ARCHIVED Valentines Day Candies Boy Did I Blow It
cdford replied to poodlethree's topic in Coping with Celiac Disease
Mel, I hope you find the same thing that many of us have found...over time your immune system gets its act together and you don't react to as many things other than the gluten. After two years, we are down to just a couple of things outside gluten that cause any significant problem. Just don't try them too quickly. Allow your body time to really heal before... -
ARCHIVED Please Recommend A Bread Machine
cdford replied to mela14's topic in Gluten-Free Recipes & Cooking Tips
I tend to prefer everything from scratch, so I have only tried a few packages. Most of those I did when I was first diagnosed and had no idea what would work. I understand the dairy problem. All three of my kids had it for the first several years of life. We still joke about my youngest eating his cereal with coffee on it instead of milk. He still likes it... -
ARCHIVED Complete List Of Symptoms?
cdford replied to anerissara's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I have not found one yet. You can get a good picture of many symptoms by checking out multiple sites and the many messages on some of the boards. You might want to keep a word processing document open as you surf and jot down any new ones you see. There are several constellations I have noticed falling into groupings by the systems they tend to impact... -
ARCHIVED What To Feed 5 Year Old?

You could always mix up your own ranch dressing. You could even adjust it to suit his personal tastes this way. Mix together 1 cup of mayonnaise and 1/2 cup buttermilk. Add a little more buttermilk if it is too thick until you get the right consistency. Season with salt, pepper, parsley, garlic and onion. If his taste buds are sensitive, you may want to... -
There are several things at McD's that we can safely have if you have no other allergies. When in doubt and especially late at night, ask to be sure they are using a separate fryer. It is corporate policy as I understand it, but some places will fudge when it gets late and they want to start cleaning. If my system is a little out of whack or we are just plain...

ARCHIVED Please Recommend A Bread Machine
cdford replied to mela14's topic in Gluten-Free Recipes & Cooking Tips
You need to go up a notch from the base models, but you do not have to spend the money for a high end machine. I have a Regal with an upright pan and a Toastmaster TBR15 with a horizontal pan. The Regal is ancient, but I bought the Toastmaster last month from QVC for $45.00 plus s/h. Both provide a great loaf. I use a recipe I found on one of the other bread... -
ARCHIVED Quaker Grits
cdford replied to hthorvald's topic in Gluten-Free Foods, Products, Shopping & Medications
Check out some of the off brands. Kroger here carries a brand called Dixie Lily. when I contacted them, they stated that they were handled in a facility that only handled corn. I have used them for a couple of years and have not had a reaction of any kind. The last time I used the Quaker grits, I did. I place my grits into a plastic container so I do... -
ARCHIVED Sprouted Grains
cdford replied to sweetp's topic in Gluten-Free Foods, Products, Shopping & Medications
Brown rice bread is fine if you bake it yourself in a bread machine and eat it within the first two or three days. That store-bought stuff is awful. There is a really good recipe floating around one of the other posts. Laurie put it in, I think. It was so good that I mixed up a week's worth of dry ingredients and make a loaf in the machine every other day... -
ARCHIVED Valentines Day Candies Boy Did I Blow It
cdford replied to poodlethree's topic in Coping with Celiac Disease
Soy seems to only be a problem for those with a specific allergy or neurological problems associated with the celiac. Those with neuropathy should avoid the soy like the plague since the doc says many of the recent studies are pointing to soy as the culprit. For me, soy was harder to avoid than the gluten. I had to rethink my whole diet AGAIN. Suddenly... -
ARCHIVED Shouldn't Celiac3270 Be Back On Line By Now?
cdford replied to Canadian Karen's topic in Coping with Celiac Disease
Been praying for you. Glad you are better and home again. Those tubes are awful. What was even worse for me was not being able to communicate well. Maybe that is the last time you will ever have to experience it. -
ARCHIVED Dealing With Fatigue And Lack Of Stamina
cdford replied to jymles's topic in Coping with Celiac Disease
Sorry, I did not answer all the questions. Yes, I take the shots at home. My kids know how to pull them and give them when I am too spasmed to hold the needle. There are also several friends and church members who have learned to recognize the signs and get the shot ready. There have been times when it has been a life saver. The mag sulfate is a nasty... -
ARCHIVED Dealing With Fatigue And Lack Of Stamina
cdford replied to jymles's topic in Coping with Celiac Disease
Yes, I have a script for the shots. I use a regular (not the short) insulin needle. I pick up the mag sulfate and the xylocaine at the pharmacy but the doctor has me get the other three from his office since they are harder to find. He seems to think that the long term problems of vitamin deficencies and the damage to the nerves and muscles are a much bigger... -
I try hard not to "armchair diagnose", but when I come across someone who has what is considered the usual symptom spectrum, I'll often ask them if they have discussed the possibility of celiac with their doctor. That will usually generate enough discussion for me to encourage them to talk with their physician about it. By doing that, I have not usurped the...

ARCHIVED Problems With Whole Grain Brown Rice Cereal
cdford replied to mela14's topic in Coping with Celiac Disease
You may need to go back to the "keep it simple" diet for a little while and let your system settle down. Don't stay on the white rice for too long, though. It is what I like to call a "negative nutrition" food. There is very little nutrition to it, what little nutrition is has is added back instead of natural, and it can be bad for you over time. Ease... -
ARCHIVED Fatigue
cdford replied to ToriT's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I describe the fatigue this way: Think of how you would feel if you had just worked on a project for three days straight with no sleep then you sat down in a recliner to rest for a few minutes. Just as you drifted off to sleep, a buzzer went off to tell you of some new emergency that you just have to handle right now. That feeling of trying to drag yourself... -
ARCHIVED Fatigue
cdford replied to ToriT's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Yes, that is exactly what my hands do. When it gets really bad, I am curled up in almost a fetal position as well. Both hands, arms, and feet curl tightly. Massage helps if it is done slowly and deeply. The mag sulfate shots work wonders with it. The gabitril is good also. When this occurs in its worst state, my face drags and I look as though I have had... -
The Ener-g version of the communion wafer has soy it it. Does anyone know of another manufacturer who uses another flour? Anybody have a recipe for matzoh that we can use for Passover and family Lord's Suppers? We are at least blest that we don't run into problems at church...our pastor's wife is celiac and almost died before they figured it out. Needless...

ARCHIVED Malt-o-meal Cereal No Longer Going To Be Gf !
cdford replied to angel-jd1's topic in Gluten-Free Foods, Products, Shopping & Medications
Oh Great. This was the one cereal we could count on around here. I just talked with them last week and they did not say anything about it. I was verifying for someone else. These people need a good talking to or maybe a trip to the woodshed for deliberately adding a known allergen. -
After going gluten-free, I had one or two periods, then never had another one. I spot periodically (usually once every two or three months), but no period. Since I am 46, I hope it stays this way! Most of the women in my family have to have hysterectomies by this age, so I consider myself blessed.

If any of you know of a source for good pamphlets or posters, please post them here. I'd love to share them with family and friends as well as my primary care doc.

Some veggies are worse than others, but yes, many of us have similar problems. I cannot eat corn or okra without being near a bathroom. No true allergies to these items, they just cause my system to react. There are some other things as well. I also seem to cycle through periods of time when I can eat only a few items without a reaction. Try giving your...

Sounds like our version of DH anyway. If you don't want to travel a long distance to verify the DH, have you considered working with your doc to do a trial period of going gluten-free? It is the only thing that will fix the problem if it really is DH. Only problem is that it seems to take much longer for going gluten-free to make a big difference if you are...

ARCHIVED Dealing With Fatigue And Lack Of Stamina
cdford replied to jymles's topic in Coping with Celiac Disease
Surely you don't think I actually LIKE those shots! I used to panic at the sight of a needle, but if it makes me have this much energy, I'll do it. Especially with the muscle spasms, the doc says you can't get enough magnesium fast enough with any method other than the shots. It's a bummer, but at least it is a regular insulin needle and not one of those... -
ARCHIVED Gluten Free Recipes For Kids Need Your Help
cdford replied to emilypriny's topic in Parents, Friends and Loved Ones of Celiacs
Great idea. Hope all goes well for you. Unfortunately, most of my recipes are modified from other cookbooks or off this site, so I'd be afraid to share them for fear of plagiarizing. This is an exception: My crew loves carrots and ranch dressing. Since we have so many allergies, it is hard to find an appropriate store-bought version. We just make our own...
