  1. This is my experience too. I simply can't figure out how to transfer the messy gluten free crust onto a preheated pizza stone. Back when I was eating gluten I used pizza stones exclusively for my homemade pizzas, but I can't make it work. Great idea about lining the pan with aluminum foil!   4. I use Tom Sawyer for baking now. It's more expensive but worth it to me. Before I used that my favorite blend was sorghum, tapioca, and potato starch. I actually liked that one quite a bit.
  5. I agree. I dislike all of the bean flours. Some people (me included) really notice the beany flavor, while others don't seem to taste it all.
  6. I use canola oil and extra virgin olive oil depending on the recipe. I use canola oil in baking recipes that call for oil and in cooking recipes where I don't want the olive oil taste. I use olive oil for the majority of my cooking. I never deep fry so I have no idea what a good oil for that would be.
  7. I was going to suggest the book you mentioned. I've had pretty good luck with the recipes I've tried from there. More often than not when I make cookies, I use my old gluteny favorite recipes and just use Tom Sawyer flour in place of the AP flour.   11. I love making homemade ice cream. Buy "The Perfect Scoop" by David Lebovitz. Not everything in there is gluten free since it has recipes for waffle cones and brownie mix-ins, but the vast majority of the recipes are.   16. Chipotle! The entire menu except for the flour tortillas is gluten free. I tell them I have a wheat allergy when I order and they wash their hsnds, change gloves and serve me from fresh bins of food rather than the ones that havfe been out and may be contaminated. I've been to several and they are all accomodating.
  17. Do you have access to Tom Sawyer or Better Batter flours? If so, you can just substitute those 1:1 in your old recipes. I use Tom Sawyer all the time and love it. For chocolate cake I usually use the Perfectly Chocolate Cake recipe on the back of the Hershey's can of cocoa and use Tom Sawyer in place of all purpose flour.
  18. Alcohol is fine as long as it's distilled and doesn't have any additional flavorings (if it does you need to check the added flavorings). Basically that means that all liquors are good since they are distilled, it's the brewed ones that are usually off limits unless specifically gluten free.
  19. I've had wonderful luck with Tom Sawyer Flour. I substitute it 1:1 in all of my old gluten containing recipes. No one has ever been able to tell the difference. It has made such a huge difference for me. I used to bake all the time and it gave me back my entire recipe book!   20. Ok, so I found out for sure that it is a naturopathic doctor. He claims he can cure anyone of any allergy or intolerance, be it food related or environmental. I still need to get his name though. What a crock!
  21. I know a woman whose husband has celiac disease. He was diagnosed by the same doctor who diagnosed me, after a positive blood test and biopsy. They have been skeptical of the diagnosis because he didn't feel better after going gluten free, but she mentioned he still drinks beer on occassion (not gluten-free beer) so I know they aren't great about following...

  23. I go to Taco Bell. I just order the tostada. It is safe. Unfortunately there aren't many choices there, but tostadas were one of my favorites prior to getting diagnosed so it's not too bad for me. I always ask the preparer to wash their hands and change their gloves first and they've always done so with no complaints. I haven't gotten sick eating there yet...
  24. I used to love the Chopped BBQ Chicken salad and haven't had it since my diagnosis. They list all of their ingredients on their website and also list the allergans at the end.
