  1. "Normal" thyroid labs are a matter of debate among endocrinologists and the ranges have been recently revised. If your tests were evaluated using the old "normal" ranges you may have had subclinical hypothyroidism.
  2. You do what keeps you healthy and feeling well. It's different for everyone and there is a wide range of sensitivity among both celiacs and people with gluten intolerance. Pans are fine for almost anyone with gluten issues if they scrub clean with no residue (or wipe clean in the case of Teflon). The only pans that retain gluten are seasoned ones like...
  3. Nobody has mentioned risotto! If you like creamy stuff and don't mind spending a little time stirring you'll love risotto. Open Original Shared Link Jambalaya is really good and pretty easy to make. Here's Emeril's recipe. Open Original Shared Link And of course you can always make a paella. Open Original Shared Link Yes, cooked rice keeps in...
  4. It's taken me as long as three days to have my anxiety reaction to gluten, and it usually takes at least six hours for my GI effects to appear. 24 hours is well within the realm of normal.
  5. You seem to be intolerant of whatever you have swapped out for the gluten! Are you eating a bunch of gluten-free baked goods with xanthan gum?
  6. The ONLY accurate and reliable test for gluten intolerance is exactly what you have done, eliminating gluten from your diet and feeling better. An Enterolab anti-gliadin test will almost certainly come out positive, because it does in a huge percentage of people with stomach problems. The inflammation from eating gluten tends to make you develop a few...
  7. Try to stock up on tasty gluten-free snacks like nuts, fruit, cheese, hard-boiled eggs, cut fresh veggies, and Larabars. Corn chips and potato chips work well for snacking. Use dip, guacamole, salsa, hummus, or have a few olives, pickles, capers, or other gluten-free condiments to add interest. Bake some fresh gluten-free bread from a Bob's Red Mill mix...
  8. That's another hypothyroid symptom.
  9. Mom is fructose intolerant and that's EXACTLY how she reacts. She always has Smarties candy in her purse (they're made of dextrose), and she'll eat a few with a restaurant meal where she isn't sure whether there is high-fructose corn syrup in anything. She also buys bulk dextrose and sprinkles it on the small portions of fresh fruit she can tolerate to...
  10. Wheat leaves??? Sorry but you gotta use a little common sense here. Hay is not used as flavoring! You can find wheat grass in supplements but it's always listed as a big, exciting ingredient, not buried in the natural flavors list. There is no gluten in wheat grass, but most of us avoid it for fear of cross-contamination since it's sprouted from wheat...
  11. Probably. The only thing "natural flavors" can conceal is barley malt. Malt is an expensive ingredient and manufacturers usually list it separately. That said, there is no way to be certain. I would give it away. To my way of thinking, it's not worth saving the cost of one can of pina colada to risk glutening myself.
  12. Could you please post the link to this? I would really like to pass it on to my psychiatrist friend.
  13. I hate to burst your bubble, but 75% of females and 35% of males have pinkies less than 3/4 the length of the middle finger. It's a little hard to make any conclusions about celiac disease using a trait that happens more often than not. Another interesting sex-linked hand trait is length of your index finger compared to your ring finger, measured from...
  14. I cook black beans or pinto beans and freeze a layer of beans over a layer of rice for lunches at work. You could freeze just the beans and cook the rice fresh if you're around the house. Rice cookers are very easy to get going. I've never made a soup that didn't freeze well. Pot roast freezes OK too. I leave the juice as broth and don't try to make it...
  15. Lack of cold tolerance is often thyroid-related. Going gluten-free can lessen thyroid inflammation and allows you to absorb iodine and selenium. As your thyroid function improves, so does your cold tolerance. I always know I'm hypothyroid when I shiver in 70 degree weather.
  16. Put her back on gluten until testing is done. One week gluten free plus a couple cheats isn't enough to change her celiac panel results.
  17. Nightshades are notorious for flaring arthritis.
  18. They have always shipped to the US for personal use. If you put one in your cart on the website, you'll see the US shipping info.
  19. It's so-called "high risk" but I have a friend who just had a perfectly healthy baby at age 41. The big thing you have to decide is how you will handle the considerably higher Down's Syndrome risks.
  20. I wonder if we could get Scott to put a footnote on the natural flavors in the lists explaining what you just did, Peter?
  21. Please don't spread rumors like that on the board. Wheat that can trigger allergic reactions, like flour dust on cheese, has to be declared in the US or the food is mislabeled and the FDA will recall it. If you have a letter from a manufacturer stating this is true, please share.
  22. My index fingers curve in a little like yours if that's what has you worried. They always have. I agree that the best specialist for joint pain is a rheumatologist. Also I have a friend who swears by glucosamine/chondroitin supplements for his mild joint pain.
  23. Well, at least you know you're intolerant for sure. Feel better!
  24. I'm excited for you too! Glad to hear you're not sensitive to the ink. You'll have to post the artwork for us when you get it drawn.
  25. Wheat and dairy can have a mild opiate-like effect on some people, even to the point where those people can experience withdrawals going gluten-free. It's more in the realm of narcotic addiction than eating disorder and eating some wheat will definitely trigger her craving for more. Perhaps it's time to teach her a little bit about addiction and self-control...
