ARCHIVED Almost Cried At Work!
Monklady123 replied to Kimbalou's topic in Coping with Celiac Disease
Yes, probably it would be out of line to ask the manager not to allow others to eat what they want near you. But -- NOT "out of line" to feel that way! I went to a dinner meeting a few weeks ago to a pizza/sandwich place and the only thing I could eat there was a salad. I like salads, but it was hard to watch them all eating pizza and gooey melted cheese... -
ARCHIVED A Little Comic Relief

Lol! I had the same experience the other day at the Udi's area in the frozen section. Another person actually wanted some too! (my dog also loves Chex and it's cute to hear her crunch them) -
ARCHIVED Question About Chebe Bread Mix
Monklady123 posted a topic in Gluten-Free Recipes & Cooking Tips
I LOVE LOVE LOVE the Chebe bread that I've tried! It's the regular one and I formed it into the small balls that were recommended on the mix. My question is do I have to use parmesan cheese? or can I use something else? I don't like parmesan as much as say cheddar but I'm wondering if it's the "floury" consistency of the parmesan that's needed for the recipe... -
ARCHIVED gluten-free Beer- Puzzled
Monklady123 replied to jasonD2's topic in Coping with Celiac Disease
Well for me -- when I look at the ingredients of Corn Chex and see "corn" then I feel much more confident that if I look at beer and it's made from "barley." Since barley contains gluten and corn does not. So I'm not going to feel confident in barley beer. Simple as that. You do what you feel is best for you. I opt for sorghum beer or cider or wine or... -
ARCHIVED Gluten Intolerance Or Celiacs Disease; Does It Matter?
Monklady123 replied to Slovis's topic in Coping with Celiac Disease
Personally, for me, I don't care. I had a "questionable" blood test (whatever the heck that means). Then I went gluten free and felt better IMMEDIATELY. A few weeks later my doctor mentioned the endoscopy. The doctor said I'd have to be eating gluten before the test, for at least six weeks! (and I've heard that it really should be even longer). I am NOT... -

ARCHIVED Guide For Starting Gluten-Free
Monklady123 replied to superfob's topic in Coping with Celiac Disease
My best advice is to read this board. I went back to page 20 or so and worked my way forward. I kept a small notebook near my computer so I could write down things I read that I wanted to remember. And...you mentioned you were getting a new rice cooker. But rice is gluten free, so if that's all it's used for then you can use it too. -
ARCHIVED Grits, Eggs, And Bacon For Breakfast!
Monklady123 replied to Monklady123's topic in Coping with Celiac Disease
Ginny, I'm just buying the Quaker grits in the round box, the five-minute kind. Not specifically labeled gluten free but the ingredients are: "white hominy grits made from corn" plus some vitamins. That's it. I haven't had any trouble at all from eating them. -
Yes, I miss oatmeal also. As HelpMe said you can buy gluten free oatmeal. There's also a hot cereal by Bob's Red Mill -- I forget the name but it's something like The Best Hot Cereal Ever. There's also grits which make a good hot cereal. And Cream of Rice. Grits and the Cream of Rice are the least expensive because they're not specialty products like...

ARCHIVED gluten-free Beer- Puzzled
Monklady123 replied to jasonD2's topic in Coping with Celiac Disease
Well... I'm not sure how something made from barley could be on anyone's "gluten free" list. Barley contains gluten! If you want a truly gluten free beer try one of the sorghum ones. Redbridge is the only one I've tried so far and I liked it, especially when it was nice and cold. I know there are a couple of others also, but I haven't found them yet... -

Thanks Peter. I've started a folder in Evernote where I'm keeping on the info on things like caramel color, modified food starch, etc. -- all the ones that we persist in getting wrong. So much to remember... I can't imagine my gluten-free life without this board and its wealth of information. I still haven't heard back from the bbq sauce company... -
Yeah, some doctors don't seem very responsive. -- Maybe in your dh's case he should just go gluten free with you and your ds. He doesn't need the blood test to try it, see if his rash goes away. Then if it doesn't you'll know to look at something else.

Lol I might have been known, once or twice, to do the same thing with a large Snickers bar. -

Thanks for this recipe. It looks pretty easy, even for a non-cook like me! I've added it to my recipe folder and I'll try it next time. -

Monklady123 replied to Monklady123's topic in Coping with Celiac Disease
Yah, I know they have to list wheat. But if something has barley in it are they required to list "gluten"? I know they don't have to list the actual barley since that's not a top allergen. Whatever I was reading earlier said that "smoke flavoring" can be made from grain, but I'm wondering if that grain has to be wheat or could it be barley? In any... -

Monklady123 replied to Monklady123's topic in Coping with Celiac Disease
Yes, thanks to this board I know about the modified food starches. But I'm suspicious about the smoke flavoring or where it says "spices". I guess the bottom line is that it's best not to trust anything processed like this unless I've seen a specific reply from the company to say it has no gluten ingredients. -

I made pork bbq the other day. Cooked a pork roast in the crockpot with water and some vinegar. The vinegar was "white distilled vinegar" which is supposedly gluten free. Then after it had cooked for awhile I took off most of the liquid, shredded the meat (on a clean cutting board, using two clean forks). Then I added bottled bbq sauce (yes, I'm lazy... -

I just made regular gluteny banana bread for my family. And gluten-free banana muffins for me. It was supposed to make one dozen but since I added some mashed banana and made them a bit smaller than the recipe called for I got 1.5 dozen. So, one loaf of bread for three of them. 1.5 dozen muffins for one of me. Dd says "Mommy that's not fair!" I... -
If you can get Chebe (someone else mentioned it) try that. It is very chewy -- for me it was the first thing that I felt was just like "real" bread. Heaven! I ordered mine from Amazon, but you said you were in Canada so I don't know if they ship there. ? If so, give it a try. So yummy! Other than Chebe I gave up on all of it, except for Udi's. Udi...

ARCHIVED First Time Travelling Overnight & Flying
Monklady123 replied to DesertGirl's topic in Traveling with Celiac Disease
I did take peanut butter on an international flight recently. I bought those individual servings, the ones intended for lunch boxes. I put them in my ziplock bag and there was no problem. I pretty much stuffed it full of pb because I never travel with many toiletry things, and most of those are in my checked bag. I took a toothbrush and small tube of toothpaste... -

Monklady123 replied to runningcrazy's topic in Coping with Celiac Disease
Who says cereal isn't a meal?? I say it is. So there. In fact, I'd say it's a complete meal if you add some fruit. You've got grain, dairy, fruit.. protein in the milk... sounds good to me. -

Omg, I've been ignoring this thread for days because I thought it said what's the meal we cook when we WANT to be extravagant! I hate to cook, so that's why I've been avoiding it. Then I opened the thread finally just now and when I saw omelets, or pull-something-out-of-the-freezer meals I thought wait a minute.... lol.. anyway, mine would... -

What they all said above. lol... I'm pretty new to this myself -- since the end of the summer. The biggest eye-opener for me, after that initial "omg, what can I eat?" question, was to realize that in its natural state MOST food is gluten free. Meat, vegetables, fruit, dairy, potatoes, beans, rice, other grains... all of that is gluten free. It's...
