  1. It was AMAZING! Fresh pasta was incredible. And the sauce? Oh, man. Your meal was healthier than mine, though!
  2. I am making homemade pasta today. Fettucine, in fact. I am also making a large batch of garlic and white wine sauce (so I can freeze some for hot days this summer). We will be having Sauteed Mushrooms with Sherry, Thyme and Garlic as well. Lemon Blueberry Pudding for dessert (low fat and low calorie).
  3. I adore Dickens and have read many. I think "Bleak House" is one of my favourites. His writing style is pleasing, as is his sense of humour as you mention. Just finished "We Have Always Lived in the Castle". Love Shirley Jackson, too. Have you tried Daphne DuMaurier? She is one of the most brilliant authors ever in my opinion (and I read at least...
  4. Yes, this happened to me as well. My doctor was reluctant to put me on antibiotics as I have celiac but he had to. He told me to make sure to double my probiotics intake a few days before, during and after the antibiotics. Good doctor!
  5. Banana boats - slice a banana lengthwise, place in tinfoil and place marshmallows and/or chocolate on top. Seal. Place on grill. Smores - the usual only use gluten-free graham crackers.
  6. Exactly what I was just thinking. That is what we did, actually, and no gluten product has ever touched it. No worries about CC.
  7. I like your classic dinner in foil. I have never done that with ground beef, though I have camped often. So with the addition of the other ingredients it would bake rather than steam. Great idea!
  8. Authentic Japanese: Grilled Tsukane (chicken meatballs with miso) Tare (soy basting sauce) with the chicken Yakiniku (Grilled Vegetables with Tare) Takikomi Gohan (Japanese pilaf)
  9. I would personally not close the tinfoil because if completely covered by tinfoil they will steam but as the burgers contain fait I would definitely make a little boat around them. If you have a cast iron frying pan you can use that on the grill, too. That way you will get the lovely sizzle and they will brown nicely.
  10. I love millet in baking - it is so very mild yet adds some nutritional value. Actually, I think I will use chestnut flour. Love the stuff. I now have over 20 flours/starches to choose from!
  11. I am going to try a blend with millet, white rice flour and almond flour and no x-gum. Will report back. Wait a minute - I will try half with no X and half with X to compare.
  12. Grilled plumcots with spiced honey and Greek yogurt.
  13. I have heard of a few times and those I have been in contact with it say that they are unable to eat anything on hooves, not just red meat. I would find that very difficult myself. It is strange, though. I would like to learn more about it.
  14. I know what you mean. I was diagnosed as a silent celiac (through genetic screening) so never know whether I have been glutened or not. I assume not because I am very careful but you never know when eating out. My villi were very blunted, nearly flat but I am glad that your son was diagnosed early!
  15. This should be emailed to each and every doctor on the planet (except mine who is very good). One of the most informative articles I have read in ages - thanks for posting!
  16. Weird. I posted a few minutes ago but it did not show up. Anyway, you have every right to inspire us with your story and be proud of your precious son. I would say this is nothing short of miraculous!
  17. I'm not on a paleo diet or anything but I am a carnivore. This is what our week MAY look like: beef - 1 lamb - 1 pork - 1 fish - 1 seafood - 1 poultry - 1 vegetarian/homemade pasta - 1 We try to mix it up to include quail, duck, goose, Cornish game hens, lamb, bison, moose, elk, goat...we are adventurous eaters so if we could find antelope...
  18. Yes, it is a plum and apricot all rolled into one. They look and taste more like plums than apricots. And the jam is now done!
  19. Found a glorious-looking recipe for Tiramisu Cupcakes which I will make for my husband (well, I may have ONE). Open Original Shared Link Of course I am converting to gluten free.
  20. Eggs Benedict on a bagel (I made a low-fat version of Hollandaise) Frozen grapes
  21. I am currently making apricot, cherry and miso jam to go with goat cheese and baguette. Chile con carne with rice that has been infused with bay. Japanese Cucumber Salad Spicy Lime Roasted Chickpeas Plumcots for dessert
  22. My chiropractor told me that aspartame can also cause generalized muscle pain. As I have constant chronic pain, I have avoided it since that day.
  23. This was me! I refused to believe the bloodwork (I was in denial) but did believe the scopes. No GI symptoms, either. That was 15 months ago. I have been strictly gluten free ever since but still wonder how I would feel if I ingested gluten. I would never do that but there are times I wonder if I have ever been glutened or not because I cannot tell....
  24. It's just me tonight (husband on business trip) so am having spicy beef on beet chip "tacos" with Pecorino. Simple green salad with a gorgeous grapefruit white balsamic vinaigrette and toasted pecans.
  25. AWESOME! So glad you are so courageous. Take some Gravol for your nausea if you can. Have a wonderful time and please report back! Your husband must be so proud of you, as you are of him.
