  4. You can peel and cut them into thin strips. Mix with olive oil and salt. Put them on a baking sheet and cook for 40 minutes at like 350 or until they look like and taste like fries.   7. At our local health food store we buy "Raw" honey. It is un processed and not messed with basically, its supposed to be the healthiest form. Depending on the jar size, the price is usually about $6-10 dollars, for a good sized jar. They also sell the raw honey with the comb still in it, we havent used it but it looks cool:) Good luck!

  9. how long have you been gluten free? From what I've been told by other users on here, many celiacs have trouble with high fat foods. Canola oil is obiously high in fat, even if it is good fat. When I eat any nut butter I feel awful!! Nut butters are very high fat. Perhaps the fat issue will go away with time, depending on how long you've been gluten free....

  12. Have you cut out dairy, at least for a while as you heal. Many people have to remove all dairy from there diet when they go gluten free because it makes the healing of the villi much easier.   13. Most gluten free flours and replacements are much lower in fiber than whole wheat things or even wheat things you were probably using previously. Theres not much way around this, i fing taking one teaspoon of psyllium husk before bed to be helpful.   14. I would add some xanthan gum. Or use prepared ready to use flour with added xanthan gum as it is VERY pricey. I made cookies with gluten-free flour and no xanthan gum and it ended up as chocolate chip crumble.

  17. I ate the peanut butter with a garden grown carrot because i love peanut butter and carrots. The ingredients are peanuts and salt, i dont think im reacting to salt, and ive never had a problem with carrots.   19. We were at the health food store yesterday and I saw a thing called "gluten defense" it's an enzyme that just aids in the digestion of gluten.   23. I don't know it this will be much help but I know that if I eat a full serving of peanut butter l(2 tbsp) I get a bad headache and stomach ache. If I limit myself to less than 1 tbsp I'm just fine.. Just not as satisfied!

  25. Sorry to keep replying to my own post but i keep remembering questions... Do most GI doctors know about celiacs. The GI im going to has a small profile on the offices website and he specializes in esophagus disorders, chronic abdominal pain. Nothing about celiacs..
