  1. Do you mean that you were occasionally eating gluten in the interim between 2005 and now? If so, it's likely that your intestines didn't entirely heal. If you've really cut gluten out this time, then it's like starting the healing process from the beginning. And our bodies often can't handle lactose after so much damage from gluten.
