  1. Also some of those symptoms could be related to hypoadrenia (impaired or low adrenal function). Not enough to measure as Addisons, but significantly low. This will affect your cortisol, insulin, estrogen/testosterone and all their precursors which will whack out all your hormones including your stress hormones.
  2. Sometimes I don't do well with anything that has a gum in it. I haven't figured it out yet but it is a combination of something(s) + gum. I don't eat much processed food at all so I rarely encounter it, but I have figured out that it is gums. I know there are certain other things I can eat but not in combination. e.g. I can eat paprika or peppers, but not...
  3. I did not. I was diagnosed after I got my Enterolab results back and the dramatic turnaround in my health and various multi-year issues within weeks of going gluten-free. I actually went gluten-free first, then got the Enterolab stool tests done about a week later. So by the time I got my lab work back my Dr. had already seen a huge improvement in my health...
  4. I'm just speaking for myself here, though there is plenty of research to back this up. I get 100% of all my nutritional requirements from meat. If I cut out all non-animal products (and I have done this for up to four months at a time) I well exceed all nutritional requirements. The key is eating organic free-range meat and not stripping out the fat. Organic...
  5. If you don't mind my asking, are you vegetarian for ethical/moral reasons or are you doing it primarly/only for health reasons? If you prefer not to answer that's fine and I won't read anything into it.
  6. We had to replace chopping boards (both wood and restaurant grade plastic), wooden and some nylon utensils, baking stones, non-sealed stoneware, non-stick cookie sheets, colanders, sifters, a pasta cooker, measuring cups, and a couple pieces of non-stick cookware that apparently had minuscule scratches. It will depend on your degree of sensitivity and reactivity...

    ARCHIVED I'm Scared

GFManna is right. You are at somewhat of a disadvantage because all your intuition and instinct for baking is going to have to be unlearned. However, just as a word of encouragement, a couple that is friends of ours have had a catering business for years. Many years. They are both superb bakers and cooks, and have quite a reputation in our region. Four years...
  8. Interesting question: Does it define me? Not in the sense that I say that the single overarching component of my life, that purpose for which I exist for is celiac disease. I don't think there is any one thing other than God that defines me, but celiac disease is an integral part of who I am. I think one of the differences is with many other diseases...
  9. Hi deaja, Mushroom is right in that it is way too soon to make any kind of definitive decision, but the fact that you are feeling better already should tell you something. If you have celiac disease (even if it is undiagnosed) it can take a long time to heal depending on the degree of intestinal damage, as well as any secondary issues caused due to malabsorption...
  10. By the way, I would also strongly recommend you talk to a GI specialist if at all possible and make sure that you don't have some type of ulcer or other issue going on.
  11. Big clue here.....greek yogurt with honey! Natural probiotics in the yogurt. Cut out all the sugars in any form and all grains and starches of any kind for the time being. Get two or three bottle of PB8 Pro-biotics and a couple bottles of saccharomyces boulardii (I recommend Vitamin Shoppe for prices). You will probably have to get the boulardii online, but...
  12. Welcome kcmaru! I'm so glad you found out you aren't crazy! I had my first 'think I'm having a heart attack' 20 years ago. They told me it was stress. Then too much caffine. One time I was told, "You just need to get more excercise." I was in my martial arts classes 14 to 16 hours a week! I too (as so many others have) had CT scans, x-rays, nuclear stress...
  13. Congratulations Cap6! That first year anniversary is awesome isn't it? You look back at all the bad days and realize that you really are getting better!
  14. Welcome to the board Enkagi! I'm chuckling because you are talking about what happened to my boss. He and his entire family went gluten, carb, soy, and casein free as part of dealing with their young son. He wasn't expecting anything personally, they just did it as a family because it made it easier to deal with their son's issues and food. He noticed...
  15. My wife tested negative through Enterolab. Is your Dr. recommending desensitization for gluten?

    ARCHIVED Too Hot

I used to keep my apartment at 62-65 and I was comfortable in shorts. I could go outside in the snow in my bare feet and shorts and not get cold for a while. Two years into gluten-free/CF/SF that has changed. Multiple thyroid tests over the years, all ok. I think that soy was the cause. I didn't remove soy from my diet until 6 months into the gluten-free...
  17. Good Lord, why are you waiting to go gluten-free? One thing you mentioned (that I didn't see anybody else comment on) is that amenorrhea and reproductive issues are linked to untreated celiac disease. Also, the 'flapping' you are talking about, I experienced as well. I was having intestinal spasms due to the horrible strain my guts were under. I didn't develop...
  18. I didn't start developing GI issues until about 6 years before I was diagnosed. I had a lot of other wierd 'random' issues though, and also developed neuro and psych (depression, panic attacks, severe insomnia). I was very 'asymptomatic' - whatever that means these days. I mean when the Red Book lists over 300 known symptoms, conditions, and linked/related...
  19. I had multiple inexplicable intestinal pains for years. The right side one was a sharp, stabbing pain that would come out of nowhere and double me over. The left one would be a duller pain that would wax and wane. Not long before my diagnosis both pains were pretty much present all the time. I was diagnosed with IBS prior, then also diverticulosus, and a...

    ARCHIVED Venting

Hi Allisont, I want to say ditto to everything mushroom said. I'm also supersensitive to soy as well as gluten and I've developed what appears to be a true dairy allergy in the last year. So I can related to the frustration. But as far as the continued malabsorption issue(s) I had a similar problem for quite a while. I finally began seeing some significant...
  21. Watch out for the teas. We drink a lot of tea too, and when I was diagnosed I found an awful lot of them contain gluten. Then I had to quit soy and found that even more of them have soy lecithin! Loose leaf, unflavored teas are pretty safe, though I have found a few of the loose-leaf 'herbal' teas have barley or sprouted wheat in them.
  22. My research over the last couple years finds that that you cannot 'absorb' gluten through the skin. However porous mucous membranes (lips) may be another matter. As I'm sure you've read, many people develop a higher degree of sensitivity to gluten from CC after going gluten free. It is possible you are reacting to cross-contaminated cookware, dishrags...
  23. Jenn, I agree. You were reading my mind. Kim, I'm sorry if it sounds harsh and overwhelming, but I agree with Jenn. If you have celiac disease there is no 'acceptable amount' below what she described, which is the FDA cutoff of 'gluten-free'. The question you asked is really, 'how much can I get away with before I feel bad?' In some ways it is easier and...
  24. Love your imagery shroom! And in response to the title, YES! there is a risk in a diet which eliminates self!
  25. I have to say (just from reading the title) I don't WANT a cure for my heartbeat!
