  1. Ursula: Thanks for the links! It seems that I get a good bit of potassium in my diet, but a friend scared me (she's new at nursing) when she said too much potassium can cause heart arrhythmia. It seems that it's quite the opposite and since I have a heart murmur and been feeling that fluttering now and then - I had cause for concern! Now...
  2. I refuse to take it anymore. Along with the derangement of my mental faculties, the immediate weight gain was way too frustrating.
  3. Nor have I come across the story-telling waitstaff - but then I bring my own food when I'm out with friends and tell them that I have too many food allergies and that I didn't want to ruin their or the cook's day. And yes, I have the preverbial sign on my back - contact me with your health questions!
  4. If you're able to tolerate the ingredients: Mix; cooked quinoa quinoa flour tapioca flour (holds the burger together) pulverized sunflower seeds rice bran and/or flax seed meal, with chopped mushrooms fresh chopped ginger fresh onion fresh garlic olive oil agave nectar balsamic vinegar molasses seasonings (I use salt pepper and cilantro)...
  5. Wow - someone who understands that concept! Being highly allergic and having celiac disease, most proteins don't always agree with me even if I'm not allergic to them. I have to take my protein in very small amounts along with L-glutamine, enzymes and a lot of hope that I will digest some of it.
  6. They've touched on Celiac previously - it was how I learned what celiac was before I was diagnosed, though I didn't know the extensiveness until I got here!
  7. While the idea is very interesting, personally I would have so little to eat if I eliminated rice and potato from my diet. I'm already allergic to over 20 foods and most of them are proteins. Do I feel completely better? No, ...do I know if it's gluten or allergic reaction? Not always, but the only food I eat is what I cook. And I think too,...
  8. I think too, that you don't know what is in the flavoring agent tank- ie. real coke syrup or not?
  9. There's always coconut oil..
  10. Bloating, D, and itchy itchy rashes are all up there, but so is the fatigue - I play on several soccer teams and hate when I can't contribute...
  11. What brand did you buy? I take a liquid that does not have lactose (I'm allergic to dairy) in it.
  12. I am highly allergic to soy (along with a bunch of other foods) and it, like gluten is in nearly everything - it is a cheap filler for processed foods... For those who asked about eliminating it: For cooking oil/margarine spread there are always coconut oil, and Olive oil as choices. I eat a vegan diet and can't have nuts or beans so my food...
  13. Just a bit off topic but: While having a cool adult conversation with my 22 y o son, McD's came up since he used to work for them. One of the things he mentioned was that they did have a dedicated fryer at his location(s), but if they were out of fries and needed them badly (long lines), the fries also got cooked in the non-dedicated fryers. Mix...
  14. I so relate - I am allergic to over 20 foods too... When I found out I had celiac, my 1st question was - what the hxxx can I eat? I understand too, about being overwhelmed especially the first few times grocery shopping. I would shop with a list, actually a notebook (things I could and things I couldn't) and when I just couldn't read another label...
  15. I am allergic to beans and that is how I remember: the swelling and bloating shortly after eating them, that's not to say that you are allergic. You could always try eliminating them from your diet for a while and see what happens..... For digestive enzymes, I use Tropical Papaya by Country Life when I need some immediate relief. ------Just some...
  16. So can you imagine then, for those of us with celiac and food allergies!? Usually the alternative product to gluten is something I'm allergic to. So I prepare my own foods alot! Don't mention eating out... But then there are moments of annoyance: I had to ask again (they forgot) if the store that I shop at, to please order the one of only three...
  17. Just an fyi - My son used to work at a McD's - no one from there ever went to the "training" sessions, they just trained on the job. There was supposed to be a dedicated fryer but it really wasn't because when push came to shove - they used it for other items. I'm not saying they all do that - just that this scenario does exist.
  18. Susan Yes, there are places that do testing. I used to work for a research lab - it's not cheap though! There are a few in the Atlanta area.... You would have to call the lab and ask for particulars in terms of how to package and ship them as well as what kind of quantity they would need etc.
  19. I agree with Richard, it took me a long time to get to reasonable point of wanting to work-out/play soccer again. Once you figure out what you can and cannot eat, make sure it's balanced. I take lots of supplements because in addition to celiac disease I have many many food allergies. As far as the nutritionist goes, they can be helpful or not ...
  20. Drew's Garlic Italian Can be used as a marinade too!
  21. I was tested a long time ago - allergic to rye barley corn soy dairy eggs beans - to name just a few of my 20+ food allergies. But did not show allergy to wheat - go figure. Glad there is flaxseed, hemp seed, rice bran and quinoa!
  22. Wow what a ride... My son lives in "Athens - and we both dislike going back and forth - I can't imagine driving everyday with all of our "lovely" traffic issues!
  23. Yes, yes and yes... I was where you are: I play soccer, coach, and work out at the gym (oh and work fulltime). With the onset of celiac disease - I lost 30lbs in a month - leaving my weight at about 99lbs which is a tad too thin for me. I could barely get out of bed to get to work and then I would have to leave early to go home. I had to get a fill...
  24. I'm in Lilburn GA (Gwinnett Co). Welcome!
  25. How about being banished from using the office microwave 'cause your boss doesn't like the smell of your food? I guess broccoli is still a foreign food to some! It does suck the way people don't get it and/or make fun of you... I just carry my food with me and tell servers etc. that I have sooooo many food allergies (which I do, along with...
