  1. I know one person who is gluten free because "it makes me feel better" she says. Who knows, it might. But... she isn't really gluten "free" -- she's what I call "gluten lite". She doesn't eat pasta or bread. Except when she's out somewhere like Olive Garden when she'll eat the rolls because "I can't resist." Otherwise she never checks labels for wheat flour...
  2. At least it's new to me. Just found it at my recently renovated Target. It's Glutino Harvest Corn, and it's yummy toasted! Not so sure it would be good sandwich bread, but I can use Udi's for that. I'll try this though just to see. For now I've been toasting it and it has a great crunch, and is NOT heavy and gross like so many other gluten free bread is....
  3. Ha! I have no idea how to do any of that. I went to look at my photos and they're way over the limit and I have NO idea how to fix it.
  4. ack! I'll give it a try.
  5. Yes, I see several others who have asked on here about how to do it, but the answers don't help me. Keeping in mind that I am technology-challenged, can someone tell me how to do it? I went to my profile, and found where to change it, and tried to upload a photo from my computer. But it says "failed because it was too large" or something like that. And I...
  6. Yes, I agree about Whole Foods. Mine has every single ingredient listed, of every single salad. Including the pan of plain lettuce. Not kidding, the ingredients card says "ingredients: lettuce". rofl... Mine also has at least two people on duty there (during the lunch time anyway, which is the usual time that I go) just to clean up, watch out for things,...
  7. Captain Crunch has oat flour in it, and I think there's a high chance that most oats are cc with wheat flour. (unless it specifically says gluten free oatmeal). So that's probably your problem. edited -- lol.. Lisa and I were posting at the same time. I should also have suggested the Chex cereals -- several sweet varieties and they are gluten free...
  8. Lots of good ideas here, thanks everyone! Crockpot at night -- I wonder why it never occurred to me to do that? lol.. excellent idea. Pressure cooker -- my mother had one (back in the Old Days) and it scared me to death. I might take a look at them if you say the new ones are different. I've also heard that a rice cooker can be used to prepare...
  9. Well.. my Day 2 "cooking from scratch" dinner: salmon (sauteed in a pan with some lemon juice and water), roasted potatoes with onions and red peppers, and cut-up strawberries (I did add a bit of sugar because they were sour). Not bad, eh? lol.. Now tomorrow is leftovers -- there's chicken soup from last night, some salmon, potatoes, probably no strawberries...
  10. I do have a crockpot and hardly ever use it! Honestly, I KNOW how wonderful it is to have that dinner cooked magically by dinner time, no matter how busy one is during the day. But, I have a hard time gearing up so early in the morning to put everything together and in the crockpot. I love getting up early, and am usually up by 5:30 or 6:00 in the morning...
  11. Yes, I know this isn't the cooking and baking board. But since I hate to cook I feel it belongs more in the "coping with" board, since cooking is one thing I've had to learn as I'm trying to be gluten free. So those of you who really hate to cook, but now have to cook to some extent... share with me things you cook. I had a craving yesterday for...
  12. My grocery store has gluten-free broth but of course sitting here in my living room I can't remember the brand. But it's in a box, not can, and it's not concentrated. Just use straight out of the box. I can't remember if it specifically says "gluten free" on it, but the ingredients were something like "chicken, water, salt". lol... So, I figured it was...
  13. Now this is interesting, because I recently bought something called "spicy chick peas" from Trader Joe's. I don't think they specifically said "gluten free" but there were no gluten ingredients, and I'm usually fine with things like that. Well, not with these! Pretty definite gluten symptoms. Or so I thought. Maybe it was just because of the chick peas? Is...
  14. Well, like I said for me personally the Quaker have been fine. I'm pretty sensitive to cc also (although not as bad as some people on this forum) and haven't had any problems with these.
  15. I don't know Alber's, but I just buy ordinary Quaker grits. I eat them all the time and never have any problems. I love grits.
  16. I treat it just like oatmeal (although the consistency is more like Cream of Wheat than oatmeal). I always put milk on it. Then I might vary what else goes in. Maybe raisins, bananas, honey, brown sugar slivered almonds, cut up peach (yummmmmm), etc. Whatever strikes me. (not all at once, obviously, lol).
  17. First of all I know it seems overwhelming at the beginning! But it is possible to eat gluten free and not break the bank. I wonder at what all the "gut healing medication and supplements" are exactly? Might be worth talking with another doctor. Vitamins are a necessity (according to my doctor anyway) but she didn't prescribe anything else for me. ...
  18. Interesting about dehydration, because I know that as soon as the gluten hits my system I get incredibly thirsty.
  19. Just curious if anyone knows the physiological reason why gluten causes headaches? I plan to ask my doctor next time I'm there, but that's not till the end of this month and I'm curious now. lol.. Just wondering because I got glutened the other night and had the worst headache I've had in awhile. (my own stupidity too, which makes it worse)
  20. Marking this one to try. Thanks! I can't wait to serve it to my family and not tell them what it is. They'll know it's not couscous, obviously, but I won't tell them what it is till after they've eaten it.
  21. Finishing off a nice glass of chardonnay right now, with some potato chips. -- Now, ask me why I haven't lost any weight since I went gluten free.
  22. Yeah, Red Bridge is okay. I bought some recently and got good and cold and it was good with some bbq. Problem is that it's too darn cold here still and for me beer is a summer thing. -- So, while it's not a good dark beer, I think it will be good ice cold in our 100 degree 90%+ humidity summers.
  23. There are plenty of things I miss (crusty bread, pizza, dark beer) but none of those "tests me and makes me want to cheat." Never. I feel so horrible when I get glutened that I never feel like cheating. Yes, I wish I could eat them, and it makes me sad sometimes that I never will be able to eat them again. But I'm never tempted to cheat.
  24. Nice. :) :)
  25. I've done this also. Mine was pasta. Cooked the "real" stuff for my family and just absently put a noodle in my mouth to see if it was done. -- Another time it was just me and the kids for dinner. Dh was traveling. It was cold and rainy so I said how about grilled cheese and tomato soup. I got out the big pan, the one that fits three grilled cheese at...
