Don't be hard on yourself - we've all done it. I sit here still miserable from two weeks ago, and some ill-chosen beans (who knew?!) the other night. If you choose to start baking with a mix of flours, my favorite so far for cookies, brownies, and breads is Tom Sawyer blend, cut 1:1 with sorghum flour (Bob's red mill). I add a tiny pinch of gum (TS blend already has it in, but sorghum does not) and it tastes like regular flour. I've had a very good experience with it, and highly recommend it. Good luck... -
I agree with happygirl. Wilkes University in Wilkes-Barre, PA is very conscious of gluten because of several student who have it (including me). I had to attend a required residency for my grad degree there a few weeks ago. They tried really, really hard. One meal got me, but the rest were fine, and individually made just for me. I can't recommend them highly...

There is always risk of law suit in any situation, especially when someone has a health issue. I don't recommend it, though. Quite honestly, look how hard it is for those of us with this issue to moderate what we eat in our own homes. I gotta concur. If you aren't getting enough nutrients, or enough calories, that is probably why you are sick. I get VERY sick when I don't eat enough, and doctors speculate I'm hypoglycemic. I really like Solaray vitamins, and I know they are gluten free. So that is probably a pretty good suggestion. I take shelf-stable acidophilus at my local health store who also sells online. I respectfully disagree with Wolicki. If a child needs five minutes to prepare food, I think that is reasonable. No one wants a cold meal every day. Just to throw this up for those who want some doughnuts...I just tried the Kinnikinnick Vanilla iced doughnuts. They are super yummy, and remind me what doughnuts SHOULD taste like, instead of the puffy grocery store version. Yummy!
