  1. You all may be interested in this article from the Lancet: Gluten sensitivity: from gut to brain which came out this year. It seems like the newest research in this field is interested in exploring the neurological symptoms associated with gluten. Some researchers have speculated that there may be a form of gluten intolerance that not only looks different...
  2. You may be experiencing a secondary form of food intolerance. The symptoms of such food intolerances will often appear only after we stop eating gluten. Common ones include dairy (or caesin), soy, corn, and nightshades, although there are many possibilities. To determine if that's the case, a lot of people do an elimination diet. You can find resources...
  3. Upon awakening: hot green tea Breakfast: yogurt with Trader Joe's gluten-free granola & sliced banana, toasted slice of Udi's bread with sunflower spread Brunch: garlic-encrusted baked polenta with poached egg, sauteed kale Snack: iced green tea, strawberries Dinner: went out for Senagalese food! baked tilipia (fish), carrots...
  4. I bloated after eating Udi's "gluten-free" granola. The reason: OATS! Even though it's technically gluten-free, it's got tons of oats, and a lot of us can't tolerate oats.
  5. Connie, I was so sorry to hear about your loss. You've been through a heartbreaking experience. Healing can only take time. I know you're feeling discouraged right now about everything, including your health, but I think you've shown us that you're really persistent about finding what you need. You've been really resilient in the past few months about...
  6. I did read on the forum that some people find that they can flush their system of gluten sooner by drinking *lots* of water. So sorry you were glutened! That sucks.
  7. Your post may have done more than you realize. I have a background in Web marketing, and these days companies pay more attention to what people say about them online than anything else. They actually track messages that appear online referencing their brand name. That's because a scathing review like yours can seriously impact a company's brand. Think...
  8. If anyone is super interested in learning about processed foods, I'd recommend reading Michael Pollan's books. To Connie's point, at the end of "Omnivore's Dilemma," he stages a dinner party where he serves only food he's gathered, grown, or hunted himself. Yes, you can find wild boar in Berkeley, California if you know the right people.
  9. It seems to me. from reading people's posts here and from reading the literature especially Dr. Peter Green's book, that people's GI symptoms tend to clear up first. The immediate reactions that people describe to the gluten-free diet are usually around their GI symptoms. The other stuff - especially the neurological stuff - takes longer to heal. Now...
  10. How about a flourless chocolate cake? Those are fancy.
  11. My stomach pain and cramps cleared up after 5 days, but I still have neurological symptoms including joint pain after 2 and 1/2 months. Seems like the neurological stuff takes longer to clear up. The real litmus test appears to be the GI symptoms. From what you said, it sounds like you've already had a response with those from the gluten-free diet. I...
  12. Skylark - I know! I (used to) love Guinness. I guess they don't call it a stout explicitly, but it tastes like one! It's Greens Double Dark Beer. I don't know where to get it except at the restaurant in Manhattan where I had it (Risoterria), but I'm new to all this. I've never even bought Redbridge.
  13. My sign is pink nails. Whenever I need to remember that all of this is real, I just look down at my hands. My nails are pink for the first time in years! On gluten, they were a grayish-white (yuck). And imagine what's going on inside me, if only a couple of months off of the gluten has changed my nail color!!!
  14. I reacted to that too. It's labeled "gluten-free" so it looks okay, but it's full of oats.
  15. Hi all, I didn't think gluten-free beer would taste very good, and figured that I'd just as well pass. I went out to eat this weekend though with family to a gluten-friendly place, and they were all excited about me trying the gluten-free beer. Turns out it was great! Redbridge is a crisp lager that tastes like Red Stripe. Green's is a stout, much...
  16. The important thing is you're getting the help you need! Sounds like you're moving forward. Let us know how it turns out.
  17. Hi everyone, My therapist (who I was seeing for something unrelated when the worst of my symptoms began) pointed out to me that one of my symptoms right now is? - appears to be? - depression. It's true that I don't feel motivated sometimes, I have chronic low energy, I have insomnia (trouble going to sleep and/or early-morning waking), and I'm not feeling...
  18. Catholics can find information about communion for celiacs at: Open Original Shared Link
  19. The only way to know for sure is to stop eating gluten and see what happens. For most of us, the results of a gluten-free diet are dramatic. Doctors agree that false negatives are possible for both the blood work and the endoscopy. That said (as you know), if you stop eating gluten now, your biopsy will be effected. As sb2178 said, once you get through...
  20. When I was dealing with the worst of my GI symptoms, the same thing happened to me. I limited my activity then, mostly because of an intense dizziness. But I thought I should get *some* exercise. So, I decided to walk 20 minutes to an appointment and 20 minutes back (normally a really easy walk for me, I'm actually a biker). I had horrible, painful, stomach...
  21. Connie, Really scary experience! It sounds like it may be a starting point for you to make different choices about your diet. FOOD is powerful! That's why I suggest also slowly starting to add non-processed foods to your diet. For example, instead of a store-bought bar, try a banana or a 1/2 cup of berries. A diet based in whole foods would do wonders...
  22. Stephanie - is his recommendation so you get more Omega 3 oils?
  23. Plain tempeh is fine. I buy this brand: Open Original Shared Link Apparently, they do make a "three-grain" tempeh which is full of gluten. Good to know! So make sure you read the label (alas, our lot in life!). A note on tempeh: it's easier to digest than soy because it's fermented. If you can digest soy though, it's an excellent breakfast food (scrambled...
  24. Eat a lot of beans! They are so cheap and healthy! And there are so many kinds. Look out for the Goya brand, and know that sometimes stores will charge twice as much for "healthy" branded beans and even make the Goya beans harder to find in the store.
  25. One more thing - I really love my pocket/purse-size "Ultimate Guide to Gluten-Free Living" from the Celiac Center at Columbia University. Easy to order online. It organizes a ton of information about how to go gluten-free, including sections on getting started, shopping, grains, restaurants, and travel. It's nice to have all the info laid out in one place...
