  1. Breakfast was the hardest for me too. There's a thread started on the "recipes" forum about what to eat for breakfast: I'd also suggest browsing through the "recipes" forum. The information goes way beyond just recipes. I found out there that most Indian food is gluten-free. It hadn't even occurred to me before that!
  2. Hilarious ... it's good you had a pleasant experience otherwise though! I bought a box of gluten-free cookies today, and the guy behind the counter who rang them up asked me all kinds of questions - why was I was buying gluten-free cookies?, was it an allergy?, would I be intolerant my whole life? Awareness spreads, and gluten-free baking mixes appear!
  3. I thought the bloodwork was independent of whether or not a person was eating gluten??? (My doctor thought so.) I was negative on my IGA & IGG tests (as below), but my blood was drawn after I'd stopped eating gluten. I'd been off for 6 weeks at that point. I'm feeling miserable today after eating some oats yesterday, in Udi's gluten-free granola....
  4. Great to see everyone else's posts! I'm looking forward to stewing up some pears, and maybe some apples (with cinnamon?). And, naiiad, I definitely want to try out the your cookies!
  5. Good idea for a thread! Congratulations on being 2 weeks in! Breakfast was the hardest meal for me too. After 8 weeks (& counting), I don't even notice the lack of all those things I thought I'd always miss (muesli, granola, slices of whole grain bread ... ) One caution for you: my nutritionist pointed out that we need carbs for energy, and your eggs...
  6. I went through what must have been gluten withdrawal, and I felt crazy. I was dizzy, had rising and falling blood pressure and accompanying chills, had headaches ... It started about a week after going off of gluten and completely knocked me off balance for about 5 days. Sorry you're going through it, but just do your best to make yourself comfortable and...
  7. I'm the same way as you. I get very grumpy (VERY grumpy, although I don't like to admit it) when I'm hungry. And I'm hungry a lot more than other people. Most of the time, I'm pretty relaxed, so this is out of character. My husband (first my boyfriend) didn't understand it at first. Since it wasn't his reality, he just didn't get it. He would get frustrated...
  8. Like everyone else has said, it's *good news* for your body that you are now forced to eat whole foods rather than processed stuff! I agree that you'll need to find alternatives to bread and pasta. In addition to rice and potatos, don't forget about quinoa (called a "perfect grain" by nutritionists), polenta, and grits. I've discovered polenta rolls that...
  9. Sorry, but can you clarify: is this a list of foods that are safe? Or, is it a list of foods that sometimes have made some people sick?
  10. Your story about the cheerleader at work is really, really funny, but only from a distance. I would have wanted to add something to her pizza. Good restraint! I had a similar experience, except with a different outcome. My husband told the guys he works with that I wasn't eating gluten. Once of them said, "Oh, yeah. That's really trendy right now!" Since...
  11. We plan food forays the way Gen. Eisenhour planned for D- day. Hilarious ... you almost make us sound cool.
  12. I believe that acupuncture was a large part of what enabled me to recover from disabling fibromyalgia (along with dietary changes and exercise), even after Western doctors told me my recovery was impossible. I fully recommend it! Usually, Chinese medicine practitioners will make a diagnosis by reading your pulse(s) and by looking at your tongue. Even...
  13. I enjoy having something sweet to end a meal. I've been experimenting with combining fruit with spices as a simple alternative to less healthy desserts. I've been surprised at how nicely my experiments have turned out! A good result from my new gluten-free diet. Here are a few successes: -canned pineapple slices sprinkled with cilantro and paprika...
  14. Thanks for sharing! I'd never heard of those, but they look like a nice alternative to rice noodles. I'm a big fan of kelp, and am looking forward to trying it in noodle form.
  15. Hi Celiacers, So, I've been off of gluten now for 7 weeks (and more lately off lactose and soy). My GI symptoms have cleared up entirely. I'm still having quite a few issues though, notably insomnia, neuropathy/joint pain, and menstrual issues. My TCM (Traditional Chinese Medicine) practitioner gave me the diagnosis of Liver Qi stagnation with Blood...
  16. My menstrual issues coincided with my GI symptoms. Before that, I was on a regular cycle for my entire life. In the past 5 months, I've missed my period entirely, and been early with it twice. I've only been off of gluten now for 7 weeks, and my cycle hasn't gone back to normal yet. I'm hoping. I have had PMS increase in severity over the past few years...
  17. Is that your son, in your avatar? He's so cute! Some good (and cheap) options are: eggs (try them boiled) and beans (lentils, chick peas, etc. - you could try making them into a spread, like hummus). Other good options are nuts and seeds (sunflower, pumpkin, etc.). All of these foods are packed with protein. Another option is soy, but be careful because...
  18. How long do symptoms of lactose intolerance usually last for people? Is it like eating gluten, where a single incident can trigger symptoms for days? My poor tummy is so upset! Allison, years ago I identified lactose intolerance for myself when I was recovering from fibromyalgia, but I could still eat goat's milk and yogurt. I hope that's the case now...
  19. Wheat Wacker, It sounds like you're eating better than the crew! Seriously, you may be better off in the long run being forced to eat fruits and veggies. That said, I'm sure they feel a lot more full, and it sounds like it's hard to put together a "balanced" meal. It's hard to respond since I don't know what you have access to. Can you get ahold of...
  20. Help! - I think I'm reacting to dairy. I've been off gluten now for over 6 weeks, and I know sometimes people will develop lactose intolerance secondarily. My GI symptoms feel like what I get with gluten, but less severe. I'm also tired and cranky. Does this sound like lactose intolerance? What does lactose intolerance really mean? I eat very little dairy...
  21. The "Fruitein" line by Nature's Plus has a base that is a mix of rice, pea, and soy protein. They sell them in single-servings, if you wanted to try it out.
  22. Your best bet is tempeh. You can marinate it (or buy it pre-marinated) and fry it in a pan just like beef.
  23. Wow - what a saga! Good question. I'm vegetarian and used to avoid all dairy, so I've looked into this. The easiest protein-based food to digest is beans. When you cook them, add some kombu to the pot, if you can get ahold of it. Kombu is a seaweed that you should be able to get at a natural foods store such as a coop or Whole Foods. It helps break down...
  24. Also, if you want to look into Celiac/gluten intolerance, I'd recommend "Celiac Disease: A Hidden Epidemic" by Peter Green who heads up the Celiac center at Columbia. Browsing through this message board would be a great resource too.
  25. The usual procedure to make an absolute medical diagnosis for Celiac is 1) to test the blood for antibodies, and if the test is positive 2) to perform an endoscopy of the small intestine to see if damage is present. If the endoscopic biopsy of the small intestine reveals damage, then a patient is diagnosed with Celiac. This is considered the "gold standard...
