  1. One biopsy is not enough. Perhaps your GI does not have a lot of experience looking specifically for Celiac Diesease? Positive blood test + improvement on gluten-free diet = Celiac Disease. Do you have your blood test results? Do you know if you had a full Celiac panel? Were your vitamins/minerals besides iron tested? Doctors are practicing...
  2. OP said that the chicken was fresh, not frozen - so it wouldn't have had the ingredients I listed....therefore the chicken he ate was gluten-free.
  3. Hmmmm.....have you checked your personal care items for gluten - shampoo, soap, lotion, toothpaste? It sounds like your are reacting to something else -- I know it can be tough to figure out...hang in there...it does get easier.
  4. hmmm...I just googled spartan chicken breast and found those ingredients...if it was fresh I'd assume there are no additives. What else did you eat with the meal? or earlier in the day that you may have had a delayed reaction?
  5. I found that they were gluten free. Here are the ingredients: Chicken Breast Meat with Rib Meat, Water, Contains 2% or Less of Sea Salt, Modified Food Starch, Sodium Phosphates, Chicken Flavor (Salt, Chicken Broth, Natural Flavors), Flavoring. I also have had weak/many twisted ankles - always thought I was just klutzy - interesting thing is I had rubber knees my entire life - they would dislocate often - even get knocked out by my husband's legs bumping mine while sleeping -- that hasn't happened in the past couple years!   22. That is a tough question to answer. Maybe. It depends on a lot of factors. Some Celiacs are able to heal by removing gluten only; Others are able to heal by eating mostly whole/non-processed foods; Some have to remove other intolerances in order to heal and are able to add those foods back into their diet after healing.   25. Great thread! I'm a native San Diegan - San Diego is becoming much more gluten friendly - my daughter lives in Santa Rosa (hour north of San Francisco) - our family finds that the entire Bay Area is much more gluten friendly/knowledgeable in comparison with San Diego.
