This might help? My GI's plan for people going on a gluten free diet was to introduce the gluten-free foods with the gluten foods for a while, to get used to, and then slowly phase out the gluten. OH yeah, that'll do it to you. If it's inhaled, that means it's hit your throat, so there is going to be some of the gluten that makes it down to your stomach, almost without fail. I am very sensitive, and if I don't wear a paper mask near gluten (and a few other foods I'm sensitive to), then I bite the dust.

From what I've seen of Dr. Osborne, I don't totally trust his science. I agree with one of the previous commenters: the gluten in each grain is not the same, so it shouldn't be treated the same. You could also be having a reaction to another food, either an allergen or something you are intolerant or sensitive to. I ran into that within a few weeks of going gluten free, and had all three. Oh, my understanding is that wood and plastic can absorb gluten, and it will slowly release into any food they are used on. Oh...did you start taking the Nystatin??? If so, you should really stop - it has gluten in it!!
