  1. Mine seem to be coming on faster now that I've been gluten-free for a while (8 months). I took an accidental direct hit a couple of weeks ago eating Thai food in Japan- I ordered what was supposed to have been a safe green curry over rice, but it's entirely possible that wheat starch or flour was used to thicken the sauce or bread the chicken- HUGE language...
  2. These ones from the Gluten-Free Girl and the Chef website are A-mazing. I made a batch over a weekend (dough on Sat morning, refrig, bake on Sun night) last winter and loved them. My gluten-eating husband also loved them, as did my gluten-eating coworkers. I deviated from the prep a bit to make them standard cookie size (about a heaping tbsp dough for roughly...
  3. Yes. Five Guys is an awesome chain. Love them. To the OP- you mentioned that you're staying at a hostel with a kitchen, which is a big plus. I would like to mention that if you're planning on cooking, pack your own skillet, cutting board, and utensils. Those things are likely provided in the hostel kitchen, but it's anyone's guess what was previously prepared...
  4. Udi's makes an awesome grilled cheese. Yum.
  5. Here are some of our favorites, with minimal tweaking to make them gluten-free: Homemade picadillo (ground beef seasoned with onions, garlic, chili, cumin, tomatoes and carrots) with refried beans and rice, served with tortillas. We ate this regularly when I was growing up and the only substitutions I've made were gluten free beef broth in the rice (for...
  6. Go to or contact a local Catholic church's office and ask to speak to or leave a message for the Society of St. Vincent de Paul representative. This is an organization that exists to help people in need with emergency situations, no strings attached, no requirement that you are Catholic. Usually the only requirement is that you live within the parish boundaries...
  7. Yep. I went to a new dental office for the first time after self-diagnosing celiac disease, and the dental hygienist actually started asking me if I had been malnourished while growing up, and said she was asking because of all the white weak enamel spots on my teeth. Since I always had an ample amount of healthy food while growing up, it took me a minute...
  8. I'm 32. Went gluten-free after self-diagnosis 8 months ago (and it was the right call). I've never had a cavity, but I have receding gums that are nearly to the point of no return and a long history of weak tooth enamel. My adult teeth are in better shape than my baby teeth were (needed crowns on the molars to keep them from crumbling) but I have light spots...
  9. Exactly this. I mean, sure, some of my symptoms got better within a week (as in no more daily headaches), but the gut stuff took months to fully heal. It was a full two months before I could digest even lactose-free dairy again. Stick with it and you will eventually get relief. At the very least, you're not doing further damage to yourself so that's something...
  10. If he has gut damage, any dairy might be too much for him. When I first went gluten-free, I had enough damage that I couldn't handle even butter (which should be very low to no lactose), due to the casein protein in dairy. It was too much for my gut to handle. It took a few months and I still have problems with high lactose foods, but I can eat butter, cheese...
  11. Mine always used to involve a nasty migraine (sometimes with delayed onset of several hours) with 2-3 days of C (plus bloating and cramping) followed by a couple days of D. I took a bad hit a couple of weeks ago- usually my hits are CC but I think this one was accidental full-on ingestion, as I was in a foreign country and there was a major language barrier...
  12. I find it easiest not to bring that stuff home at all. My mom restocked our kitchen so that we would have available food when we returned from a vacation last week, and she bought a bunch of goodies like gluten-free cookies and muffins from a local bakery. Normally I don't buy that stuff, and now I remember why. Rationally I know I don't need a second cookie...
  13. I've had no problems with my stainless steel pots. If you kept them scrubbed and the dishwasher didn't leave caked-on food bits, they should be just fine.
  14. Yes, I agree. After cooking for ourselves in Kyoto, we agreed that 1) if we ever return to Japan (which I would love to do as I feel I would need much longer to do justice to Tokyo) we will only stay in places with kitchens, pack a few utensils, and cook fresh food from the markets, and 2) whenever possible, in future we will book rooms that will allow us...
  15. The return flight was equally good with regards to service and safe food. The breakfast wasn't dairy-free, but was nice for me as I was served thick yogurt instead of breakfast pastries along with my fruit and juice (I'd much prefer the yogurt even if there were gluten-free pastries available).
  16. Oh, wow. Thanks for posting this. The husband and I are hoping to spend a long weekend in NYC this fall or winter and this ensures that we won't even come close to running out of food choices.
  17. Ooh, now I'm sure that I want my next big trip to be to a European destination. Along with the success stories here, I've also heard very good things about Sweden and Norway as far as being celiac-friendly. Glad you had such a great time. Think I'll start planning now...
  18. Interesting. I've only used it once or twice in baking and it would have been after my gut had mostly healed. I can't remember if I reacted or not (if so, it must have been mild). I only know that I stopped reacting initially after I subbed all potato starch for tapioca starch in recipes. I might be just fine with tapioca now. It would certainly make things...
  19. I react to tapioca starch. It's gotten better since my gut's healed, but I still get some indigestion from it. I try to sub in potato or arrowroot starch when I bake, and limit my intake of purchased baked goods.
  20. Fly American Airlines. They were super-careful with my requested meals and the food was decent (and dairy-free as well as gluten-free). It was rather comforting to be served quinoa pilaf.
  21. I guess that's one way of looking at it, but when you're 6000+ miles from home, don't speak the language, it's almost 9 PM, and you've have already spent over an hour walking around town looking for a restaurant that appears to serve something you can eat (i.e. a simple sushi plate), it's really difficult to be told to find somewhere else when all you wanted...
  22. Food. Enough safe food so that you won't starve during the time you're away from home. I'm on day 8 of an 11-day Japan trip right now and quite frankly it feels like I've been here forever. I wish I'd packed an entire suitcase of food. Restaurants are a disaster. The Japanese love their gluten/MSG-filled foods, the language barrier is huge and the dining...
  23. Hi all, I'm currently in Japan, which is a food nightmare for celiacs. I've never eaten so much white rice in my life. I've been subsisting off of Soy Joy bars, Lara bars from home, yogurt, fruit, and foods like sushi, which I now learn might be responsible for the low-level illness I've had since I've been here (seaweed might be soaked in soy sauce, rice...
  24. Weird, isn't it? I decided I didn't want to try and guess which days would be good days so I've taken to layering the crystal on first, letting it dry, then adding a layer of Herbal Clear. On me, neither works great alone but the combo gets me through the work day with no worries (and the Herbal Clear smells nice).
  25. I don't know if they are. I think there are no gluten ingredients added, but their vitamins are made in a facility that processes most of the major allergens. I'm currently taking a women's multivitamin from Rainbow Light (I take one of their daily calcium supplements as well). I've had good luck with their products. I've also had good luck with Nature Made...
