  2. Yes-- in combination with borage oil (which I haven't found yet), flax seeds are supposed to roughly replicate fish oil (reluctant to take). He did say to not buy the pre-ground, probably because of the increased rate of rancidity. Will definitely try the pancake recipe! Looks good, although I'll probably try throwing in some minced apple.

  5. Hello all- Anybody have good suggestions for how to a) crack or grind flaxseeds efficiently? how to make them edible? I don't like yogurt at all. Already adding to salads, but I generally prefer cooked food, so I only eat them occasionally after the first harvest of lettuce is done. Hot cereal would work in the winter, but not when it's 80 degrees...

  12. Recently diagnosed with non-celiac gluten sensitivity based on a motley assortment of test results and response to diet (see signature). Including the assorted helpful comments of "Well, it can be patchy so you may have damage further down your intestines or we just missed it" and "You may be able to eat small amounts of gluten later in life."   13. Well, I guess that was a waste of a graduate degree... The mediterranean diet with lots of produce, mono-unsat fats, and small amounts of animal protein (much like the Okinawa diet) really is one of the best diet profiles in the world. ;-) Honestly, I cannot endorse eating the vast majority of the animal products grown in the US. I don't recommend them...
  14. Quincy- One of the best ways to raise HDL is through exercise. I agree that a good shot of fat is important for breakfast, but go for avocado, fish, olive oil, or canola oil over animal fats most of the time. Other possible breakfasts: -salad (homemade olive oil dressing) with nuts and plenty of fruit OR hardboiled egg and other chopped veg -beans...

Japanese rice balls. you can make all sorts of variations. google "onigiri". if you can eat eggs, make mini crustless quiches in muffin tins and freeze to have on hand. bean salads. beans + homemade dressing + random chopped up veg For portable, I like the little pineapple cups (pricey, but sometimes $$ if worth it for the convinience).
  16. You might also check the possible side effects of your BC. Sometimes they can cause enough of a hormonal shift that it upsets your GI tract too...

    I'd take plenty of back up food though. Just in case someone screws up and you get served the wrong things or even just something you don't quite trust. I've been stuck on trains a lot, and always plan for at least 12 extra hours and broken hear or AC. (I love trains though, which is why I persist...) Maybe: - jar of peanut butter or assorted nuts...

The ones with very high values are almost definitely water-soluble-- basically, in a healthy person with normal absorption, you would absorb it but then pee out extra (see bright yellow pee post B-vitamins). In someone with impaired absorption (celiac!), you may or may not be absorbing it all so the mega doses may be helpful. Minerals can be overdosed...
