pepper. And Jack-o-lanterns currently rotating thru the oven - smells great here -

Just to clarify for you - peanuts are legumes, not nuts. I actually stored this information in some tiny corner of my brain from nutrition class as a youngster - but brain fog didn't let me access it until I was educating myself about food chemistry after Celiac diagnosis. Eliminating many food groups is tough and may not be necessary - but it can't... -

Really good idea Also wanted to add...if you have any skin issues that would show in photographs - take pics - I found it incredibly helpful as every time I got to the doc's office my rashes had disappeared or were much improved...a picture is indeed worth a thousand words- 10 replies

Reduce the journal to a one page bullet point list of symptoms, organized into: -before gluten removal -improvement after gluten removal -after reintroduction of gluten Much easier to use the list than a journal when speaking with the doc - bring the journal but have the list in your hand along with a list of questions and necessary blood work. ...- 10 replies

Yes, it is possible to have Celiac Disease with negative blood work and endoscopic biopsy results. It does become more difficult to obtain an "official" diagnosis. Make sure you request written or electronic copies of ALL of your medical tests. It is unfortunate that not all Gasteroenterologists have proper training or experience with Celiac... -

You can and should request written or electronic copies of ALL medical testing. My endoscopic reports include a written description of what was seen by the GI, along with some pictures of abnormalities and written pathology of biopsies - not sure all reports are the same - but all should include pathology report. I agree...just find it crazy that the law hasn't been finalized after four years. Like I said...this was one very small step forward....I also felt strongly as a community we shouldn't let this thing fall short of the target. -

Before I get to suggestions for your GI appointment - you seem to have a possible gluten allergy - an allergic reaction is nothing to take lightly. If your breathing difficulty/nasal congestion is escalating, you need to call your primary to order an epi-pen. The allergic response can worsen suddenly and is nothing to mess around with. Everyone reacts differently. I feel a reaction within an hour, but it can take up to three days. Time will tell. Drink lots of water and let us know how you fare. There is no way to prevent every accident so don't be too hard on yourself. We've all been there. -

Not naive at all - premature gluten removal happens all the time - many doctors advise their patients to "try" removing gluten without testing - and please remember you already have a very strong positive to the most important test. Good luck at your appointment -

I disagree with this. While the best opportunity for accurate blood and biopsy are before gluten is removed there is important information to be obtained from a full celiac panel, endoscopy, biopsy and yes most importantly nutrient testing. It is important to bring a written list of your symptoms prior to removing gluten, improvements and any outstanding... -

I think it could have been popping/sizzling chicken, but I also believe it could be something completely unrelated. The early days can be full of minor oops and one off reactions to other foods that cause may remain a mystery or falsely blamed on the wrong item. Your symptoms do sound like you were glutened so it's would be wise to tighten up some tasks... -

When a doctor is being both dismissive and relaying FALSE information in is time for a new doctor. Celiac Disease has over 300 symptoms - many of which are not GI related. Unfortunately many doctors are neither trained nor have experience with Celiac. It sounds like you may be switching doctors very soon - so for now move onto the GI and hold off on switching... -

Or try a rolled up bath towel. Does housing pay your heating bill? If so you might email them to suggest they install a gasket on the bottom of your door or threshold which will keep bugs out and save energy -
