    ARCHIVED One Year! :d

you bet! i am infamous for my lack of willpower lol so this is pretty huge for me to say: i did not cheat one single time glutened myself accidentally or stupidly, yes. thank you love2travel for giving me recipe insprirations
  3. i went through withdrawal/detox. night sweats, mood swings, extreme fatigue (no hives) but i was terribly UNDERweight so i don't know about that part about losing weight. i have gained healthy weight. i DO know i could DEFINITELY feel the difference almost immediately, especially with digestion - like, oh, this is what i'm supposed to be eating all along...
  4. gluten-free now for a whole year!! i had been diagnosed for months before and didn't tell a soul (denial) until i was sooo sick i couldn't avoid either taking ACTION or starving to death. i walked around for days crying and terrified, thinking: how in the world can i manage this - I CAN'T! IT'S TOO MUCH!! then my husband found me this wonderful website...

    ARCHIVED What Now?

are the probiotics in a capsule? i have to empty the contents of my blood pressure meds out of the capsule when i take them b/c i get a reaction from the capsule - it's made from 'starch' (unspecified) and it contains dye. something in that capsule makes me sick, though. that was a tough one to figure out
  6. peeling things works better for me (veggies/fruits) i always cooked everything just scrubbed with the skin on and even though it doesn't have gluten, the peels don't digest well - maybe they will in time, but not right now. and i am a year in.
  7. i interpreted your s/n as 'be artful' i have a friend who lives in rapid and even she complains/rejoices about availability of certain things. but she likes to cook wierd like i do lol (and she drinks alot of chai (?) i always thought she was saying 'chia' maybe made from the stuff that grows out of a chia pet) so she was overjoyed when a certain...
  8. and a toaster would have been good. i had to broil my bread on foil in the big oven (pain in the butt!) but it worked in a pinch i am thinking of naming my toaster and putting a little face on it so i can introduce it to my host(s) when i visit. also, they got to hear STOP TOUCHING MY FOOD *alot* till they got it through their head. we are pretty close...
  9. i know it's *awesome*! i loooove to visit "The Guitar" our kroger has boar's head sandwich meat and cheeses. i would bring: bread, a cutting board, frying pan. you should be able to get whatever else you need out there for a few days. i just came back from vacation in nj (13 hour drive) stayed with friends/relatives and did well (till the last...
  10. i am not lds (i'm methodist) we have communion once a month and i do exactly that: bring a tiny piece of bread in a snacky ziplok bag and when it's time to go up to the altar, i take it out. our pastor brings out torn bread for everyone but when he gets to me i open my hand (have spoken abt this to him prior) and he blesses it just like he blesses everybody...
  11. hey i'm in tennessee knox-vegas - sometimes i think i'm the only celiac in the state LOL although we do have an earth fare store that i go and stock up at. actually found BREAD CRUMBS (glutino $3 bucks) which is great because i hate to grind up a 6 dollar loaf of bread just to have meatloaf haha
  12. it does suck alot at first, but you get better at it. you will also FEEL so much better. trust me, if you hang around this board long enough, we all still have rants and meltdowns. i am one year in (shy of a few weeks) and as much of a pain in the ace it is, i would never cheat intentionally. it amazes my friends and family b/c i have *zero* willpower...
  13. i never have been my youngest daughter is a coffee nut - spend 6 bucks on a whaaaat? cup of coffee???? nah.
  14. thank you - i saw that on the glutenfreenj site my sister is checking a place in oak ridge that is supposed to have gluten-free pizza. she is seeing how vigilant they are about cross contamination. i'm crossing my fingers! wish i was going to LBI! barnegat lighthouse is where i first discovered i was deathly afraid of heights lol you used to be...
  15. LOLOL too funny!! i know how you feel. i added back in dairy but i don't eat it every day. i splurged on 1/4 cup of ice cream yesterday and today i'm so tired i can't get out of my own way. so it doesn't affect my digestion too much anymore but i'm definitely better off with out it. sign me up for the rain-barrel hahaha
  16. o my gosh! when i was a kid we spent every summer in manahawkin (bch haven west) you just brought back a million memories - thanx loveladies had the most awesome ice cream place. we used to cram into my gramma's old stationwagon lol highly illegal nowadays! heading to nj at the end of this week, but probably will not make it to the shore you...
  17. yep, i have a delayed reaction sometimes when i am glutened, other times i can tell right away. i think it depends on what and how much? so even though i get sick, sometimes i am going crazy trying to figure out what got me. especially when i am away from home and not eating 'normally' - it took awhile to figure out that: oh, wow, i must have gotten glutened...
  18. it looks very beautiful!! naturally, part of it borders hungary (i should know this stuff, my grammy was full on hungarian - just about born on the boat to america lol) hope to visit that area one day
  19. if you have more advice, please do share!! ugh. the first time was a *nightmare* - i honestly felt, by the end of the weekend, that there was NOTHING i could eat there at all. i went home because i was hungry and sick
  20. lol i'm thinking of marketing the phrase as a theft deterrent <sp? or smuggling diamonds hahahaha
  21. you are gonna make me google 'croatia' lol i have no idea where that is. but i'ma find out love2travel: i always love your posts! i love to cook, too, so you are very inspiring - i will never think of lemongrass again without thinking of you
  22. richard: the dietary issues, i am realizing more and more, are the *easy* part of celiac! because i can control this 'junk' body lol as my symptoms go away (YES it's really taking this long!!) my 'restrictions' are peeling away like layers. ie: we have a piece of property on the river we are planning to build a house on eventually. we have been camping...
  23. YES IT IS and i am already (secretly) planning a 4-wheeling trip into the mountains (shhhh!)
  24. mmmmmmmmmmmmmmm............ food.................... i do it all the time! sometimes i wake up with a recipe in my head lol i am thinking of writing a cookbook if i ever bother to measure anything i never was very hungry ever so i am chalking this up as 'makeup hunger' hahaha i bet my body is craving all the lovely nutrients it hasn't had...
  25. and didn't get glutened or anything! very very happy with this - last time (memorial day weekend) we camped out and i got sooo sick. i had to come home and eat, etc. i had no idea what i did wrong but i had a couple of ideas for making changes: 1. no more shared ice chest/cooler! i thought if everything was sealed up and packaged/labeled that everything...
