ARCHIVED Ice Cream
love2travel replied to JordanW's topic in Gluten-Free Foods, Products, Shopping & Medications
Strangely when I was in Venice last November and then again two weeks ago most gelato was NOT gluten free. Whenever I asked, they refused to serve it to me. In fact, they even showed me the list of ingredients and more often then not, sure enough - the label said "gluten". I was quite surprised, actually. Just something to note in case others travel to... -

ARCHIVED Pity Party, Frustration, How To Lose Weight?
love2travel replied to RuskitD's topic in Related Issues & Disorders
To keep accountable I see my dietitian. She is well versed with celiac disease and has encouraged me along the way to decrease my fruit intake (although you say you do not eat sugar) as I was eating too much. Sugar really does it for me. Not only that but a pain med I was on caused me to gain a lot of weight. Quickly. Many pain meds can contribute to... -
ARCHIVED Hagmans Maple Flavored Chicken
love2travel replied to Kenster61's topic in Gluten-Free Recipes & Cooking Tips
That is called a brine. I brine whole chickens, duck, pork, etc. Sometimes my brine contains juniper berries, bay leaves, citrus zest, maple syrup, etc. But 1.5-2 hours is crazy long for chicken breasts. I would bake for 30 minutes and then see if they are done. It also helps to pound the chicken into an even thickness - often breasts are thicker... -
AMEN! It drives me crazy to observe those who say they are celiac but then laughingly proceed to eat a gluten-laden cookie. I treat my celiac diagnosis as a potential life-threatening illness (not imminent but it has potential to kill later on) and take it very seriously. This does not mean that I talk about it with others or draw attention to it (I despise...

ARCHIVED Is There Any Other Way!?
love2travel replied to Kirstie's topic in Coping with Celiac Disease
Both ways have merits. I had to have the scope done because I simply did not believe I could have celiac. Can you say denial? At that time, I did not have obvious symptoms or feel at all eating gluten. I found out through genetic testing. My doctor told me my bloodwork was positive but at that time I did not really get it and thought that was not enough... -
Oh, isn't Henry James awesome? Same with Wilkie Collins - I have many of his books on my Kobo.

ARCHIVED Kinnikinnick Soft Bread At Safeway For $3.99
love2travel replied to Silencio's topic in Gluten-Free Foods, Products, Shopping & Medications
Wow - that is incredible considering other gluten-free breads (not nearly as good) can be up to $7.49 for a loaf or $10 at a Farmer's Market! Did you grab several to freeze? This is definitely my new favourite commercial gluten-free bread. We can get it where I live for $4.99. -

Reading anything by Daphne deMaurier I can get my hands on. She wrote "Rebecca", "My Cousin Rachel", "The House on the Strand". Absolutely brilliant.

love2travel replied to KMMO320's topic in Gluten-Free Foods, Products, Shopping & Medications
Enabler. One of my favourite sites with contemporary gluten-free recipes is www.glutenfreegoddess.com. Her brownies are delicious as well. If I crave something, I simply find a way to make it such as crepes, biscuits, scones, pizza crust, cookies, cakes, breads, bagels, pastry and so on. The only things I have not mastered at this point are... -

...and don't forget Pineapple Coconut or Peach Almond. Open Original Shared Link The secret is roasting the bananas first for better flavour. I simply add some flax and very good chocolate which I cut into chunks and slivers using my knife. This makes excellent banana bread but also very good muffins! Use whatever blend you have on hand for this... -

ARCHIVED 3 Years Into gluten-free Diet And Tired Of Being Different
love2travel replied to lloydke's topic in Coping with Celiac Disease
Rather than go out to eat, I would rather have friends over and cook and bake incredibly delectable gluten-free food for them. We have no safe restaurants for a three-hour radius but I am thankful I love to cook. Maybe instead of going out or putting yourself in the position of seeing pizza and so on, make your own delicious pizza for friends. Heck, you... -
