  1. Symptoms of celiac are crazy and unpredictable. Yours semi follow the actual average symptoms: bloating, stomach aches, gas, constipation, etc. You may want to ask for the full celiac panel at the doctors (there are 4 things in the panel) they will do a blood draw and test it for the antibodies. You may have a negative result and still be having gluten...
  2. I havent been badly glutened yet but when i was not gluten free and my stomach always felt like yours(Cramp, bloat, and tightness) I would lay down on the bed or my couch and put a heating pad on my stomach. If you dont have a heating pad a heated up towel either from the microwave or heated with hot water will work as well. It helps a bit(until you get...
  3. A lot of people think spelt is gluten free. It is not. Spelt is healthier than the normal refined wheat, but wheat is wheat and gluten is gluten. At first we were confused too because many things were "spelt" at the natural food stores and stuff so we assumed they were gluten-free(though never tried them) My moms friend is trying out gluten free diet but...
  4. Certainly a good reason to go gluten free! You may have celiac, but in addition a wheat allergy..? Is this shortness of breath and strong heartbeat from something like bread or pasta(wheat) or something like rye, oats or barley? I would think that if it is the wheat you may have both celiac AND a wheat allergy.
  5. Phase out? Do you mean there is still some? Whether its a piece of bread or a droplet of flour, you need to completely eliminate gluten. Period. If you are completely gluten free, yes, it is probably gluten-withdrawal. When my mom went gluten free she had headache, brain fogginess, and feeling tired for a week or so. It took me 4 months before my symptoms...
  6. I think most are gluten free. They were probably just saying gluten free incase you happen to end up with a brand that is not, be sure to check. Hellmanns, Best Foods, Mrs. Clarks, Nutrimax, Spectrum Natural, Follow your heart Vegenaise are all gluten free. Just be sure to check the label always. Hellmanns and Best foods are the most common ones I've seen...
  7. Dont leave! Im gluten and casein free as well Anyway-ya, a little harsh. So maybe it wasnt a healthy treat, but its a treat-who said a treat is supposed to be healthy. But maybe you just did have a reaction because it was some weird ingredients mixed with a repairing stomach. For the first, i guess 4 months i couldnt really eat baked gluten free goods...
  8. Well i think enemas might be harsh especially for the healing body Stick to bland foods-rice, vegetables, and other easy simple foods. Stick to whole foods. Avoid dairy. Drink lots of water and stay away from all soda or other drinks other than water and tea. Keep a food diary and try to see a connection between symptoms and the food you are eating...
  9. Yes i do! Bob's Red Mill Homemade Wonderful Bread is truly wonderful! Its soft, its big(even bigger than a loaf of wheat bread), its a lot like white bread, and its easy! It comes in a mix and can be made in a bread maker or the oven. We use the bread maker and after a few minutes we add quinoa flakes, gluten-free oats, sunflower seeds and flax to make it...
  10. I thought this was pretty cool. So im 13 and i'm gluten free(thru enterolab, cant say its really celiac, but..) I went to my friends christmas party, it was 4 girls. me, her, another friend, and one of her friends i didnt know. Her other friend was gluten free too! even dairy free like me:)! 11. I agree, half a cup of dairy free coconut milk ice cream( ) which happens to be amazingly delicious, has 6 grams of fiber!
  12. What kind of salad? You may want to switch the lettuce to mixed greens with lots of spinach(more fibrous) Also, they do sell gluten free oats if you don't have a reaction to them(i dont) I like to throw in ground flax seed to everything i can(soups, salads, cereal, oatmeal, smoothies, sandwiches, everything)Ground flax has lots of fiber. Quinoa and brown...
  13. When you bake on convection, you need the temp to be 25*F less than the recipe says. Our old convection used to automatically do it for us, but now we have to remember to modify the temp
  14. Sounds awesome! Thank you:)
  15. No butter? Do you mean they are dairy free! Oh how happy i would be:) is there any information any where on this i would like a dairy free gluten free cookie:P
  16. Sounds like it very well could be celiac, especially with those symptoms. I had awful headaches, cramps, HORRIBLE constipation(my doctor had me on SIX laxatives!) and had lost a lot of weight unintentionally. I was tested through my doctor twice, negative. I was tested once through a gi doctor, negative. Then we were really frustrated. So we tested...
  17. I dont know if this is accurate, but according to this site, msg should be avoided. Like I said, i dont know though: Open Original Shared Link But then here it says its safe: https://www.celiac.com/articles/181/1/Safe-Gluten-Free-Food-List-Safe-Ingredients/Page1.html and this says its not safe: Open Original Shared Link Casein-free.com/articles/msg...
  18. Maybe because the doctors wont diagnose it for us! And you even have the statistics wrong, its 1 in 133. Plus-many people aren't celiac but rather gluten intolerant as well.
  19. I just wanted to say that I had pretty bad symptoms before I went gluten free. I was tested through the blood test, which im assuming you had too, three different times, all coming back negative. I then tested through enterolab, an online ordered stool and gene testing kit, and my results came back positive. Enterolab cant say you have celiac or not, but...
  20. Here are things that I think taste like the real thing: ~Bob's Red Mill Homemade Wonderful Bread(comes in a mix, cook in oven or bread machine-easy, just mix egg, milk[can be real, rice, soy, etc] and water I believe) We add sunflower seeds, gluten free oats, quinoa flakes and flax to it, so it is pretty grainy and a lot like whole grain. I loooove looove loove...

Pita stuffed with hummus Real bagel with cream cheese or melted cheese Peanut butter and honey on whole wheat bread Wheaties..the breakfast of champions Pizza Toasted english muffin with fried egg, slice of cheese, and butter(real healthy, right?? ) Theres...
  22. Im a long time vegetarian, no dairy either and also celiac. I do eat eggs occasionaley(like VERY rarely, once every month or two?) My protein: Hummus, beans, lentils, quinoa(if you havent tried this--DO!) almond butter(more healthy than peanut butter)lots of spinach salad(did you know every food on earth contains protein, other than oil?) Sunshine Burger...
  23. When I first read this I thought 2 things: 1) You combined a starch with a protein which isnt good for digestion. 2) You combined fruit (applesauce) with rice(starch) Food combining is often overlooked, ignored, or not really known. Here's a great article on the basics of food combining: Open Original Shared Link I know i usually feel odd or sorta sick...

I occasionaley eat her dairy free gluten free pizza, i eat lots of her gluten free soups and we keep frozen meals in the freezer incase i go somewhere to a friends over night or something. last week i spent the night at my friends, and i tried the enchilada(the dairy free gluten free) and i had no reaction either. About 5 months ago i went and ate there and they were very nice and helpful, the waiter was so excited i was the first gluten free person hes ever served(wwhich made me a little nervous) but he brought out a nice salad minus the croutons and candied walnuts, oil and balsamic vinegar, and was very careful. He brought out the menu and was very eager to help...
