  1. Foodiegirl, this is not directed at you or your post, but at an attitude I seem to keep encountering even in people who have been diagnosed and living with celiac disease for years longer than I have. So..... I'm going to go onto a slight rant here. I don't understand what the obsession is with having to reintroduce or 'get to eat wheat again' for many...
  2. Why not have him bake gluten-free bread? That's what we do. Also, I agree with a number of the previous posters. I do NOT (cannot) allow gluten products into our house. Even when our kids come over. At Christmas one of the boys said, "You can't expect us to just eat this," when I told him I didn't want him going back to their house to get chips and stuff...
  3. I don't have much joint pain from glutening, but my boss is so sensitive that he has had to call in sick a couple of times due to the joint pain and swelling after being glutened. The last time (that I know of) he had three bites of mole sauce at a Mexican restaurant, then someone told him the waiter had been wrong and they used flour not corn starch. He...
  4. Yes. Open Original Shared Link and severe Open Original Shared Link as well as several other neurological and psychological issues (panic attacks, anxiety, night sweats, etc) Soy was the culprit. The night I finally put it all together I had some Glutino pretzels (which contain soy flour) about 8. I woke up at about 11 from a sound sleepto a full blown panic...
  5. Horizontal & vertical ridges; fragile nailes - Iron deficiency is indicated by vertical ridges; severe stress with B malabsorption or depletion is indicated by horizontal ridges. Koilonychia - feature of iron deficiency characterized by spoon shaped nails with vertical ridges/Thin nails with depression in the center; Iron deficiency: White spots...
  6. This problem for me turned out to be two things: dairy (casein) and pretty much all refined carbs. If I eat more than about 50 grams of refined carbs over a two day period I get that same thing. If I eat 40 or so in a single day I get that as well. By refined carbs I mean: sugar (sucrose, dextrose, maltose), white rice (brown rice is somewhat better), and...
  7. Heh....yeah, well my being 'normal' is open to debate.
  8. And Casein, and soy.... A year ago I was resigned that I wasn't going to see my 41st birthday. It was April 24th last year (two days after my 40th birthday) when I decided to go gluten free. It was a last resort. A week prior (April 18th, 2009) I told my wife, "I think I'm dying." What I didn't tell her at that time was that part of me - an increasing...
  9. Kaki - It is entirely possible it is a subtle dig at you. First question I have is still: Are you medically diagnosed by a physician as having celiac disease? If so, given the fact that they accomodate diabetic diets they would be required under law to provide a reasonable accomodation. However given the situation and some of the other comments (e.g. would...
  10. I have to partially disagree. With the elevated tTg levels (low though they may be) this indicates a gluten mediated auto-immune antibody. So you have both gliadin antibodies AND gliadan mediated tissue anti-bodies. While this does not necessarily mean you have or would be diagnosed with celiac disease via biopsy, it strongly indicates that you need to consider...
  11. Sorry MA, I hate to tell you that you are living the river "De Nile". I don't see any other possibility. Bob's Red Mill pancake/waffle mix is a good one. 1 cup mix, 1 cup milk (or milk substitute), 3 Tbps coconut oil - tho I suppose you could use Canola or some other vegetable oil if you like poisoning yourself - , 3 eggs, and I like to add a splash...
  12. CC is very easy. Look at it this way: A single slice of wheat bread contains ~4800 milligrams of gluten on average. May people with celiac disease or GI are sensitive to amounts so low as to be virtually undetectable ( less than 10 mg ). So....a single, invisible, unseen crumb can contain more than enough gluten to cause you problems. I can't even eat a potato...
  13. Dr. Young's research has shown some linkages that lead to the possibility that the anti-body/inflammatory reaction can actually show up in any variety of organs and/or tissue. Also in Europe they are finding the neurological manifestations may actually be more common than the 'classic' celiac disease presentation.
  14. I have to say that I think you probably should not file. Though technically you have a 'legitimate' - that is legal - claim (only if you have a medical diagnosis of Celiac disease) I would have to say that as a gesture of goodwill it would be better to not file. Also as a shop steward myself, I think I would agree that it would be in the best interest of...
  15. Hi MA! Yes, I can attest that it is indeed an issue. In fact I got quite sick while our daughter was visiting for a week with our 3 month old grand-daughter. The formula contained wheat and she spilled some on the counter. My wife and daughter prepared a pork roast that afternoon and I was sick for four days even though they cleaned up the counter pretty...
  16. 20 years I suffered from intermittent chest pain, starting when I was 19. I had all the classic symptoms of a heart attack, repeatedly. About 8 months before my diagnosis I had a complete stress test, radioactive dye injection with the gamma photographs, etc. All good. When I was 20 they put me on a Holter monitor for a weekend, the EKG came out perfectly...
  17. This also depends from what I've been able to find out on the quality of the pan and the coating material. Some of the non-Teflon ones are most definitely capable of cross-contamination because the micro pockets in the coating are large enough to retain material even after a thorough cleaning.
  18. My results were Anti-gliadin IGA 135, and tTg IgA was 92. Reference range for both is anything under 10 is normal.
  19. I would suggest that (especially since you have no other symptoms) that - with your physicians cooperation - undertake a gluten challenge and have at biopsy done. Research in your area (maybe the boards can help?) and find a GI who is familiar with doing endoscopy for Celiac disease. Have a biopsy would also help with your family thinking you are taking it...
  20. Wow. I'm sorry that you have to deal with that. But $55 ? Is that $55 a week? My wife and I get by on $300 a month for groceries. A lot of that is flours and meals (coconut flour, almond meal, flax meal are not cheap), and pork and fish, and veggies. We buy a half a beef (~250 lb cut and wrapped, local, grass fed) every year. Because I'm very sensitive to...
  21. My RLS improved, but didn't go completely away until I cut out all refined grains, starches, and sugars.
  22. This was forwarded to me by our local GiG facilitator. I have redacted the OP name and email address since I don't know if she intended 30,000 people to have it. For those who just want to cut to the chase, the website is: Open Original Shared Link
  23. Dr. Fine is going to be on the radio this morning from 7:05 AM to 7:30 AM (Pacific Time) this morning on KBKW in Grays Harbor, WA. Open Original Shared Link. I will be recording the interview and will make it available if I can get permission from Jodesha Broadcasting (the station owners). If not, I will at least post a summary of the interview sometime in...
  24. I went on a strict whole/raw foods diet (a GAPS/Paleo type of diet), eating only a limited set of uncooked veggies, fruit, quinoa, brown rice, unprocessed meats (poultry, pork, beef, fish) and water and hypoallergenic vitamin supplements (D3, B-Complex, Zinc, Magnesium Citrate, C and adrenal supplements). After being on this for 6 weeks or so many of my other...
