  1. They're calling me tomorrow to conduct the survey. They ask a bunch of questions before they set up for a survey call... when you were diagnosed, by what sort of doctor, your symptoms when glutened, your diligence in keeping gluten-free.   2. when I was diagnosed, I told my 3 daughters that they should be tested. I think one had blood work and it was inconclusive. She ended up w/ symptoms a few years later and was formally diagnosed.   4. I just found Namaste crust in my health food store (really the only place I can find gluten-free stuff ... they've just enlarged their store AND their gluten-free offerings!). I spread it out on parchment paper on top of the pizza stone we have and it yielded a really delicious thin, crispy crust! I don't eat pizza often, so it's my new fave find!!

Fad diet or not (it's not for me!) ... if not eating gluten has made all the symptoms you listed GO AWAY... why on earth wouldn't anyone support your decision to go gluten free... w/ or w/o a diagnosis?? Others are correct in that this forum is the most supportive place to be. There is not ONE question you can ask here where SOMEONE doesn't have the answer...

  9. I feel your frustration! I once begged off dinner out w/ friends because I knew there was nothing I'd be able to eat... except salad. My "friend" said, "Can't you have a salad w/ grilled chicken??" I asker her, "What if EVERY TIME you went out to eat... the ONLY option was a salad w/ grilled chicken??" It got so boring so fast...   10. I've had to cut way back on carbs for 2 reasons... 1. I love them too much... I ate a sandwich every day for lunch and rice or potatoes or pasta at supper... and 2. It seemed my digestive system was revolting at my carb addiction. So, now I only eat bread, etc. twice a week. On Tuesdays, we make burgers and oven baked fries to eat while we're watching...
  11. Why would you risk it at all? Especially when you're talking about reactions that affect your breathing and having to carry Benedryl?? I don't know... but I'm thinking your god would understand your very SERIOUS issues and not expect you to put yourself in danger!!

Compared to the awful things that happen to people... this is NOTHING. I just had to learn to cook differently."   13. Nope, we can not... period. It's cross contamination and will do damage even if it doesn't cause physical symptoms. It stinks, but there it is. There ARE places w/ dedicated fryers and I'm grateful for them!
  14. I've just gotten a tutorial from my neighbor who gave me a bunch of plants. She said to plant them about 3-4 feet apart and to put in 2 poles at each end of the row and run wire or string on both sides of the plant to keep them kind of contained.   16. I HEAR ya on that one!! I've been treating myself to a pizza on Saturday nights while dieting the rest of the week. Namaste pizza crust mix is my new fave product!! The crust is thin and crispy... delicious!!!
  17. I tried a crust made w/ cheese and it was just okay. It got completely soggy w/ toppings. I'm now a huge fan of Namaste pizza crust mix that I just found in my health food store (I live in rural Arkansas and gluten-free options in stores are mighty slim). One bag makes 2 pizzas, but you can measure out just 1 crust's ingredients. I spread it out on parchment...

  19. I live in north central Arkansas, where there's no dirt... literally!! It's all hard-packed clay and rocks! Last year I gardened right in big garden soil bags (read about it in Mother Earth News and their new April/May issue shows it again!) and I have 'em ready to go again.   20. My kids were good veggie eaters but occasionally I'd serve something they turned up their noses at. In that case, they got a "no thank you" portion... maybe a tablespoon that they were expected to eat. Once my youngest DD stuffed the "no thank you" portion of spaghetti squash in her mouth and was trying to say, "Yum... this is good," inbetween GAGGING. ha...
  21. I'm w/ you, FMMcGee... I'd rather have a tiny little bit of something real than a whole container of the fake stuff out there! I remember a friend challenging me to be able to tell the difference betw. REAL ice cream (cream, sugar) and fat-free ice cream (fake everything). It was a no-brainer... or a no-taster!!
  22. When I was diagnosed, my doc told me it was more common in those of Irish ancestry. I told him my mom was "right off the boat" ... she was born in Belfast. I'm the only one in my family and in my extended family. In my own research, I found it can be more common in Jews... so my kids have a double whammy... Scots/Irish mom and Jewish father.
  23. I make gluten free waffles and freeze them. A few min. in the toaster and a banana sliced or smashed on one w/ the other as a top makes a great "in-the-car" breakfast sandwich. I've also taken rice cakes smeared w/ peanut butter.
