  3. Aren't chips made from corn soaked in lime (masa harina)? Unless you got hominy grits, both the fresh corn and grits were not lime treated. I haven't a clue what the lime treatment does to allergies but it does make corn a lot healthier and more digestible.

  5. You said that well, WheatChef. Ruthie, you're not "throwing in the towel" if you come home. You're creating an opportunity for yourself to find a different way of volunteering where you can stay healthy and effective.
  6. I can see some problems. It does sound like you're dealing with constant, low-level gluten. You MUST find cupboard space away from baking mixes and flour. This is not optional, even if it means keeping your food in your room. There will be loose flour in the pantry getting on your stuff.   7. Two things. First, everything does not boil down to gluten intolerance. I was seeing it everywhere too, but there are plenty of other food intolerances like soy allergy, casein sensitivity, and fructose malabsorption that are under-diagnosed as well. I have one friend who eats wheat perfectly fine but gets symptoms a lot like mine if she eats soy or nightshades...

  10. Before you seek counseling, may I suggest you talk to your doctor about your Addison's disease? You have been gluten-free and hopefully at least partially healed your small intestine.   12. I'm so sorry to hear how sick you are. It sounds awful. The one thing that sticks out to me in your story is that you felt better eating gluten-free, moved out, and are sick again.   17. Blue Diamond is pretty good about stating CC risks. Nut allergies and reactions are very common. You can sort out an almond sensitivity with allergy testing, or by challenging with almonds in the shell that have no CC risk.
  18. There is an association between celiac and H. pylori but I did a search and didn't turn up reports of H. pylori triggering celiac disease in the medical literature. That doesn't mean it didn't happen to you, of course. It took me a full year eating gluten-free before I could tolerate soy and milk without GI symptoms.
  19. My mom has fructose malabsorption, which causes gas and bloating. You might look that up. I don't now the whole diet but I know she has trouble with fruits, vegetables high in fuctans like onions or asparagus, and processed foods with fructose among others.

    I forgot - another thing that helps me with anxiety is is fish oil. I take four capsules of good mercury-free double-strength fish oil a day. Since you find a clear association between eating gluten and the anxiety I imagine it will get better as you get all the gluten out of your diet and your body heals.

  24. For me it was a severe flu in my early 20s. Unfortunately, it took 12 years for me to figure out all my GI problems, anxiety, and chronic fatigue were celiac disease.
  25. You need to be ruthless getting gluten out of your kitchen so your body can heal. As Rucko said, a lot of us discard anything that cannot be thoroughly cleaned. Pots, dishes, and utensils clean up easily as long as they're not cracked and in good shape. Porous things like wooden spoons or cutting boards will not clean up and it's best to get new ones. ...
