  4. thank you! it looks delicious now that you mention it, the last two times i was supposed to use chipotles in adobo, i chickened out! (because of the vinegar? i think?) that may be something worth making myself (while i got the canner out already....) almost every year (for the past 15 years, once or twice we were out of town) i volunteer to help...
  5. you can make lots of meals that are naturally gluten-free. just don't tell him that they are in the beginning, when i as adjusting my family, i would just separate out mine from theirs (it was the same stuff!!!) and pretended to 'add gluten' - it seemed to make them happy. or, you know, give him bread with his. sometimes i just had to cook 'regular...
  6. yums - looks dee-licious!! yes, vinegar please i'm going down there later today (with my trusty franken-mower to mow the way! lolz - these are wild berries) so let me see what the harvest yields. also have 7 heads of cabbage to fool with this weekend. i better get off the computer, hahaha edited to say: how about wine? anybody know how...
  7. thanx, love2 - blackberry + chipotle??? i'm game; bring it! since i am too lazy to post every day, last week we had: chicken & mandarin stir fry w/rice and chinese cabbage salad (with sweet n salty roasted slivered almonds and sesame seeds def better than the toasted ramen noodles the recipe calls for!) bang-bang shrimp rice noodles...

CONGRATULATIONS, BARTFULL amcan, bartfull speaks the truth - it's hard to believe right now, but you will get to feeling better and better! lucky you to be diagnosed now that you are relatively young (i know it doesn't seem like a blessing....) and not waste more time feeling ill - there's more lovely side-effects to celiac the longer you go undiagnosed...
  10. ortega hard taco shells say 'gluten free' right on the box, (handy for when i send the husband/kids to the store for taco shells lolz) but i have used different brands with no problem - make sure you read the box tinkyada is 'the kind' pasta - we tried many other brands (mushy, grainy, etc) and that is the brand that is closest to 'regular' pasta. ...
  11. when i go to visit friends and family, i bring my own: pasta bread cutting board strainer wooden spoons sometimes pots and pans gluten-free soy sauce or any other specialty seasoning/ingredient i think we will need i make a "menu" and i bring whatever equipment i think they won't have that is safe. i cook for everyone, the whole time...
  12. my (awesome) GI is leaving! moving! oh no! she really knew her stuff... thanx for the idea - i think i DO have a nurseline on my bc/bs - i remember using it when our son was dx'd with diabetes and we got him a great endocrinologist <who harry absolutely loves so he is faithful to his check-ups. i am going to search on this forum and maybe post a...
  13. my blood test was negative - if i hadn't already seen such a marked improvement in my symptoms as i had already started eating gluten free, i would have probably believed that i didn't have celiac and continued to eat gluten and die. after 25 years of suffering/misdiagnosed/medicated, etc., the gluten free diet is the ONLY THING that worked IMMEDIATELY....
  14. i know this guy! does he keep wood chips soaking in a bowl on the counter? lolz we have yet to try smoking a duck - challenge! - with all Love2's talk of duck i am wanting to do it! last night we made shrimp scampi w/rice noodles - hub says he likes the rice noodles better than fettuccini - annnddd: first salad greens from the garden ...
  15. marilyn: me and you could totally hang i think we smoked a chicken the same day lolz!! hubby has been frustrated because he was afraid the Big Smoker Grill would make me sick and he bought a smaller bullet one to use - which he hates - ("i can't get the temperature to stay right! rawrrrr!!") so a few weeks ago, he reseasoned the cast iron grates...
  16. thanx ! i will take all the help i can get since i have been recovering, i have started a "mini" (and i do mean MINI) itty bitty (i don't even think you could call it a workout..) set of exercises just to improve my muscle tone. it is working surprisingly well. i start with 'boob ups' - take a scrunchy or anything elastic and hold it in both hands...
  17. watch out for that mint, mamaup! it will 'take over' (it will even spread underneath weed barrier!) i am going to plant a little in a pot so it plays nice with other plants!
  18. ok, sorry this is late. i wanted to make this at easter but forgot to get the gelatin. (plus, i didn't want to be so committed in case it turned out not so good) so i made it this week, and iced it with a simple vanilla icing (powdered sugar, butter, milk/water, vanilla extract) and sprinkled it with colorful sprinkles. i can not stop eating it. it...
  19. hello, nicole - 19 months, she is eating all 'people food' now, isn't she? yes, fruits and veggies are all naturally gluten-free. as are unprocessed meat/poultry/fish. potatoes and rice and corn as well. i subbed bread, pasta and cereal (fruity & cocoa pebbles, chex (except for whole wheat chex) cereals) grits are gluten free. eggs, corn tortillas...
  20. hey love2: made that macaroni & cheese last night - everybody loved it! (and i put lobster in it - lobster tails on sale, paid full price when i checked my reciept, went back & they gave me $ back = free lobster lol ) i might put mushrooms in it next time. the onions give it a wonderful sweetness combined with the cheeses and pancetta it...
  21. i used to skip the food-focused gatherings in the beginning - too much temptation and i was still 'grieving' - but now i go and i bring something gluten-free. i take out MORE THAN i think i'm going to eat and put it into a separate container. once that dish hits the buffet table, i won't touch it. i do not eat *anything* anyone else makes even if they...
  22. well, the test is negative. which i told them is so common she won't even try a gluten challenge, which would at least show gluten intolerance. my other 3 yr old grandson (who lives here w/his brother and mom <husband is in the military) has NO issues it's so evident the differences. so, no, i DO NOT think EVERYBODY has a problem with gluten. which...
  23. i know it, IH, my heart breaks for him. they have taken him to the e.r. because he has been in so much pain from constipation. i give him apple juice cut half n half with water when he is here. he stays with mom half the time, dad half the time, and i watch him most days while they both work. i can adjust his diet and so can dad but if mom is not a believer...
  24. adalaide: i just googled it and found that there were a million pb fudge recipes with basically the same ingredients (marshmallow fluff, sugar, etc) and just added cooked, finely chopped, lean bacon. the batch i tried without any chocolate wouldn't set up (ate it anyway LOL) so i recommend keeping at least some chocolate. also, add the bacon when you are...
  25. love2: you are missing LEMONGRASS lolz i am going to try it sometime soon: you have made me so curious!
