  1. Pacific is the brand we use. I can't use anything by Blue Diamond as I react to the 'gluten-free ' barley enzyme based processing.
  2. No snake nests? What, there's no center of politics and government?
  3. We had about 8" of snow at our house and it got down to 13Âş F (10.5Âş C) last night. It is 24Âş F (4Âş C) at our house right now. Fortunately we have a wood stove and it is nice and toasty at home.
  4. And hobbit holes! They have hobbit holes there! I vote for NZ!
  5. Hi Kim, One thing I didn't see anyone mention is that if iron and your vitamin D are due to malabsorption, which they likely are due to your positive diagnosis, you need to get them checked frequently! The reason for this - especially with these two nutrients - is that as your system heals (which will only occur on a strict gluten-free diet), you will...
  6. No Gluten! No Dairy (except duck eggs)! No Soy! Great Flavor! Taaassstesss GR8! Ok, I've been working on this for a while and it is a composite of dozens of recipes I've tried or looked at and my own testing. We really have missed eggnog, and this could be made non-alcoholic by using rum extract and adding a 1/2 more cup coconut milk and 1/2 cup water...
  7. My neuro symptoms are triggered almost completely by soy. This developed after my celiac disease became fully engaged so I went through the same searching you did as I thought I was somehow getting CC all the time or missing some gluten in the house. I cannot tolerate soy in any amount in any form. Soy lecithin is in chocolate, tea, flavorings, many of the...
  8. My wife tested right on the line for gluten and tTG, but positive for Dairy through Enterolab. Which actually matched up with another (non-Enterolab) workup for food intolerances.
  9. Just out of curiosity, what company did your testing? I'm looking to get retested to see what is on the DQA and also to validate the other lab I used.
  10. My family is split left/right. Dad, and two brothers are lefty, one sister is ambidextrous, Mom, and the other five of us kids are right. Dad (left), me (right), sister (right) are all diagnosed celiac disease. Two other sisters are not diagnosed celiac disease but are severely gluten intolerant at the least. One is a righty, one is a lefty. We all have DQ...
  11. Negative on the genetic test means you do not show the known markers predisposing you to celiac disease. However there are a couple people on the boards here who have celiac disease or Gluten intolerance (or have family members that do) who also did not show any of the known markers. While this would indicate you probably have a reduced risk, there are still...
  12. Skylark, That is a really interesting article. I don't know that I totally agree with the conclusion of 'mostly plants', however I do fully believe that he nails it on the head that our, 'enriched', 'fat-substituted', 'nutrition enhanched' "foods" are not in the least bit related to the real food out body needs or wants.
  13. Key word there is bread. Complex carbs and starches tend to deplete the vitamin reserves and there is also some question as to exactly how they affect the vitamin C uptake. So a diet with bread, I would expect to see that. I know that since I have been eating mostly protein and MCT rich fats for the last few months (with a few lapses I will admit) I have...
  14. @Rworthy: Actually no, we are not past that. If you read and research what has happened in the last 40 years to our food recommendations, along with the AHA, AMA, ADA, and NIH, you'd find that we are so seriously out of whack with our nutritional guidelines, and the money that is being poured into keeping the current 'drug' based solutions to everything,...
  15. One of the best synopsis of the Gary's book I've seen online is here: Open Original Shared Link
  16. Yes. The Inuit (prior to the introduction of the first trading post) subsisted almost entirely on a high protein/high fat diet. Less than 5% of their caloric intake was derived from carbohydrates (mostly roots) and most of that wound up being what we refer to as dietary fiber. Also two south pacific islands were involved in a study from 1960 through 1...
  17. Actually that is not entirely accurate. You don't need any carb at all. Your body can use one of two fuel sources. Ketones (from fats) or glucose (from carbs). There is plenty of research including clinical studies showing it is entirely safe and healthy to subsist on a protein/fat diet, assuming you have adequate intake of the correct kinds of fats (at least...
  18. I personally know (in RL) a couple people who have had tests come back negative. One had everything normal, and their Dr. did a total serum IgA and they were not IgA deficient. Another had gluten, casein normal, but showed high soy. So I know that at least some Enterolab results are negative. A relatively low percentage I'd guess, probably due to the self...
  19. Glutamates are a family of chemicals derived from glutamic acid. They are naturally occurring in many food, and a lot of people can have reactions to them. In the early part of the century, MSG was derived from wheat gluten, which is about 20% glutamic acid. There is a whole issue of Excitotoxicity which is where nerve cells are damaged or killed by glutamates...
  20. When I was in school in the '80s I didn't get an allowance. I was bouncing from foster home to foster home. I got my first job when I turned 14 cutting firewood and cedar blocks during the summer, and my first two paychecks I spent on contact lenses. The state wouldn't pay for contact lenses, only glasses with the cheapest frames you could get. As soon as...
  21. Hi Zizzle, If someone is IgA deficient you can't use IgA response to Casein or any other IgA measurements as a guide. See my response above.
  22. Given the fact that your doc said he saw visible damage after EIGHT WEEKS of being on a gluten free diet, and even without the lab work being back yet, combined with the low scores, would suggest to me that you need to have him run a total serum IgA. You may be IgA deficient which would make any IgA based antigen tests worthless. This would also mean you...
  23. Bobbi, you have to set the expectations higher. It sounds like you have a problem with adult boundaries, so this may be hard for you. You need to make sure that you only eat food you have prepared and brought for some time. Use that as an opener to discuss the problems you face in figuring out how to make _________ (cookies, cakes, etc, etc). If you come...
  24. Hi Fey, I did not have 'brain fog' prior to going gluten free. About two weeks after going gluten free it hit me. Typing, spelling, memory, forgetting words and losing my train of thought in the middle of sentences. It really freaked me out and it kept getting worse. It gradually started getting better, and most of the time now (it's been over a year...
  25. Yes. I got rid of our old bread machine and got a BreadMan Pro which has a gluten free setting. It makes some wonderful bread!
