ARCHIVED Seeking Advice
sb2178 replied to murraysmom's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
If you're already getting monthly bloodwork, why don't you have your GP draw the celiac blood panel, and then go from there? If it's clearly positive, you can just try the diet and see if it improves. If it's negative or questionable, you can decide if you want to follow-up with a specialist for a biopsy or consult or just try the diet. It definitely... -
ARCHIVED How Not To Be A Hillbilly
sb2178 replied to conniebky's topic in Introduce Yourself / Share Stuff
oh funny. that would also be don't leave the champagne in the freezer too long or you'll be drinking slushies and the first glass will be *much* stronger than the rest. (FYI - I'm from WV) -
ARCHIVED What To Eat After Getting Sick?
sb2178 replied to mareahf's topic in Coping with Celiac Disease
Rice noodles, applesauce, cooked carrots, a little turkey after I feel better. But I've only done that once and feel better fairly quickly. -
Yeah, I have techie friends who are into details and mechanisms. 1-3 probably would do it for most people. Like the food poisoning analogy! "Intestinal distress" is also a fun phrase to throw out there if someone applies unwanted pressure.

I don't have a terribly clear diagnosis, so it's nice that you do. That makes it a little easier-- I'm in the position of having to say that the doctors weren't sure, but that this is the disease that I had symptoms of and some bloodwork that may indicate early development. I think the important things to emphasize are: 1) it's completely treatable to...

ARCHIVED Help! What Could I Be Doing Wrong?
sb2178 replied to looking4help's topic in Coping with Celiac Disease
Asian pears. Eat the skin. I'd start with one quarter to half a pear a day and then up it to a whole pear. Fruits with skins that you eat tend to have more fiber. You also want to make sure that you get both soluble fiber (absorbs water) and insoluble fiber (does not absorb water). Typically skins have insoluble fiber while the insides have more soluble... -

Heat a small saute pan and add 2 teaspoons oil or butter. Break the tortilla into 1/2″ ... -
ARCHIVED Tall Order For Easy Dinners
sb2178 replied to amybeth's topic in Gluten-Free Recipes & Cooking Tips
I think it's possible to make perfectly nutritious meals with 10 minutes active cooking time (and maybe another 10 of non-active time like for cooking quinoa). You just have to be willing to buy more expensive pre-cut vegetables (like depending on frozen vegetables and precut meats instead of slicing and dicing your own). They probably won't be exciting... -
5' 2" which is actually 0.5" taller than my mother, so it's doubtful I'd be taller under any circumstances.

ARCHIVED Tall Order For Easy Dinners
sb2178 replied to amybeth's topic in Gluten-Free Recipes & Cooking Tips
You can buy polenta in tubes. Top it with sauce, beans & veg, and/or cheese for you and the individual bits for baby. I like little corn tortillas for quesadillas. You can try duck too, for a change from chicken. Or breakfast for dinner. Scrambled eggs or omelette with veg and/or meat. Potatoes in small amounts if you like them. Migas and Spanish... -
Cold peeled potatoes give a good shot of carbs and antioxidants without too much fiber. I've used them pre-run and got the idea from cyclists. I usually just make sure I have protein afterwards tho, not during. Maybe have some turkey with them, or a hard boiled egg...? The peanut butter larabars are higher in protein than the other flavors, and I like...

ARCHIVED Soda..should It Be Eliminated?
sb2178 replied to looking4help's topic in Coping with Celiac Disease
The other issues are fructose malabsorption (appears in some celiacs) and general concern about calcium absoprtion/retention and bone density. Sodas don't help at all with that... so regular consumption should be cut if you're concerned about bone density. -
I took both the whole foods brand (had to take multiple pills/meal) and enzymatic's Digest Gold. The Digest Gold was pricey but really effective. The whole foods... welllll... more or less worked but far cheaper.

The wisest choice, but I really think that I'm not interested. Economy sconomy. A lack of flexibility as well as no answer about how they deal with allergies in the workplace indicates that it is not the place for me. If it were a small organization, that wouldn't be a problem, but they're pretty big. They should know. I'll go work for my dad if necessary...

So, anybody got any advice about what to do post interview if you find yourself somewhat uncertain about whether you would want the job? The problem is that while there are other job prospects, this one is a) the closest; subject matter I would be really enthused about; c) a great learning experience. On the other hand, they aren't hiring until...

1. you're freaking out a little. (with good reason- I'm still freaking out too.) 2. pair your protein with produce. Deli meat or tuna wrapped in lettuce. Peanut butter with apples and carrots. Green bean salad with almonds. 3. beans at meals. the hard core protein-ists don't count them, but i find them very filling and a good source of many nutrients...

ARCHIVED Celiac & Osteoporsis -Men Too?
sb2178 replied to ivegotitalso's topic in Coping with Celiac Disease
YES, men can develop it. I'm pretty sure there are a few members on here who were diagnosed after weird fractures. Part of what nudged my diagnoses was a couple of bone scans showing a surprising loss (but not osteoporosis) over 14 months. Generally, celiacs who only have mild loss normalize after one year on a truly gluten-free diet. You kid, for example... -
ARCHIVED College Meal Ideas?
sb2178 replied to Becksabec's topic in Gluten-Free Recipes & Cooking Tips
I was a huge fan of making two pots of food/week and just eating those and then I generally had toast & PB for breakfast. Usually one soup and one thing based on rice (or you could use quinoa, millet, amaranth, etc). The rice takes a while to cook, but it's not labor intensive and it freezes well. You can mostly chop up a few things then sit there... -
Yeah, I spent a few days at an aunt's house and ended up mildly sick from some sort of contamination even though I was cooking pretty carefully without using wood or non-stick. Just having that much flour/cereal/bread around can be a problem. Take your own food. Teach them to cook in your kitchen if you want to feel like they are taking care of you by...

20 years ago, I got my age + $20/month. The $20 (age 10 and up) was to cover clothing and shoes (my mother HATED shopping with a passion, even more so with a picky 10 year old that would only wear black... what can I say, I was a little odd?). I think a can of coke mostly cost about $0.50. The monthly option is good-- I think it encourages more planning...

Brunch: garlic-encrusted baked polenta with poached egg, sauteed kale And that would be my dinner tonight... although the precise method of garlic encrusting may turn into just garlicky. Fun! Thanks all- definitely interesting and I've gotten some good ideas.

There have been several posts recently about what to eat. (Seriously, do we talk about anything other than what to eat? ;-) ) So, out of curiosity, let's hear what everyone ate today. Concrete, be honest. I care about good junk food options too! Breakfast two corn tortillas, cheddar cheese, cherries Mid-morning tea with milk Lunch buckwheat...

ARCHIVED I Can't Seem To Make Myself Do It.....
sb2178 replied to BriLee's topic in Coping with Celiac Disease
I haven't read all the posts, but wanted to go ahead and add a couple of comments. Sorry if I'm repeating myself. 1) the first two weeks are the hardest. really absolutely miserable physically and especially emotionally. you'll make it, and probably feel much better. 2) always carry food you can eat and that you like. nevermind healthy for now.... -
ARCHIVED Silent Celiac - How Do You Know If You Have Been Glutened?
sb2178 replied to love2travel's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
oh, yeah, don't eat i,t Bluebird. really, DON'T eat it. There's an advantage to not being oversensitive. You can eat out, or go a relative's house, and basically stay comfortable even though you are likely having a low level of exposure. I actually have more issues with fatigue than GI after light exposure... but fatigue was followed by GI problems... -
Checking for nutrient status is pretty common, but if you're four months out, you may have normalized already if you weren't undiagnosed for too long. If you were undiagnosed for a while, I might try to get into your PCP. If you aren't having other problems, I would leave it for your annual appointment. Vit D, B-12, iron, and Mg are pretty common deficiencies...
