    ARCHIVED Pizza

That is a big deal! Congrats on finding a healthy safe place to eat! With all your food restrictions, that is a big accomplishment! I know what it's like to have to deal with multiple food restrictions and it's always such a great feeling when you find a place that serves safe delicious food.
  2. Scrambled eggs, sliced avocado and tomato, and zucchini potato patties with ketchup. I love breakfast and can eat any type of food in the morning. Stir fry, salad, pizza or whatever depending on what mood I'm in.
  3. Lentil soup (with kale and rainbow quinoa in it for a little variation) and hopefully either homemade bread or pull apart dinner rolls, whichever I get around to making this afternoon.
  4. Nonstick coating easily gets scratched and any scratches can harbor gluten.
  5. I'm curious, when people say grain free, do they mean literally grain free, as in eliminating only grains or do they also eliminate seeds like quinoa, amaranth, and buckwheat?
  6. By zoodles, do you mean zucchini noodles? I do have a spiralizer that makes zucchini pasta.
  7. Thanks Irish! The zucchini that I got given to me were enormous and the pancake recipe came nowhere near using them up! I will check those out. I used to work in South Florida--I did a 9 month missionary project down in the Florida Keys. While I was there I stayed on Grassy Key, about 6 miles from the town of Marathon.
  8. I'm making zucchini potato pancakes for breakfast. Yummy and especially great since we just got gifted more zucchini! http://theprudenthomemaker.com/index.php/zucchini-potato-pancakes I use Pamela's Artisan flour blend in place of the flour. Everything else in the recipe is inherently gluten free.
  9. Welcome to the forum! Congrats on finding the source of your health problems, now you can focus on getting better! As a severe anxiety sufferer myself, I'm pleased to report that my anxiety has improved greatly on a strict gluten free diet.
  10. I have been known to take my personal dedicated gluten free waffle iron with me on road trips. I have this one: Open Original Shared Link It's expensive, but well worth it because it's heavy duty, lightning fast and makes two at a time. Usually for road trips where we're going to be at a hotel, I pack some KIND granola and non-dairy milk and have...
  11. So are the scrambled eggs at a continental breakfast often safe? I've always avoided them since I wasn't sure.
  12. I found something new for my kitchen kit! The store was having a clearance sale on a lot of cookware and I picked up a little mini enamel coated cast iron skillet for $4. It is very cute and small and fits easily into my kitchen kit. It's the perfect size for heating up a small can of chili or for cooking two eggs. We had a church campout this weekend...
  13. Wait, so it's a portable freezer?
  14. I know where you are coming from, as I try to take care not to overdo rice also. However, cut yourself some slack, you've only been G.F. for 4 months and you're vegetarian on top of it. I'm vegetarian too and I know the extra challenges that come with combining the two. Hang in there!
  15. If it turns out to be soy, Earth Balance makes a soy free spread. Olivio also offers a soy free coconut spread. Open Original Shared Link

  17. Looks like they have about the same amount of grams of sugar and they just replaced the hydrogenated oil with palm oil. My favorite peanut butter for home is Krema which is made of only peanuts, but I wanted to find something for my car kit.
  18. Lundberg Farms processes all their products in a dedicated gluten free facility. I use Earth Balance buttery spreads on a regular basis. All of their buttery spreads are gluten free. A quick look at the Earth Balance website products shows that their only products containing gluten are their vegan "cheesy" crackers and macaroni. I see no reason why these...
  19. Anybody have one that they care to share?
  20. Gordon Food Service (GFS) has both food and non-food items.
  21. Hi! You are in a great place, I've found this forum to be a real source of support and encouragement. I would encourage you to read the Newbie 101 and make sure that you have a handle on the basics like cross contamination and what ingredients are safe or unsafe. I went gluten free 4 1/2 years ago and just this year I've tightened up my diet in some...
  22. Honestly, I mostly get my recipes off places like Google and Pinterest. If I want something in particular, I hunt for it until I find something that sounds good. For example, this weekend I wanted to make a vegetarian waldorf salad with my Beyond Meat chicken free strips, so I did a Google search and found a Pinterest recipe to check out. For my house...
  23. They weren't open tonight when we went to town, (they close at 8 PM) but I will definitely check sometime when I'm back in town.
  24. Well yay! When I went to the store tonight, I went and looked over in the peanut butter section to see if any options had appeared and Jif has natural peanut butter cups! I did not know that they had that option. So I picked up a pack of them for the road. Open Original Shared Link
  25. Yes, you do need to eat gluten before being tested, but keep in mind that if you've been gluten free for awhile, your symptoms when reintroducing it may be worse. You should not go overboard and eat gluten at breakfast, lunch, and dinner. One sandwich a day for the 2-3 month period is enough. I was unable to complete my gluten challenge due to an extremely...
