  1. AGH! I contacted the Honey Baked Ham company too, and they said it was gluten free - but they did state it was a recent change to gluten free. I hope I'll be okay. =(
  2. That's what terrifies me about travelling - and I LOVE to travel. Haven't done it gluten-free yet. I'm sure it will be interesting...but I'd definitely carry some snacks along! Have a Merry Christmas anyway.
  3. Just my own personal opinion: you can do whatever you want for yourself. You are an adult, and after all, if you can tell by how you feel, go for it. But for your child, I think it would be wise to have him see a doctor, for several reasons. 1. If he has celiac, he may have other food issues or digestion problems, as it seems a lot of celiac's do.   4. Where do you get corn tortillas? I can find them in chip form, but not the soft form others have mentioned.
  5. JNB: thanks for the suggestion. I always refrigerate for a short time, but I like the idea of having the mix ready to go, and then just bake it a day later.
  6. I preportion everything, as I like to avoid processed foods. An apple, banana, bag of nuts, preportioned hummus and celery, etc. As soon as I get home from the grocery, I throw together my portions so I know: this is what I can have. And so far, it's been pretty easy.
  7. The solution: take a really big handbag, or travel with someone who has one. I load up on junkfood at the dollar store for my kids, pack my handbag, and then we head into the movies. No one will ever say anything, and I'm not down an extra $40 on junkfood!
  8. I used Betty's Crocker's Chocolate Cake Mix and one 15 ounce can of pure pumpkin. Then I frosted it with Pillsbury's chocolate cream cheese frosting. It's not the same as gluten cake, so to speak, as it is very dense, but chilled, with a coating of frosting, it's pretty darn tasty. And it's so easy to make. It comes out thick and weird looking when you dump...
  9. I asked at WalMart about gluten free, and was told that was only at "Community Marketplace" WalMarts, however, mine is a big ol' hunkin' WalMart Superstore. So I went over the grocery section to buy my usual family staples, and voila - there's the gluten free section. Oy. I can't say it's huge, but there are definitely some things that are less expensive...

  14. I'm with the rest - it's good to give it a shot. I am not able to afford the tests, nor am I willing to go back to eating gluten to take the tests. I did a diet trial, and thus far, it's been phenomenal. I'm gluten, diary, and nut free, and I assure you - it's easy when you look at the comparison: feeling like crap. Give it an honest go and see if you improve...
  15. One of my favorite treats when not gluten free was pumpkin pie and cake mix, throw it in a cake pan, and voila - a yummy, brownie like treat. So I tried it with Betty Crocker's gluten-free cake mix, devil's food cake. Interesting results. It tastes more like a store bought brownie - very firm and fudgy, with a spongy finish, but also very dense. Not as moist...

  17. Ugh - that is frustrating. I will say this though. You may want to consider eating less processed foods. I tried to do processed foods in the beginning. Oh my gosh, the misery just continued. Now I eat all whole foods and things I've made myself, and eat out very little, and I'm finally starting to feel better. Hang in there...this is very frustrating, but...

  20. I'm way too old to be in college...however, that is exactly what I'm doing. I take part in a low-residency grad program with Wilkes University. We stay on campus for one week,twice a year, and needless to say, my next residency had me beside myself with fear over what I would eat. They charge us for the meal plan and we eat fatty, gluten-laden foods all week...
  21. I gotta throw in here: how would it be any different if you had diabetes, or cancer? Trust me - been through the cancer scare...much, much worse than saying I have issues with gluten. At the end of the day, what matters is that you are healthier. If those around you don't appreciate your issues, well, who cares? You can love people who don't understand you...
  22. I feel you - I've been struggling with hunger too, and I watch my weight like a hawk, so the two are not going together very well! So far, what I've been doing that seems to help: I have hummus with either baked or fried corn chips OR celery. Add some black beans to your favorite salsa, and voila - a higher protein snack.   24. I'm working on replacing things, but unfortunately do not have a budget that provides an immediate switch. So yes, I'm doing the best I can, and I'm off dairy. Soy has not seemed to be related, and I don't eat a ton of soy, anyway. I've been trying to stick with whole foods as much as possible. Hm, I really hope it's not something from CC. I don't think...
  25. I've been gluten free since...well, it's been almost a month. I feel great some days...and other days, I can't figure out why I've got GI symptoms again (mainly gas). It seems that I can usually trace it back to a specific problem food, but other days...I can't figure out anything I've eaten that would cause it. I have made all my meals, avoid packaged food...
