ARCHIVED Milk/casein Anyone Else
StephanieL replied to GFreeMO's topic in Food Intolerance & Leaky Gut
Awesome! Glad it worked out for ya! My DS (who has Celiac) is allergic to dairy, egg, peanut, tree nuts, soy and banana. We know how to work around things -
ARCHIVED Milk/casein Anyone Else
StephanieL replied to GFreeMO's topic in Food Intolerance & Leaky Gut
If you have a really good blender, no you don't have to strain it. I have a Vita-Mix which is like a turbo jet engine I don't think you need to strain it though or what little body it does have will be lost. If you find it's chunky, then yes I would try it strained. You may also want to try looking at coconut mild creamer (I LOVED it when I had to... -
ARCHIVED Milk/casein Anyone Else
StephanieL replied to GFreeMO's topic in Food Intolerance & Leaky Gut
Do you have a good blender? Rice milk is easy to make! 2 cups water, 1/2 cup cooked rice (packed well but not like a brick) and some add a little sugar, honey or even vanilla to it. Blend it up for a few minutes. Keeps for 3-5 days. We are dairy free d/t allergies but many people with Celiac have dairy issues as well. -
ARCHIVED Reliable Food Intolerance Testing
StephanieL replied to Celiacattack's topic in Food Intolerance & Leaky Gut
A + skin prick test is about 50% accurate. A - skin prick test is about 92+% accurate. As stated, that is for "true" IgE allergies. For all the others, there isn't anything "reliable" out there. Hang in there! -
It may be an intolerance. You tested - and your leg pain isn't a classic allergy sign either. Also, while you CAN be worse with yolk vs. white, it is virtually impossible to totally separate the two. ELISA testing isn't for allergies but intolerances and inflammatory responses. If they bother you, stay away from them!

They all have egg too.

ARCHIVED Toddler With Celiac?
StephanieL replied to Dave-KC's topic in Parents, Friends and Loved Ones of Celiacs
I would try and get a copy of the report. My DS was asymptomatic. He went to an endo because we found out he had a ZERO Vit. D level so the endo did the Celiac test. Well, here we are a lot of blood tests and biopsy later. I am not saying this to scare you or make you doubt your Dr. I am just saying that kids may often be asymptomatic but still... -
ARCHIVED Start Gluten Free Diet?
StephanieL replied to avas-mommy's topic in Parents, Friends and Loved Ones of Celiacs
If you suspect Celiac, you need to get her tested BEFORE you change her diet IF you want an official diagnosis! You CAN NOT get good results after you take her off of gluten. With the family history, I would test. Good luck! -
ARCHIVED I'm Miffed - Need Advice
StephanieL replied to Newbee's topic in Coping with Celiac Disease
You sound really bitter. Also, the karma comment was really mean. While Celiac isn't the end of the world, I would never wish it on someone even as a joke. This is all new to you. You will learn to navigate as time goes on. Maybe you are too new to try eating out or are to uncomfortable to try taking food but that is the reality. If you think getting... -
We do rice cakes too but for school, they are so messy. We can't do corn either so tortillas are out. I have never found a bread recipe that works with our limitations either. Bummer...

ARCHIVED I'm Miffed - Need Advice
StephanieL replied to Newbee's topic in Coping with Celiac Disease
It does stink that they asked but then fell short. I would think offering 3 choices was a good gesture and if those don't work, them being sure they are okay with you bring food is and okay option. They tried (though maybe not as hard as you would like) but it is more than most people would have done. I think it is just times like these (special events... -
Yes and it costs a weeks worth of groceries The only mix I have found that *may* work is $7/box. I would go through that in 2 days here. Can't afford that.

ARCHIVED Halloween Help
StephanieL replied to divamomma's topic in Parents, Friends and Loved Ones of Celiacs
We have AMAZING neighbors. Those who know my kids have issues have in the past gotten them books, little toys or money last year (this is our second year here so that was our first T-or-T here). Those know don't know us and gave us regular candy (kids can't do any commercial candy, we are dairy, egg, soy, peanut, tree nut, banana, coconut, palm allergic... -
Those both have dairy or egg. We can't do either. We also can't do palm oil/coconut so that knocks out Energ-G anyway (though I have hear the light tapioca is actually okay).
-
So what are other alternatives?
-
They have issues? Oh no It's the only bread I have ever found for DS. HELP! Maybe this is why there are issues with his levels? :( OP, sorry you aren't feeling well.

ARCHIVED Still Confused Hope Someone Can Answer This
StephanieL replied to Jinkomedy's topic in Coping with Celiac Disease
I am sorry but this isn't exactly true. You can die from an anaphylactic reaction to wheat which is MUCH more serious short term than the long term issues one faces with Celiac. While they are both very serious, to say on is more serious than the other is really a non-issue. Both of these people would need to avoid wheat or face real problems. One is... -
ARCHIVED Dairy And Soy Free
StephanieL replied to krystynycole's topic in Parents, Friends and Loved Ones of Celiacs
How old is the baby? Banana, avocado, mushy carrots, mushy apples. Have the parents asked for the daycare to do this? Babies don't "need" anything but breastmilk or formula till they are about 1 and even then it is most of the nutrition they get. As a parent of kids with food allergies, I would NEVER have anyone but DH or I feed my kids. There... -

Has he ever had a 504? That would cove most of your issues for state schools. I hate to think of him not going where he wants based only on the food available. If he's willing to learn to cook (which he'll need to do anyway at some point), I would go for the school he wants and get him cooking so he isn't limited to the 6 foods the school offers. -

What part of Ohio? I am in the Greater CLeveland area and can give you a few places to shop at if you are going to be anywhere near here. -
ARCHIVED Making Safe Gluten Free List For Preschool
StephanieL replied to andrea2's topic in Parents, Friends and Loved Ones of Celiacs
Are you looking for supplies? Food for snacks? What exactly? I don't agree that the workers can't follow a list. While we have a very strict "No food unless from home!" rule, they still need to be educated on how to deal with this. If worse comes to worse, you can kindly "threaten" a 504. Usually, they hear that and want to avoid it so will do... -
ARCHIVED How To Deal With In-Laws Who Make The Process Of Eating Into An Event?
StephanieL replied to Maltiriel's topic in Coping with Celiac Disease
I guess I come from a different place. Does it stink, YES. But I do not expect people to know, get or understand how we have to live anymore. In an ideal world, that would be fine but it isn't. We take the kids food with us everywhere. I won't use other peoples pots and pans or serving stuff. It is just our life and I fully intent to keep the people... -
ARCHIVED gluten-free Flax Seed? Flax Meal?
StephanieL replied to StephanieL's topic in Gluten-Free Recipes & Cooking Tips
Thanks! I did get confirmation from King Arthur that the flax from them is nut free as well! I like having options though! Thanks! -
ARCHIVED Gluten Free Granola Bars Anyone?and Fiber Help
StephanieL replied to Mizzo's topic in Parents, Friends and Loved Ones of Celiacs
We are nut free so I can't help on the granola bar front. To add fiber tho my kids diet, I bake/cook flax meal into things. They eat pancakes for breakfast daily so when I make them I add about 2 TBSP. per box of mix or so. I have also added it to cakes. King Arthur (I just found out) has a gluten-free flax meal now Yeah! I seriously just ordered... -
ARCHIVED gluten-free Flax Seed? Flax Meal?

Bob's is notorious for nut x-con. We can't do peanuts or tree nuts.
