Yes, in this situation you certainly could use Bob's Red Mill gluten-free AP flour because the end product would have the properties as in a regular cake. Marc, I use my whip for whipping eggs but never for breads. As a baker I find that unusual for bread. It will change the texture and structure of the product. Sorry about the soy - it unfortunately is key in the recipe due to its protein content which adds wonderful structure to bread. Defatted soy tastes far less strong than soy. Ditto on the above. I am glad I got tested because I am one of those people who just need to know. I was also in denial so bloodwork and subsequent biopsies were ample proof for me to go gluten free once and for all. Three weeks - you are doing well! So glad you are not as sick as you had expected to be. My challenge was for nearly four months but as I did not feel sick from gluten it was easy for me. I was lucky. How long were you told to do the challenge for? Hopefully you will get answers not just regarding celiac but also any other issues. -

You obviously planned ahead! I have not been to the US in ages but when my in-laws go for the winter they stock up and bring back gluten-free Worcestershire, etc. as well. It is sickening how much cheaper things are there, too!
