ARCHIVED Veggies, Not Salad, What Do I Eat?
GlutenFreeManna replied to one more mile's topic in Related Issues & Disorders
For the soup I would try freezing one portion to test how it comes out. Most soups freeze really well, but some may lose flavor or change texture after being frozen. I don't know about nutrition changing, if the soup is cooked I wouldn't think freezing would change the nutrition much (but I could be wrong). Try freezing one serving and then thaw it several... -
ARCHIVED Sick Days Vs Glutened Days
GlutenFreeManna replied to curiousgirl's topic in Coping with Celiac Disease
I don't know if it shortens the recovery time, but I know resting helps and should be recommended. Our bodies' immune systems are attacking the gluten and putting extra stress on the body won't help the immune system. Thats just my opinion though. I would love to know if there are any studies done on this issue or the more technical medical info behind... -
ARCHIVED Udi Bread And Bagels Different Lately?
GlutenFreeManna replied to Nor-TX's topic in Gluten-Free Foods, Products, Shopping & Medications
This is interesting. I just tried Udi's bread for the first time last week and I thought it was a little stale, but I figured that was just the way it is normally. I was actually kind of disappointed after all the raves I have seen. It was still the best gluten free bread I have found but not suitable for making an untoasted sandwich, IMO. I used it to... -

ARCHIVED Disorientation/temporary Amnesia?
GlutenFreeManna replied to wasabi092's topic in Coping with Celiac Disease
I think that's serious enough to go see a doctor about! I did not have that problem exactly, but I would have seizures/passing out spells and not remember anything that happened in the minutes before I woke up on the floor. Sometimes I would even be talking to my husband in the minutes before it happened and I would never remember what we were talking about... -

ARCHIVED Ice Cream Cake Recipe?
GlutenFreeManna replied to MindytheOrganist's topic in Gluten-Free Recipes & Cooking Tips
That sounds really good and I bet it would work with any gluten-free cake. Here's a recipe I found: Open Original Shared Link The first review of the recipe tells how to ice the cake with ice cream. ETA: Let us know if you try it! -
ARCHIVED Stocking The Freezer
GlutenFreeManna replied to SGWhiskers's topic in Related Issues & Disorders
Okay, here are my ideas: Rissotto Mini meatloaves meatballs Chili Chicken fajitas Mashed potatoes Homefries french fries Burger patties barbecue chicken Pizza-- I recently discovered Chebe mixes and it says you can premake the crust and freeze, you can just make it without cheese if you don't have any cheese substitute. It kinda ends up more... -

Oh, that's probably it! I'm having a little brain fog today and couldn't think of any foods that started with E. -
ARCHIVED Do You Expect Relatives To Cater To Your Gluten-Free Diet?
GlutenFreeManna replied to ljgs's topic in Parents, Friends and Loved Ones of Celiacs
I'm sorry, I'm having trouble seeing what the issue is? Is it just that they are not willing to buy gluten free food or make gluten free desserts for your daughter? It sounds like they are being accommodating in many ways--cooking barbecue and other things on foil, going to some restaurants that have gluten free menus, asking you to send safe breakfast... -

ARCHIVED My Head Has Hurt For So Long That I'm Stupid
GlutenFreeManna replied to imsohungry's topic in Gluten-Free Foods, Products, Shopping & Medications
It's probably because they come frozen. Ask you local store to carry Udi's and it will be faster to get it. I finally got to try some last week and it's really good, but not good enough spend $18 on shipping. The loaf is really small for the price too (it's 7.99 in my local store) I think I'm going to try to make my own bread next. There was a thread... -
ARCHIVED Bun, Pizza Or Muffin In A Minute Recipe
GlutenFreeManna replied to bluebonnet's topic in Gluten-Free Recipes & Cooking Tips
Tried these today to make hamburger buns and they were really good. I was surprised at how much the texture is like regular bread. It's nice and spongy and the taste is close to a whole wheat bread. I would't eat these without anything else on them, but as burger buns they were good. -
ARCHIVED Puffed Rice Cereal
GlutenFreeManna replied to Frances03's topic in Gluten-Free Foods, Products, Shopping & Medications
Thanks. I guess I have never had unsweetened puffed rice. I'm not a big breakfast cereal eater anyway. Is it more similar in texture to rice cakes? I have rice cakes that have "whole grain brown rice" as the only ingredient. I like those sometimes with peanut butter as a snack. OP, would rice cakes help your craving? I also sometimes just eat plain... -

ARCHIVED Kitchen Cc
GlutenFreeManna replied to alissar's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Yep, I had to get all new pans. Since you're a college student get one good pan to start before you buy a whole new set. You will have to keep you roommates from using it (if you have roommates). You can cover cookie sheets with foil or parchment paper to make them safe. Get your own gluten free dedicated colander too and watch out for knifes and cutting... -
ARCHIVED Totally Confused
GlutenFreeManna replied to dragon's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
Right after you have the biospy done you can start a gluten free diet trial. You don't have to wait for the results. As far as your original question, some people have delays in when the gluten effects them. 24 hours of recording your food and reactions, is not long enough, IMO, to see a pattern. Sometimes gluten gives me symptoms within 20 minutes and... -
Unfortunately, even if people are careful in cooking things for you that are naturally gluten free they likely have gluten in their kitchens and have used the same pot and pans, cutting boards and knifes, spices and sugar to prepare gluten food for years. There will also sometimes be people that think you are over-reacting or this "gluten thing" is all in...

ARCHIVED Fried Fish
GlutenFreeManna replied to MelindaLee's topic in Gluten-Free Recipes & Cooking Tips
Try "glutenous" rice flour (it is gluten free). I haven't tried it on fish but it makes a great breading for chicken or fried eggplant. -
ARCHIVED Gluten Free Cooking Oils
GlutenFreeManna replied to JohnnyOh's topic in Gluten-Free Foods, Products, Shopping & Medications
IMO, you only need to be concerned if you are supersensitive and you buy oil from a company that also processes wheat germ oil on the same equipment. Spectrum naturals is one of those brands that has been mentioned here in another thread. I buy Bertolli olive oil and I'm not concerned in the least about gluten in it because olive oil is the only type of... -
ARCHIVED Udi's gluten-free Bagels And Severe Nausea?
GlutenFreeManna replied to missingpasta's topic in Gluten-Free Foods, Products, Shopping & Medications
Why the negative attitude? Many of us DO have additional food intolerances. Good for you that you don't, but please don't make it sound like those that do have additional intolerance are making things up. Additional intolerances is ONE possible explanation, another possible explanation is cross-contamination in preparation (like in a shared toaster or... -

ARCHIVED 3 Years On, Still Sick.
GlutenFreeManna replied to up late's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Some questions for you: 1. Have you tried eliminating other foods? (soy, dairy, nightshades, grains like corn and rice) 2. Have you had your thyroid checked? 3. Have you been tested for other autoimmune diseases? (often these come with celiac) -
ARCHIVED Blue Corn Tostitos
GlutenFreeManna replied to Cheryl-C's topic in Gluten-Free Foods, Products, Shopping & Medications
What are you dipping them in or eating with them? And do you share your home with gluten eaters? Any chance that someone else stuck their gluteny hand in the bag before you took some out for yourself? Beyond that, if your symptoms are not your typical gluten symptoms you could be intolerant of blue corn and not yellow/white corn. Some people can eat... -
ARCHIVED If One More Person Says....
GlutenFreeManna replied to adab8ca's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
It sounds like you're being realistic. A week is too short to get rid of all your symptoms, especially when they are neuro. Heck, I've been gluten free for 8 months and when I get accidental gluten it takes a week (sometimes longer) before my symptoms go away. So keep up the gluten free diet and ignore those naysayers.
