thanks so much, all! our son tends to go the 'cheaper' route: naturally gluten free food (raw food meat, veggies, etc) and (like me) just subs for pasta and sandwich bread. he is getting more adventurous with his cooking. i was just knocked for a loop when the (regular pediatrician, not GI ped) doc told them gluten-free diet would hurt him. right now... - 
	can you eat peanut butter and jelly? i had a sandwich on gluten-free bread yesterday and my (week-long) fatigue went away. even overdid it yesterday (renovating our house - ugh...)and woke up this morning without feeling like i had been hit by a truck. i know exactly what you mean about being so tired. i am 'tired' of telling my husband i am tired but...

so i am a diagnosed celiac and thriving on the gluten free diet. my adult son is type 1 diabetic and has decided he feels so much better on a gluten free diet, even if he hasn't been tested. he felt so good the first 4 days that he went and had a regular cheeseburger. he had such a bad reaction and is now convinced. grandson (who is 3) has the same "poop... -

try the rudi's original bread (if you can get it) - i keep my bread in the freezer, so i toast it a little to thaw it out - then you can grill it in a frying pan with your sandwich fillings inside (i do it on low temp and use a smaller lid to cover it so the cheese will melt) it turns out crispy on the outside and not too soggy on the inside. and good 'bready... - 
	my kids are already grown - if i had known that i had celiac when they were little, i would have (o gosh, easy to say now! but when they were growing up i could barely afford to feed them cheap wheat food! there are 4 of them...) son (now 26) has discovered an article in his body building magazine (not listening to his MOTHER telling him he may be gluten...

last year was our first year trying to grow them - they were HUGE!! it wasn't very hard - we had a nice rainy spring last year. yes, (ugh) we had to dust them to keep the worms from eating them i was dead set against dusting them. but husband said if we didn't, the worms would eat them all gone. o my gosh, these things were like, four times the size... -

i still make reuben sandwiches - just on rudi's bread. we make/boil our own corned beef and slice it and use the sauerkraut that we fermented and canned. very tasty. i have a polish reuben casserole recipe that has noodles in it if you are interested i'll dig it out for you. i used tinkyada noodles and it turned out good last time i made it. really... -

we (grew cabbage)fermented and canned our own sauerkraut this year - it is absolutely delicious and it evens out my digestive system. it's time consuming but totally worth it just used cabbage and kosher salt - took about 6 weeks to ferment. yums.... -

the youngest was in from spring break at school so she drags all her buddies over here to eat... they don't have a problem with gluten free the operative word here is "free" lolz chicken fried steak w/gravy mashed taters green beans w/mushrooms & cheese for church youth luncheon: white bean & sausage soup with kale egg salad... -

	yess!! to be able to sit down to dinner and eat!! i have more 'normal' eating habits now than ever, although to the untrained eye, unpacking/fixing my meals may look like more of a hassle: i can sit through a meal and relax and chat - my reputation with family and friends is that no matter what they made, i would eat "later" (which meant "never"... ) ...

i did send a comment to nbc and encourage you all to do the same. yes, that is the segment i was referring to (CELIAC RE-INTRODUCING GLUTEN???!!! WHAT???!!!) the worst part is that there are people out there who are going to be mis-diagnosed and dismissed and continue to suffer needlessly. mis-information is worse than no information in this case....... -

i used brown rice flour, cornstarch, tapioca and potato starch. exact measurements? i am a little free and loose with my flour blends. i got a measuring cup and put flour in until it equals 1 cup. mostly rice (probably 1/3 cup) then cornstarch (1/4?) then more tapioca flour and a little bit of potato starch <like a few tablespoons. sorry - i loosely...
