ARCHIVED Fabulous Naturally Gluten Free Dessert Recipes...
love2travel replied to love2travel's topic in Gluten-Free Recipes & Cooking Tips
The Pate de Fruit is bite sized and you can make all sorts of flavours. Simple and elegant looking and fine made the day before. How about homemade marshmallows? They are fun, funky and soooooo good. Mini pavlovas? You can make them the size of a cookie. -

That sounds delicious! Will have to try it as I have several kinds of nut butters on hand. Great beakfast idea! -

Sorry - my husband wouldn't be overly enthused if I were to leave him... Nice temps! Man, I cannot imagine how nice it would be not to have to deal with "real" winters. Will look for some bite-sized desserts for you as long as you send me some of your weather! -

So true! I'd rather continue teaching cooking classes for the utmost in flexibility and no $2M investment! Paper whites? Seriously? We've had snow for nearly a month already (although I missed part of it as we were on vacation). Yuck. -

Love to especially since where you live is far warmer than where I do! I've been approached several times to open a restaurant - part of me wants to but my logical side says nay. -
We understand! It took me a good few months to come to terms with my celiac diagnosis. Now it is just second nature. Sure, it can be very difficult in social situations but not on a daily basis. I teach cooking classes so I was not happy making that initial radical change but now have found that more and more people require such classes and information...

ARCHIVED What Are Your Thanksgiving Plans This Year?
love2travel replied to AVR1962's topic in Introduce Yourself / Share Stuff
I know this is a little late but we spent our Canadian Thanksgiving in Croatia. We had fresh whole sea bass roasted with potatoes; grilled fresh scampi; grilled scallops and roe in the shell with white wine; grilled fresh shark and panna cotta for dessert. Not like we were pigs or anything! All the fish and shellfish was caught in the sea just outside... -
ARCHIVED Share Your Culture
love2travel replied to navigator's topic in Introduce Yourself / Share Stuff
I am Canadian but my ancestors are mainly from Germany (I have more family in Germany than here in Canada) and Scotland and England. However, I FEEL Croatian! My Mom has an absolutely fascinating book that traces her family back to around 1100 - all handmade with locks of hair, old sketches, photographs, caligraphy - one of her relatives was a servant... -
ARCHIVED How Many People Were Ok Before Diagnosis?
love2travel replied to concernedmamma's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
That could be. My villi were very damaged - completely flattened. When I went on my gluten challenge for nearly four months I confess I LOVED it! I made a long list of things to eat one last time and crossed each one off the list. -

I am RELIEVED that you mentioned this as I was going to do the very same thing. I feel better, too. -
ARCHIVED How/why Did You Choose Your Member Name?
love2travel replied to love2travel's topic in Introduce Yourself / Share Stuff
I so agree! Where I live in Canada certainly is not home - I do not think of it as such. However, Croatia is where my heart is. My sense of belonging there is intense. When my husband and I talk about "home" we both mean Croatia and can hardly wait until we can make our move. -
ARCHIVED Grossest Food To Eat?
love2travel replied to kareng's topic in Introduce Yourself / Share Stuff
Good to know because I am very curious and would like to try it. I should clarify - I have read that the flavour is lovely but the smell is vile. True? -
ARCHIVED Gluten Free Banana Bread
love2travel replied to x0xteenyx0x's topic in Gluten-Free Recipes & Cooking Tips
Yum! This is very similar to the one I make but I add toasted chunks of pecan and flaxseed to the mix. I also roast my bananas in the oven first for extra banana-y flavour. There is just something so homey about fresh banana bread! If you thickly slice banana bread it makes excellent French toast! Thanks for posting. It's always so wonderful trying... -
ARCHIVED Iiga Ttg Testing Follow Up
love2travel replied to Linus's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
My number initially was 79 in February; tested this summer and were 3; tested again a month ago and still 3. My plan is to test each year in the future. -
After trying about 12 kinds of starches my favourite is sorghum as its properties more closely resemble wheat flour properties than most others.

Most recipes for frostings are naturally gluten free such as buttercreams, royal icing and ganache.

I know what you mean! I LOVE the feel of kneading dough. My pizza crust and pasta recipes are kneadable as opposed to spreadable plus Simona's Challah Bread posted on here is kneadable. It is strange getting used to spreading out dough that is akin to thick cake batter in pans for bread. However, focaccia bread is easy to make decently close to the gluten...

ARCHIVED Black Pepper Substitute
love2travel replied to missmellie's topic in Gluten-Free Recipes & Cooking Tips
Fresh ginger has nice heat. I also use dried chiles and grind them and use as a seasoning (i.e. in my salsas, sauces). Garlic is pungent but mellow when roasted. -

Love it - I get the whole sumac berries. Awesome stuff! -
ARCHIVED Grossest Food To Eat?
love2travel replied to kareng's topic in Introduce Yourself / Share Stuff
Seems like it! I have a book that discusses the vilest foods of the world and it is intruiging. However, what is unusual to us can be a delicacy and nutritious to others. I really enjoy watching Andrew Zimmern's show - he will try anything. Another thing that is supposedly vile is durian but I have not tried it fresh. Oh, and another thing I would... -
ARCHIVED Fresca
love2travel replied to Lisa's topic in Gluten-Free Foods, Products, Shopping & Medications
Artificial sweeteners do bother me but I used to love Fresca! My dietitian has advised me not to ingest anything containing aspartame and so on as it may make my fibro worse so I am now avoiding it. -
ARCHIVED Gluten Free Spices
love2travel replied to TiaMichi2's topic in Gluten-Free Foods, Products, Shopping & Medications
SO true! I haven't bought spice blends for years - no need as I always buy whole spices, toast them to bring out more flavour and grind them in my spice grinder or mortar and pestle to make my own blends. My favourites are Penzey's - they have cool spices such as mahlab, nigella seeds, black lime, sumac, etc. I adore that I cannot find elsewhere. Excellent... -

Sounds lovely! I adore lamb. It is under utilized/appreciated in my opinion.
