Reactions to gluten can be delayed, even once you are fully healed. Until your intestines heal, you may have reactions to any food, even though it is gluten-free.

  10. Good idea. That said, occasionally the system makes mistakes and people are incarcerated pending the trial that ends with "Not Guilty." And, yes, I also know that "not guilty" does not necessarily mean "innocent." Just as "not gluten-free" does not necessarily mean "contains gluten."
  11. In a word, "yes." Any level of atrophy in the villi is highly indicative of celiac disease. While other causes are possible, they are rare. If symptoms resolve on the gluten-free diet, then you have your answer.

  13. I'm not sure what your point is. Everything we do that interacts with another person is by choice. Whether it is your parent, or your partner's parent, it is still a choice to allow interaction with your child. It may be a difficult choice, but you are in control, not the parent or in-law.
  14. I respectfully disagree. MFS is usually corn or tapioca. If those ingredients are on the package that the chicken arrives at the restaurant in, then they are subject to FALCPA and wheat, if present, must be explicitly declared. For what it is worth, in my eleven gluten-free years I have never seen a verified case of MFS being wheat.

  17. Good luck with that. Botanically the tomato is a fruit. Although ketchup has vinegar as an ingredient, it is otherwise similar to a jam made from any other fruit. Sugar is a key ingredient. Sugar substitutes can be used, but some sort of sweetener is needed to offset the vinegar.
  18. No, I haven't. To make your point, whatever it is, you will need to post some evidence to support your claims. Otherwise, all I see is the angry ranting of a teenager who is long on emotion and short on facts.

  22. I was just trying to make Dr Fassano's statements easier to understand by paraphrasing them in plain language. I did not say that I agreed, or disagreed, with his conclusions. I DID say that his acknowledgment that non-celiac gluten intolerance actually might exist is a giant step forward for medical science.
