  1. I just shake large batches in a 4 L pail with a lid. Works perfectly.
  2. Au jus *should* not have gluten (I have never made it with gluten, even pre celiac) BUT you never know. The risotto fish stock, if commercial, can have it. There is no reason for cream Anglaise to contain gluten. Gratins can definitely have it but again, should not. Like others have said, my guess is cross contamination or gratin.
  3. I have been gluten free for 2.5 years and unfortunately my chronic debilitating insomnia has not improved whatsoever. :-(
  4. Another Albertan here! I did get scoped because I did not believe the positive bloodwork (talk about denial!) and wanted to prove that I did not have celiac. Gluten never gave me obvious symptoms (at the time). As a serious food person I refused to have celiac. Weird, I know, but true.   7. Do you not just LOVE those crackers? They are THE best gluten-free crackers in the world I'm sure. I can't stand how great the thingers are! Wowzers. I kinda sorta made a batch of marinated feta with sundried tomatoes et. al. to go with the crackers but they are incredible on their own, too.

  13. When brining meats (usually pork) it is when I am not making a pan sauce using drippings. Here a dry rub would be your best bet in my opinion. Good luck! It will all turn out and will be lots of fun.
  14. As you are brining the turkey, you will need to watch the salt levels in the drippings for gravy. An option would be a dry brine instead or put less salt in the wet brine.

  17. You must have gelato in Italy. It is worth the plane tickets and I am not kidding. My favourites are grapefruit, limone, pistachio (in Sicily) - anything with nuts and/or fruit. My husband always has something with chocolate. Swooningating!

  22. That's great! I have not seen the product but just use King Arthur flour (from the U.S.) in my favourite brownie recipes. Chewy and so moist. I love that brownies can taste the same (or better!) than gluten-y brownies.

  24. Sorry to hear of your hayfever. Not a great trade, is it? So, we have had tons of snow on the ground for two weeks. Three blizzards with rain between so the streets are polished thick ice. Our coldest temp has been -22C thus far...soooooooooooo relieved this is our last Canadian winter!
