  1. Can someone recommend a book on the Paleo Diet? I think one has probably been recommended, but doing a search, I can't find the reference.
  2. Takes about three days for most symptoms to show up and they last about three days. Sinus problems build up over a longer period but are definitely gluten induced.

  4. Where are the fats in your diet? They are essential. Apples for breakfast? Where's the protein? Veggies and rice for dinner? Where's the protein? Where's the fat? Carbs, protein, fats. You need them all. Just make certain that the fats are good fats, not trans-fats.

  12. Yes, definitely. When my sleep problems first cleared up after going gluten free, I didn't associate it with the diet. However, when I got glutened and the problems returned for the three nights that my symptoms (diarrhea, etc.) last, I got the connection.

  19. I have been wondering if the problem with soy is that about 95% of the soy available in the US is GMO. It would be interesting what would happen if someone who is soy intolerant would try organic non-GMO soy. However, I'm not volunteering.

  21. Also remember that even if your blood levels are normal doesn't necessarily mean that your tissue levels are adequate. Your body will draw nutrients from elsewhere (bone, muscle, tissue) to keep your blood levels at the required level.

    Me too. Without a magnesium supplement I get leg cramps and twitches. But if I take enough of a regular magnesium supplement to stop the cramps, I get diarrhea--most magnesium supplements are 10% absorbed. I found a magnesium product that is advertised to be 99% absorbable. It works for me, I can use as much as I need to stop my cramps without any diarrhea...
  25. My sleep problems clear up 100% when I am gluten free. Anxiety and depression are not major problems for me, but when present are absolutely related to gluten.
